On the palate it is sweet and spicy; fresh fruits and honey combine with a slightly oaky note to create a long and warming finish. BALBLAIR DISTILLERY Exclusively Vintage: Each Balblair Vintage captures the essence of its year in a bottle. They’re only ever selected at the absolute peak of perfection. Handpicked, to represent the very best our Distillery has to offer. You’ll notice our bottles are not marked with an age statement, but simply with the year that the whisky was laid down. From then, every cask is sampled, judged and selected by John MacDonald to find its optimum maturation point. The point at which each Vintage says it’s ready. Our Whisky: Every distillery is different. From its location and water source, to its still shape and wood policy. These are all determining factors in its ultimate outcome – its taste. Our Vintages are intriguingly complex and satisfying. We capture the intense esters at the start of the spirit cut to give our Vintages the core characteristics of apricots, oranges, spices, floral notes and green apples. The heavier oils and lipids at the end of the cut are also captured, giving leathery, nutty and full-bodied characteristics. Our People: Every Balblair Vintage is strongly individual. Each a unique essence of a year, captured in a bottle. Every year, our Distillery Manager, John MacDonald, tastes, judges and selects straight from the cask. And at exactly the right moment, when the balance between the age and the character of the whisky is just right, we bottle it. |

Old Pulteney – 1990 Vintage Country: Scotland Region: Highlands Age: 23 Year Old Strength: 46% Summary: Old Pulteney 1990 has been matured in hand selected American oak ex-Bourbon barrels and Spanish oak ex-Sherry butts. The casks previously held heavily peated malt which gives this Vintage a slight smoky character. Appearance: Polished amber. Aroma: Subtle, warm wood smoke envelopes the sweetness of peardrops & crunchy green apples. Fragrant floral notes, fresh lemon zest & honey are followed by a spicy & fruity touch of ex-sherry casks. Taste: Full bodied & rich. The initial sweet honey note is quickly followed by a wave of thick peat smoke, joined a moment later by a spicy vanilla, toffee & rum smoked raisins. OLD PULTENEY DISTILLERY Founded in 1826 by James Henderson at the height of Wicks celebrated herring boom, the Pulteney Distillery is one of the most northerly on the British mainland. At a time when road links to the town were yet to be established, the distillery was dependent on the sea for its supply of barley and for the shipping out of its malt whisky. Wick became known for the barrels of silver (herring) and gold (whisky) which left the port in vast numbers. The distillery itself has an absorbing history, with its unique stills defying convention to this day. The wash still, in particular, is a source of fascination to visitors due to the absence of a swan neck. Legend has it that when the still was delivered it was too tall for the still house and the manager simply decided to cut the top off! The Old Pulteney bottle now incorporates a bulbous neck to reflect the shape of the stills. Over time, the distillery has passed through the hands of various owners, and even closed during times of trouble for the industry in 1930. Luckily, the repeal of an often forgotten period of prohibition in 1947 saw the welcome resumption of whisky production, with the distillery changing ownership a number of times, before its purchase by Inver House Distillers in 1995. Throughout this history what has endured is the quality of the whisky. Traditional craftsmanship and the distillerys windswept location continue to contribute to the award-winning whisky that is Old Pulteney Single Malt Scotch Whisky. |

Old Pulteney – 21 Year Old Single Malt Country: Scotland Region: Highlands Age: 21 Year Old Strength: 46% Summary: As with the 17-year-old, with this expression they marry together Old Pulteney matured in ex-bourbon wood with spirit from ex-sherry wood casks. The crucial difference, however, is that the ex-sherry wood in this case is made from American Oak (mostly Fino sherries). This adds yet another layer of complexity, depth and character to this truly superb malt whisky. Nose: Full bodied with traces of fruits (apples and pears); slightly fragrant with spicy overtones. Colour: Golden amber with straw highlights. Taste: Sweet to start with a light fruitiness; hints of honey and vanilla followed by a dry finish. Glenlossie – 9 Year Old Managers Choice Country: Scotland Region: Speyside Age: 9 Year Old Strength: 59.10% Summary: Nose: a delicate trace of lime to the barley: what an understated, fragile, uber sexy nose…; Taste: unusual in that the first wave on delivery appears to be a thin, oily note. This is promptly followed by the young barley water, threatening a sharpness but dampened by the lightest scattering of icing sugar; mouth watering, and youthful; Finish: even with the custard powder arrival, never a hint of anything that is remotely non kindergarten; Balance: one of the most impressive examples of Speyside malt, apparently not even out of nappies but treating you to a spectacular display of barley in all its beauty. Confirmation, barley needed, that with Clynelish, this has to be Diageo’s most under-rated distillery. © Jim Murrays – 2012 Whisky Bible. |

Glenrothes – 21 Year Old – Old & Rare Edition Country: Scotland Region: Speyside Age: 21 Year Old Strength: 56.10% Summary: Douglas Laing & Co. proudly offer this fine example of the Distillers’ Art as a special selection from their oldest stocks of whisky. No water is added to reduce its strength, as the Angel’s share has already taken care of that. No caramel, colouring is added, so that you can see it’s pure and natural colour. They have chosen to bottle this malt without chill-filtration in the old fashioned and traditional style. By so doing, they leave in the entire Distillers’ preferred qualities apparent on the nose, palate and finish – self evident when you remove the cork. As you can see on the label, this is one bottle of a very restricted offering, which once consumed, cannot ever be repeated. Nose: full of dark fruits and lively spices on the nose initially – it mellows as it warms to tobacco smells and a damp whisky warehouse character. Palate: on the palate the sherry cask influences it early with more (now macerated) fruit – then sweet barley, more tobacco, vanilla and mocha flavours alternatively appear. Finish: the finish is more vanill’d now plus late cough drop style warming (now menthol!) spices. |

Benriach – 15 Year Old Pedro Ximenez Finish Country: Scotland Region: Speyside Age: 15 Year Old. Strength: 46% Summary: Matured in the traditional style in American bourbon barrels, this whisky is then ‘finished’ in Pedro Ximenez Sherry butts, sourced from the bodegas of Jerez de la Frontera in Andalucia, Southern Spain. During this second period of maturation the whisky derives many interesting characteristics specific to the Pedro Ximenez butt. Nose: Honey, sultanas, dark chocolate with a flood of Pedro Ximenez Sherry. Colour: Gold. Taste: Cream and honey, infused with papaya, rosehips, eucalyptus and dark chocolate, all interwoven with rich Pedro Ximenez Sherry and oak wood. BENRIACH DISTILLERY FOR DISCERNING INDIVIDUALS:It’s not often a long kept secret is revealed in the world of Single Malt Scotch Whisky – but here is a true discovery! Since 1898, the BenRiach distillery has very quietly been producing quality Single Malt Scotch Whisky, which has only ever been enjoyed in very small quantities, by a few discerning individuals who have been fortunate enough to come across a bottle. Today, BenRiach continues to produce its very special Single Malt Whiskies, as an Independent Distiller. UNIQUE AMONGST MANY:The BenRiach Distillery is located in the ‘Heart of Speyside’, between the village of Rothes and the town of Elgin, in the North-East of Scotland. The Spey Valley, in which the BenRiach Distillery was built by John Duff in 1898, is home to many of Scotland’s great whiskies, but BenRiach has its own uniqueness borne from the particular methods and skills of the men who craft the whisky, the ingredients they use, the distinctive copper stills and high quality barrels selected for maturation. “I am often asked what makes BenRiach special. There is no one thing, but the starting point has to be reputation and legacy. Then you must take the astonishing skills of the men who craft the whisky, the ingredients we use, the copper stills, the high-quality casks, our rich and varied inventory and our broad range of peated and non-peated expressions. To these you must add independence, enthusiasm, creativity and a real passion for whisky craftsmanship. As a result you get what I call a “heavenly explosion” – a sensational, unique, complex tour de force. Master Distiller, Billy Walker. |

Caol Ila – Stitchell Reserve/2013 Release Country: Scotland Region: Islay Age: Strength: 59.6% Summary: A limited edition, natural cask strength single malt. From Caol Ila, an active distillery on the Isle of Islay. A eighth limited release of unpeated Caol Ila. From a batch made only once a year, from unpeated malt, for blending in the ‘Highland Style’. From a mix of refill American Oak, rejuvenated American Oak and ex-bodega European Oak casks, so interesting to compare with expressions from first fill Bourbon previously released at 8, 10 and 12 years old and a 14 year old from ex-bodega oak, released in 2012. Appearance: Clear, olive gold. Light beading. Nose: At full strength, immediately clean, aromatic and fresh: like inhaling Friar’s Balsam. After this first blast, more reticent; softly sweet, then a vivid freshness like that of crisp green fruit or lemon zest. Water raises a fruity, nutty honeyed sweetness and a faint note of treacle, with perhaps just a hazy hint of smoke. Body: Light to medium. Oily, yet firm. Palate: Drinks well straight; has an intense and in your face style, with a most appealing smooth, lightly oily texture. Firm, clean and fresh throughout. Intense and mouth-filling, with a great initial surge of sweet spiciness unaccompanied by the usual signature phenols of peated Caol Ila or indeed, much fruit. Becoming honey-nutty (nut brittle, with a dark edge of treacle bitterness) then finally, warming and drying. A good splash of water develops these flavours; it’s tongue- coating and appetisingly bitter-sweet now, leaving a spicy dryness as the tide of flavour ebbs. Finish: Aromatic, spicy and drying; a balancing bitter edge embraces more of the soft nutty, biscuity notes, always maintaining that essential freshness overall. |

Cardhu – 21 Year Old/2013 Release Country: Scotland Region: Speyside Age: Strength: 54.2% Summary: A limited edition, natural cask strength single malt. From the renowned Cardhu distillery on Speyside. A second limited release in this series. Interesting to compare with the 22 year old 1982, released in 2005. From ex-bourbon American Oak casks filled in 1991. Appearance: Old gold; richer amber depths. Good beading. Nose: Mild and at first quite shy. An early creamy, fruity note of vanilla and boiled sweets (bubble gum!) is faintly underscored by a rich, floral perfume with a cleansing edge. The creamy fruitiness persists as dried figs, rum- and-raisin ice cream, red apple skins and beeswax. Later a malty, biscuity base layer is revealed, as the cleansing edge becomes a sharply defined top layer. Overall, it’s a richer vanilla custard and fruit trifle creaminess that emerges. Water opens things out, raising both fruit and floral scents slightly, the boiled sweets now mandarin-flavoured. Body: Fine and light. Palate: At natural strength, smooth and savoury, with light acidity. Clean, refined, pleasantly drying and delicate. Then wonderfully aromatic with notes of black cherry; growing spicy, warming and elegant, with nutty, dark chocolate offset by buttery shortbread. It’s even softer with a drop of water. Now the taste starts cooler and sweeter; still savoury (mint on a fresh fruit salad) but also newly spicy across the tongue. Finish: Long, aromatic and warming; smooth vanilla balanced by juicy tangerine and faint orange oil with spicy cedar, late silky-smooth dryness and a wisp of smoke. |

Singleton Of Dufftown – 28 Year Old/2013 Release Country: Scotland Region: Speyside Age: 28 Year Old. Strength: 52.3% Summary: A limited edition, natural cask strength single malt. From Dufftown, an active distillery on Speyside. A first limited cask strength release of The Singleton in this series. From American Oak refill casks filled in 1985. Appearance: Deep antique gold. Good beading. Nose: Grand and mild; compact yet detailed, with ripe apple and pear fruit or perhaps beeswax and heather pollen, and scents of moorland herbs. Quite autumnal, with faint smoke and a savoury cereal note, and like an old dusty library carrying scents of wax and worn leather. Later, orange oil underscores the complex floral notes. In time some vanilla develops, becoming intense buttercream. Water lightens it considerably and brings out the malty, cereal character (like being in a grain loft), with leafy strawberries, more waxiness and the merest trace of smoke. Body: Oily, dense. Palate: At natural strength, this malt has a big, oily feel; sweet and reminiscent of a whole wheat breakfast cereal coated with honey. The initial effect is warming, with an instantly appetising astringency. Below this lie minty and faintly smoky notes and rich chewy liquorice with a digestive biscuit sweetness. It’s all sweeter and less oily with water; losing that piercing aromatic dryness and with the cereal note dimmed, it’s altogether gentler and more approachable. Finish: Invigorating, warming and gloriously astringent at the end, with notes of pine and cedar to leave the palate tingling over a lingering last wisp of smoke. |

Lagavulin – 12 Year Old/2013 Release Country: Scotland Region: Islay Age: Strength: 55.1% Summary: A limited edition, natural cask strength single malt whisky. From the essential Islay distillery, Lagavulin, on Islay’s rocky south coast. Twelfth in a series of special 12 year old releases from the original distiller’s stocks. Vatted from refill American Oak casks, each at least 12 years old. Appearance: Extremely pale green-gold. Nose: Soft, beguiling and cautious at first, when an appetising sharpness slowly crystallises into red berry fruit, then developing soft, savoury aromas and a delicious smoky sweetness. Savoury hints of charred baked potato skins cooked in a bonfire come first, then peat smoke and a box of spent matches come through. Later still, there are teasing, oily hints of sharp tropical fruit (lime pickle?). These aromas are altogether softer with water; less tense and underscored by youthful sweetness. There are smoky-fresh notes, then raisins and dried fruit, with distant wood smoke. Body: Light. Oily. Palate: Cooling at first, then salty, drying and dusty, with a good balance of sweetness and acidity. Beautifully cleansing, like a salad of tarragon and peppery rocket, then really appetizing, as if a char-grilled endive splashed with peppery olive oil. The charred notes then strengthen, into smoky wax. Sweeter with water and more accessible, as captivating notes of aniseed and fennel seeds give way to charred fruit scones and burnt jam tarts. Finish: Simultaneously sweet and savoury, dominated by pungent smoke and appetising aniseed. With growing warmth, it becomes oily near the end. With water it is sweet and abrupt with subdued smoke; pleasantly drying and piney. |

One sip brings flavours of sweetness balanced with tobacco and dark spices. The finish is just long enough to prepare the palette for another sip. Cask Type: Rioja Barrel. Style: Rioja Finish. Nose: an intriguing head-on meeting of fruit salad and barley sugar… with some spiced vanilla thrown in to remind you of the age; Taste: silky yet strangely well mannered for a malt which has plenty of spices just bursting to escape; Finish: creamy textured, long and deliciously chewable. Some of those spices finally make it into general play; Balance: clean, sweet and quietly understated. — Jim Murrays – 2013 Whisky Bible. |

Caledonian Grain Whisky – Clan Denny 45 Year Old Edition Country: Scotland Region: Lowland Age: 45 Years Strength: 47.30% Summary: Cask No: HH7501. Bottles from Cask: Distilled: 1965. Bottled: Nose: a curious though not unpleasant mix of bourbon whisky warehouse and my dad’s old-train imbued clothes in the early 60’s after he got in from work …; Taste: a Kentuckian character from the moment it touches the lips; the sugars are delicate and diverse, the liquorice building in boldness. By the midway point the sugars have moved into fully-fledged honey’s; light and brain-exploding complex; Finish: a wee bitter note from tired oak. But that is outflanked by those oils carrying a gorgeous fruit and nut character and vanilla to die for; Balance: anyone who managed to get their hands on the very oldest maturing stocks of Barton bourbon from twenty years ago (and there were very few of us who managed it) would recognise it immediately. The similarities are uncanny. © Jim Murrays – 2013 Whisky Bible. |

Carsebridge Grain Whisky – Clan Denny 45 Year Old Edition Country: Scotland Region: Lowland Age: 45 Years Strength: 44.70% Summary: Cask No: HH7500. Bottles from Cask: Distilled: 1965. Bottled: Nose: absolutely no doubting the corn used in this whisky: a gentle honeyed cross between a Canadian and bourbon, alternating in intensity between the two styles; Taste: the delivery comes down firmly in the bourbon camp; or perhaps I should say softly but decidedly: the oils are sumptuous yet feather-light, the sugars no more than sprinkled; Finish: warm; Balance: and now we have so often seen in Kentucky and Canada, old grains maturing in high quality casks rank amongst the best whiskies in the world: here is a stunning example. © Jim Murrays – 2013 Whisky Bible. |

Knockando – 12 Year Old Managers Choice/sherry Cask Country: Scotland Region: Speyside Age: 12 Year Old Strength: 58.50% Summary: Nose: I think my staff have poured me the wrong stuff: they’ve opened up some pot still Demerara, right …? Wrong. No definitely from the Knockando sample. Well, well, well …let’s just say it’s a fruity, sugary, rich start on the nose …; Taste: Actually, I don’t care if this is rum or whisky. When you get flavours this beautifully defined, a body this sublimely structure …it really doesn’t much matter. Oozes fruity, beautifully natural sweetened quality and complexity; Finish: A slight bitterness on the finish where, for the first time, there is a minor blemish, but the array of sugars still make for something memorable …and absolutely 100% nothing like I have tasted from any previous Knockando …; Balance: I have been in the Demerara region Guyana, crawled around a rum warehouse at a rum distillery and opened a cask of rum which has less rum characteristics than this rumbustuous chappie. Quite a rum do. © Jim Murrays – 2012 Whisky Bible. |
