GlenAllachie Distillery Unveils New Cask Whiskies!

“There’s something magical about bottling whisky straight from the cask… “

Hot on the heels of its recent Virgin Oak Series, The GlenAllachie Distillery is launching Batch 4 of its cask strength 10-year-old single malt, and releasing a third instalment of single cask bottlings, including a 31-year-old whisky (£530 RRP) matured in an Oloroso hogshead, exclusively for the UK.

The GlenAllachie 10 Years Old Cask Strength, Batch 4, follows in the footsteps of its predecessor Batch 3, which was awarded Best Scotch Speyside Single Malt at the World Whiskies Awards 2020.

Batch 4 (£58.99 RRP), which is a limited release of 2,600 cases worldwide, is a combination of Pedro Ximénez and Oloroso sherry puncheons along with a small quantity of virgin oak casks. Bottled at 56.1%, natural colour and non-chill filtered, it delivers a perfect balance of fruit, dark chocolate and spice with underlying classic GlenAllachie sweet honey notes.

The third instalment of single casks consists of six cask strength single malts, all specially selected by Master Distiller Billy Walker from among the 50,000 casks in the distillery’s warehouses in Aberlour.

The batch of single casks consists of a 31-year-old Oloroso hogshead (£530 RRP), a 15-year-old Virgin Oak (£106 RRP), a 13-year-old First Fill Bourbon Barrel (£96 RRP), a 12-year-old Ruby Port Pipe (£90 RRP), a 12-year-old Rioja Barrel (£90 RRP), and an 11-year-old Sauternes Barrel (£86 RRP). All the bottles are hand-numbered, and offered at cask strength, natural colour and are non-chill filtered.

Each single cask expression showcases Walker’s renowned expertise in wood management, steering the unique interaction of wood, spirit and subsequent flavour development, which has been gained during his extensive career in the whisky industry.

There’s something magical about bottling whisky straight from the cask – without any water or colouring being added, this is whisky in its purest form. Batch 3 of our cask strength 10-year-old has set the bar high, but we’re excited to share this new bottling which has a perfect balance of fruit, dark chocolate and spice with the underlying classic sweet honey notes of the GlenAllachie.

With our new instalment of single casks, we’re demonstrating the unique interaction of our spirit with different types of wood and how that creates incredible flavours. For example, the 31-year-old has intense flavours of dark chocolate, orange zest, grapefruit and ginger thanks to the greater interaction between spirit and wood provided by the slightly smaller Oloroso hogshead.

This passion for exploring different barrels and types of wood was also reflected in the recent GlenAllachie Virgin Oak Series, a new limited edition range of Speyside single malt whiskies which have undergone secondary maturation in specially selected casks of different oak species from specific regions around the world.

Released in early October, on the back of winning a 50th award in three years, The GlenAllachie Virgin Oak Series consists of three limited edition 12-year-old single malt whiskies; the 12-year-old French Virgin Oak Finish, the 12-year-old Spanish Virgin Oak Finish, and the 12-year-old Chinquapin Virgin Oak Finish.

GlenAllachie 10 year old Cask Strength Batch 4 – 56.1%

Colour: Rich Mahogany.
Nose: Dark chocolate, vanilla pods and treacle, with rich notes of orange peel and cinnamon.
Taste: Lashings of raisins, treacle, dark chocolate, layers of heather honey, cinnamon and orange peel.

GlenAllachie 31yo Oloroso Hogshead cask # 6118 – 51.1% – 339 bottles

Colour: Rich Mahogany.
Nose: Heather honey, mocha, nutmeg, pineapple and eucalyptus.
Taste: Waves of dark chocolate, mocha and almonds, followed by orange zest, grapefruit and ginger.

GlenAllachie 15yo Virgin Oak cask # 5182 – 57.6% – 281 bottles

Colour: Sunset Bronze.
Nose: Lashings of heather honey, vanilla pods and plantains, with notes of orange zest and ginger.
Taste: Layers of heather honey, butterscotch and almonds with dark chocolate, orange zest and ginger.

GlenAllachie 13yo First Fill Bourbon Barrel # 111860 – 58.6% – 253 bottles

Colour: Sunrise Gold.
Nose: Orchard fruit, peaches, butterscotch and ginger.
Taste: Brimming with heather honey, butterscotch and figs, with notes of ginger and grapefruit.

GlenAllachie 12yo Ruby Port Pipe # 1867 – 52.3% – 700 bottles

Colour: Rich Ruby.
Nose: Lashings of honey, treacle and grape must, with sweet spice and hints of dark chocolate.
Taste: Waves of heather honey, vanilla and treacle, fused with cinnamon, rosehips and mocha.

GlenAllachie 12yo Rioja Barrel # 3966 – 56.6% – 313 bottles

Colour: Golden Bronze.
Nose: Waves of red berries, grape must, almonds and orange zest.
Taste: Rich heather honey, sultanas and apricots, with barley sugar, orange zest, grapefruit and a hint of aniseed.

GlenAllachie 11yo Sauternes Barrel # 3728 – 59.0% – 299 bottles

Colour: Straw Gold.
Nose: Heather honey, peaches, apricots and notes of ginger.
Taste: Brimming with heather honey, peaches and apricots, fused with hazelnuts and grapefruit.

So, what did I think? Here are my tasting notes …

Tasting Notes – Highland Park 2003, 16 Year Old Sherry Cask TWE Exclusive – Cask Number 1885 (58.9%)


Colour: Amazing dark sherry that clings to the glass!

Nose: Dark sherried wood with vanilla, chocolate, sherried fruits & a little orange. Later on comes powerful caramel toffee refreshed by green apple.

Palate: Satisfying, substantial mouthfeel with rich sherry and dark wood. There’s chocolate, toffee, heavy fruit Xmas cake with cane sugar sweetness.

Finish: Spicy finish that’ll knock your taste buds off initially! But then it mellows into a finely balanced smooth finish.

Overall: If you’re friends with Santa then give him a nudge in this direction – this is the perfect Christmas dram to get you sat in front of the archetypal roaring fire and make sure you stay there!

Cotswolds Distillery Launches ‘Sherry Cask’ Single Malt Whisky!

Cotswolds Sherry Cask Single Malt Whisky!

Adding to their award-winning collection of English Single Malt Whiskies, The Cotswolds Distillery is delighted to announce the launch of Cotswolds Sherry Cask Single Malt Whisky!

Their latest whisky is a marriage of Cotswolds Single Malt whiskies fully matured in American and Spanish oak hogsheads and butts, seasoned with Oloroso and Pedro Ximenez sherries. To taste, Cotswolds Sherry Cask is full of dark stone fruits with a hint of roasted almonds, followed by peppery oak spice.

Cotswolds Sherry Cask Single Malt Whisky is non-chill filtered, with natural colouring and has an ABV of 57.4%

The distillery uses 100% locally grown barley from the Cotswolds, which is traditionally floor-malted by hand at Warminster, Britain’s oldest working malting. The barley is mashed and fermented for over 90 hours before being distilled twice in their bespoke copper pot stills. The new make spirit is smooth, complex and fruity with only the purest ‘heart’ cut taken for cask maturation

I love a sherry cask whisky as it is one of the truly iconic single malt whisky styles. Good sherry casks give rich, fruity, spicy and nutty flavours that marry perfectly with the underlying malt character and are a joy to savour.

Each yearly batch of Cotswolds Sherry Cask Single Malt Whisky will be unique, drawn from their finest American and Spanish oak hogsheads and butts, some seasoned with dry Oloroso sherry and others seasoned with Pedro Ximenez. Every batch has been sherry-aged throughout their full maturation which allows the whisky to develop a full and deeper flavour.

Tasting Notes:

Nose: Brown sugar and cherry pie with a touch of roasted coffee beans.

Palate: Viscous and rich. Full of dark stone fruits and a hint of roasted almonds.

Finish: Peppery oak spice accompanied by notes of dried fruit.

This is the 37th edition in the world-renowned range!

In his final days as Master Distiller, Brian continued the long-standing tradition of hand-selecting whiskeys reserved for this coveted annual expression from Midleton Distillery’s exceptional inventory for the last time.

The result heralds the 37th edition in the world-renowned range.

Chosen from the most outstanding quality single pot still and single grain Irish whiskeys laid down over the past four decades in Midleton, Co Cork, Midleton Very Rare 2020 showcases an expression of whiskeys aged from 13 to 35 years in lightly charred ex-bourbon American oak barrels.

This year, Brian Nation selected a higher pot still inclusion when compared to previous vintages, while also increasing the use of refill barrels amongst his choice of casks. Only the third Master Distiller to influence one of the world’s most sought-after whiskey collections, the unveiling of Midleton Very Rare 2021 will mark the beginning of a new chapter in the world of Irish whiskey.

Bottled at 40% ABV, Midleton Very Rare 2020 is available online and in Ireland now, and will hit shelves in the UK, USA, Global Travel Retail, Australia, Germany and Canada in the coming months at the RRP of €180.

So, what did I think? Here are my tasting notes …

Tasting Notes – Midleton Very Rare 2020 (40%)

For those who are curious, keeping the brand at 40% ABV (rather than have cask-strength versions) is designed to keep the balance of the whiskey just right and to maintain consistency over the yearly releases.


Colour: Golden sherry!

Nose: Gorgeous orange, tangerine and honeyed, vanilla toffee – delightful! There’s orchard fruits – mainly apples and heavy shades of dusky rooms, furniture polish and plasticine – love it!

Palate: Similar to the nose with increased lemon and orange citrus. The vanilla caramel combines well with delicate tropical fruit.

Finish: Incredibly smooth finish with a soft, spicy pepper.

Overall: This dram is like nostalgia in a glass – I’m getting very wistful!

Too be honest, it’s TOO drinkable, so restraint is required, unless you want to gaze upon an empty bottle in double-quick time!

I also Love the bespoke glasses which are very swish! They’ll be going on my display shelf for sure!

Waterford Distillery Releases ORGANIC: GAIA 1.1 – Ireland’s First Organic Whiskey In Modern Times!

ORGANIC: GAIA 1.1

Waterford Distillery, the barley-forward, terroir-driven Irish distiller, has released Ireland’s very first organic whiskey in the modern age.

ORGANIC: GAIA 1.1 was distilled in 2016 from organic Irish barley grown by a small, dedicated band of organic farmers. The single malt whisky is certified by the Organic Trust.

John Mallick, Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley and Trevor Harris rose to the challenge laid down by Waterford Distillery to produce the first Irish-grown organic malting barley.

It forms part of Waterford’s ARCADIAN SERIES, which celebrates radical growers and alternative philosophies, including heritage grains and unusual growing methods.

Waterford’s ORGANIC: GAIA 1.1 is matured in a spectrum of fresh, super-premium oak: 42% first-fill US oak, 17% virgin US oak, 23% premium French oak and 18% Vin Doux Naturel – sweet fortified wine casks. It is bottled at 50% ABV without colouring, chill-filtration or any additives whatsoever – totally natural.

It beggars belief that much of the industry treats with indifference the primary source of single malt whisky’s extraordinary flavour: barley. We have placed barley – where and how it is grown – at the heart of what we do, curious about where the real whisky flavour may be found.

A natural progression of this philosophy is to see what not only single farm origins can accomplish but what organically grown barley can do when it is given the right platform. Compliance for organic status is not straight forward by any means – there’ s a shed load of hoops to jump through, deep cleaning regimens, audits and assessments to undergo.

So, is it worth it? We certainly think so, what we lose in yield and hair pulling we gain in purity and definition of flavour.

We’re not playing at it; we lay down 400 to 600 casks of organic spirit a year, we buy all the Irish grown organic malting barley that can get our hands on. Waterford Organic will be a main player in our ongoing portfolio for the discerning whisky drinker.

The GlenAllachie Launches Their ‘Virgin Oak’ Series!

The GlenAllachie Distillery is launching The GlenAllachie Virgin Oak Series, a new limited edition range of Speyside single malt whiskies which have been finished in specially selected casks of different oak species from specific regions around the world.

Released in October, on the back of winning a 50th award in three years, The GlenAllachie Virgin Oak Series consists of three limited edition 12 year-old single malt whiskies; the 12-year-old French Virgin Oak Finish, the 12-year-old Spanish Virgin Oak Finish, and the 12-year-old Chinquapin Virgin Oak Finish.

Each whisky in the Virgin Oak series is first matured in American Oak (Quercus Alba) ex-Bourbon barrels. To add a delicate and distinctive twist to the taste, the whisky then undergoes additional maturation for approximately 18 months in specially selected virgin oak casks. Each whisky is non chill filtered, natural colour, bottled at 48%, and limited to around 1,100 cases of each.

The subtle flavour differences in the Virgin Oak series are led by a variety of influences: the oak species, the local terroir and the period of natural air drying, along with the toasting, charring and coopering of the casks. Each of these reacts uniquely with the GlenAllachie spirit, adding texture, depth and variety.

In September, the Speyside distillery picked up its 50th award in just three years, with a Double Gold at this year’s International Spirits Challenge for The GlenAllachie Speyside Single Malt Scotch Whisky 18-year-old.

The new Virgin Oak Series showcases the expert cask sourcing and renowned wood management skills of The GlenAllachie’s Master Distiller Billy Walker who hand-picked each cask type.

The 12-year-old Spanish Virgin Oak (RRP £59.99), is finished in hogsheads made of Spanish oak (Quercus Robur) sourced from the Cantabrian Mountains in Northern Spain which have a cooler climate and greater humidity than the rest of Spain.

Before being filled, the wood is air dried for around 18 months, opening up the oak for the GlenAllachie spirit to extract its flavours. This process produces a whisky with waves of heather honey, treacle, coconut and orange zest.

For the 12-year-old French Virgin Oak Finish (RRP £59.99), Walker sourced hogsheads made of French Oak (Quercus Robur) from the Haute-Garonne region close to the Pyrenees. The fine-grained, consistent wood is air dried for 15 months before hosting the GlenAllachie spirit. The result is a rich bronze malt with a subtle, sweet and earthy taste.

For the 12-year-old Chinquapin Virgin Oak Finish (RRSP £59.99), Walker selected casks from the Northern Ozark region in Missouri. Chinquapin is a sub species of Quercus Alba and delivers spicy flavours and aromas. Air dried for almost four years, then toasted to medium level, the casks create complex, zesty flavours with notes of heather honey, barley sugar, toasted biscuit and orange zest, followed by cinnamon, rosehips and liquorice.

With this new range, I wanted to explore and showcase the different range of flavours that can be created with different types of virgin oak. Lots of people have matured or finished whisky in virgin oak before, but I wanted to take things further and explore what happens when you use different derivatives of virgin oak – for example with different terroir, different drying periods and different toasting and charring levels.

There’s an understanding that good whisky matured in good wood makes something special. But I wanted to put good whisky in spectacular types of wood, wood with real history and unique characteristics.

I’m constantly looking for interesting types of wood and with this range we found three exceptional examples from France, Spain and the USA that have helped create three very different and special whiskies.

With the French virgin oak for example, the wood is very finely grained and rich, which creates a lovely sweet, earthy flavour with silky tannins. The pores of the Spanish virgin oak are less tight and it’s been naturally air dried for a slightly longer period which imparts more flavour, with the distinctive spicy, treacly notes.

The Chinquapin Virgin Oak Finish is significantly different. The wood has been dried for a much longer period which creates really interesting flavours of liquorice and even hints of rosehips.

Taste: Layers of heather honey, treacle, coconut and orange zest, fused with mocha, nutmeg and cinnamon.

12yo Chinquapin Virgin Oak

Nose: Waves of heather honey, butterscotch and orange zest, fused with nutmeg and liquorice.

Taste: Layers of heather honey, barley sugar, toasted biscuit and orange zest, followed by cinnamon, rosehips and liquorice.
