Redbreast Dream Cask Double Cask Edition Released To Celebrate World Whisky Day!

Redbreast Dream Cask Double Cask Edition!

Redbreast Irish Whiskey, produced by Irish Distillers at its world-renowned Midleton Distillery in Co. Cork, is launching the fifth edition in its celebrated Dream Cask series to mark World Whisky Day 2022!

Redbreast Dream Cask Double Cask Edition is a 30 year old single pot still Irish whiskey which captures the quintessential Redbreast style while celebrating innovation and craftmanship. The fifth edition represents a truly unique addition to the series, marrying two dream casks, hand selected by Master Blender, Billy Leighton and Blender, Dave McCabe, to create one exceptional whiskey.

To create this extraordinary whiskey, Leighton and McCabe each hand selected their favourite cask from Midleton’s inventory before combining them to create one heavenly whiskey. The first cask, chosen by Leighton, was originally laid down in a first fill oloroso sherry butt in May 1990, while the second – chosen by McCabe – was laid down in a first fill bourbon barrel in November 1991.

Each cask, reflective of the two distinct components of the Redbreast DNA, was chosen at its optimum maturity, then combined to showcase the unique traits imparted by each of the following three decades of ageing.

Bottling these outstanding casks together at precisely the right moment has resulted in an incredibly complex Irish whiskey that harmoniously balances the vanilla sweetness and caramel creaminess from the bourbon barrel and the deep, dark fruitiness from the sherry butt.

With an ABV of 56.9%, the resulting liquid is rich in robust spice with wood-driven characteristics and notes of dark-roasted coffee, sweet liquorice, orange peel and smoked almonds amplified by the wine cask’s influence.

Launching for World Whisky Day, 714 bottles of Redbreast Dream Cask Double Cask Edition will be available exclusively through an online ballot hosted on Redbreast’s online members’ club The Birdhouse at an RRP of €550. Each of the 500ml bottles will be presented in a keepsake book, made from recyclable cardboard*, detailing the latest instalment in the Dream Cask journey.

The ballot will be open for entries from Australia, China, Japan, New Zealand, Republic of Ireland, Singapore, South Africa, Switzerland, England, Scotland and Wales from 23rd May. When the ballot closes on 30th May, successful participants will be given an opportunity to purchase a limited-edition bottle of Dream Cask Double Cask Edition.

The Dream Cask collection has always been about sharing our most rare and special casks with Redbreast fans around the world and we are thrilled to showcase two distinct casks within this release.

For this 2022 expression, we set out to create a perfectly aged single pot still whiskey that captured the qualities and virtues of its Dream Cask predecessors, but with a new and distinctive twist of marrying these two casks just at the point of bottling. We are delighted with the results and are excited to share this next chapter in the unfolding story of Redbreast.

I am honoured to have been able to select my perfectly aged dream bourbon cask for this year’s Dream Cask and to pay homage to that unbeatable harmony that makes Redbreast so special.

Tasting Notes

Nose: A rich and complex balance of aromas. A suggestion of dried herbs and earthy tones combine with hints of antique furniture, anise, hazelnut and tobacco. Autumnal fruits, black cherry and cassis build in perfect harmony with oak and sherry wine influences.

Taste: Lucious and full with warming spices and soft tannins at first. Notes of dark roasted coffee, honey-menthol and sweet liquorice follow, complementing the pot still spices. Orange peel and smoked almonds add their own unique and subtle touch.

Finish: Long and satisfyingly rich with the precise balance of fruits, spices and oak lingering until the very end.

Still Time! Watch The Video To Celebrate ‘Robin Redbreast Day’ & Raise Money For The Common Bird!

Redbreast Irish Whiskey has launched ‘Robin Redbreast Day’ a global date in the calendar year designed to raise awareness of the brand’s mission to help keep the common birds common. To kick off its first year, Redbreast has teamed up with the renowned Irish actor and Redbreast fan, Chris O’Dowd, to create a humourous video that will help raise funds to support the brand’s charity partner, BirdLife International!

Redbreast Irish Whiskey is inviting everyone to get involved in its global initiative by simply watching the 60 second clip on social media. For every view the video receives, 25 cents will be donated to BirdLife International to help continue its commitment of keeping the robin and other common birds safe for future generations.

Redbreast Irish Whiskey will also be releasing its limited edition 12-year-old bottle which features an intricately-designed copper casing that transforms into a bird feeder!

Set in a beautiful cocktail bar, the spot sees the actor and the brand’s iconic mascot, #RobinRedbreast, discussing Chris’ fear of heights as he contemplates living his life as a common bird. Robin Redbreast quickly gets things back on track to announce why the pair have come together to raise awareness of BirdLife International, revealing just how simple it is to get involved.

Redbreast Pedro Ximénez Edition has recently been released as the first new release to celebrate Redbreast’s deep ties to the peninsula’s finest cooperages and wine makers!

Redbreast Irish Whiskey, produced by Irish Distillers at Midleton Distillery, has unveiled a new collection of whiskeys. The Iberian Series celebrates the brand’s long-standing connection to some of the Iberian Peninsula’s most celebrated cooperages and winemakers.

Redbreast Single Pot Still Irish Whiskey Pedro Ximénez Edition is bottled at 46% ABV and without chill-filtration

The first limited edition release to join the series, Redbreast Pedro Ximénez Edition is a single pot still Irish whiskey, triple distilled and initially matured in ex-bourbon and oloroso sherry casks before being re-casked into delectable Pedro Ximénez hogsheads from the southern tip of Spain for a minimum of 12 months.

Just half the size of a standard sherry butt, the increased surface area of the hogshead intensifies the flavour contribution from the Pedro Ximénez-soaked wood, imparting notes of treacle, raisins and orange zest thanks to the sweeter grape variety used in the world renowned sherry.

Crafted to the exacting standards of Irish Distillers Master Blender Billy Leighton and Blender Dave McCabe, Redbreast Single Pot Still Irish Whiskey Pedro Ximénez Edition is bottled at 46% ABV and without chill-filtration.
It is available now in Ireland, the UK, Finland and Global Travel Retail and in the US from November at RRP of €80, £72, $86.

So, what did I think? Here are my tasting notes …

Tasting Notes – Redbreast Single Pot Still Irish Whiskey Pedro Ximénez Edition (46%)

Nose: Plump raisins, gorgeous sherry and port notes revealing cane sweetness, toffee and vanilla. Tangy citrus blood oranges with shades of coffee come along later.

Palate: Satisfying syrupy mouthfeel imparting, in large part, the Nose characteristics mentioned above. i.e. plump raisins, sherry, port, cane sweetness, rich toffee vanilla and additionally creamy chocolate.

Finish: Mildly spicy with whispers of wood but it’s the lovely sherried, creamy sweetness et al that really takes centre stage – and all the flavour awards!

Overall: Well Redbreast has done it again! It’s great to hear about production methods etc. but when you get to taste what the differences these methods actually make to the Nose and Palate then these details really start to make sense.

One particular line stands out to me:
“Just half the size of a standard sherry butt, the increased surface area of the hogshead intensifies the flavour contribution from the Pedro Ximénez-soaked wood, imparting notes of treacle, raisins and orange zest thanks to the sweeter grape variety used in the world renowned sherry.”

Oh how this is so true – intense flavours rich beyond measure!

Redbreast Pedro Ximénez Edition will join the award-winning Lustau Edition in the inaugural Redbreast Iberian Series line up in yet another stunning example from Midleton’s skilled whiskey makers of how Ireland and Iberia’s rich heritages, as the purveyors of some the world’s finest spirits and wines, can combine to create whiskeys that are truly extraordinary.

The close relationships fostered there over decades have led to many delightful discoveries that take the region’s influence on our whiskey to another level, while sitting comfortably within the Redbreast family.

It gives me great pleasure that the new Iberian Series gives us an outlet to bring our best discoveries to consumers around the world. The collection will add new and exciting chapters to the Redbreast Family story with whiskeys finished in casks sourced from the sun-drenched bodegas of Spain and Portugal, suffused with the natural warmth and sweetness of the Iberian Peninsula.

The creation of the Redbreast Pedro Ximénez Edition came about thanks to strong relationships and good fortune. A number of years ago, our friends in Antonio Páez Lobato Cooperage in Jerez presented us with an exceptional opportunity to trial casks which had been pre-seasoned with Pedro Ximénez sherry for two years.

Finding that the wood contributed a very different flavour profile to the traditional Spanish sherry cask, we finished our Redbreast whiskey in these hogsheads for between 12 and 22 months, adding a distinctive twist to the signature Redbreast character.

Underpinned by the much loved Redbreast Lustau Edition, each subsequent expression in this series will represent a new chapter in exploring the casks, flavours and aromas from this region.

Thousands of whiskey fans from around the world entered an online ballot to purchase a limited-edition bottle of Redbreast Dream Cask – the fourth in the annual series produced by Irish Distillers at Midleton Distillery in Co. Cork.

With just 924 bottles available globally, over 11,000 people signed up for a chance to purchase this year’s Dream Cask Oloroso Sherry Edition, launched through Redbreast’s online members’ club, The Birdhouse.

This year’s release is extremely special to me as it combines traditional whiskey making with new ways of finishing to create a remarkable whiskey. Knockin’ On Heaven’s Door? Bob Dylan’s Whiskey & Redbreast Irish Whiskey Announce First Ever Collaboration!

Heaven’s Door Whiskey & Redbreast’s “The Master Blenders’ Edition”

Heaven’s Door Whiskey, Bob Dylan’s evolving collection of American whiskeys, and Redbreast Irish Whiskey, the world renowned Single Pot Still Irish Whiskey, proudly announce the release of a limited-edition 10-Year Aged Bourbon finished in Redbreast casks!

This first ever collaboration for both brands was created in tandem by Master Blenders, Ryan Perry of Heaven’s Door and Billy Leighton of Redbreast Irish Whiskey, and has been aptly named, “The Master Blenders’ Edition.” Marrying the best of American and Irish whiskey, The Master Blenders’ Edition has already been awarded a Double Gold medal in a blind tasting in the 2021 San Francisco World Spirits Competition.

A collaboration more than two years in the making, Perry and Leighton worked together on a multitude of blends and barrel finishes to arrive at their final whiskey profile. As a lover of Irish Whiskey and of Redbreast in particular, Heaven’s Door Founder, Bob Dylan, worked closely with the Master Blenders and sampled over a dozen blends before settling on the final selection.

Mr. Dylan is a perfectionist and knows his whiskey.

His engagement and enthusiasm for this collaboration made this project even more special.

The Master Blenders’ Edition features Heaven’s Door 10-year aged Straight Bourbon finished in Redbreast’s signature Single Pot Still Casks for 15 months, extracting flavour from single pot Irish whiskey and formerly Spanish sherry. The end result is a taste profile unlike any American whiskey and delivers prominent notes of nuts, spice and leather, as well as the influence of sherry, citrus, dark fruit, and a subtle sweetness of Yellow Man from the Redbreast casks.

Tasting Notes

The Master Blenders’ Edition is best enjoyed neat or on the rocks or with a splash of water and features the following characteristics:

Nose: Full and complex body with notes of red apples, figs and dates

Palate: Marzipan and walnut with buttery ground nut sweetness, raisin, and nougat

Finish: Delicate with a touch of honey and coconut and subtle sweetness from Irish honeycomb

Available exclusively to UK consumers via the Master of Malt online shop, the competition represents a rare opportunity to secure one of the most sought-after limited edition expressions in the annual Irish whiskey calendar.

Now in its fourth year, the annual Redbreast Dream Cask release represents the fulfilment of a dream held by Master Blender, Billy Leighton, to share an annual release like no other, and features a small selection of the very finest whiskeys in Midleton’s exceptional inventory which are finished in one ‘dream’ cask to create an expression that is truly unique.

The 2021 edition was unveiled on Friday 14th May. Redbreast Dream Cask Oloroso Sherry Edition is a 29 year old single pot still Irish whiskey that celebrates the signature Redbreast style. Combining innovation, tradition and time-honoured craftsmanship by vatting together four special whiskeys, aged for a minimum of 29 years in ex-bourbon, sherry and ruby port seasoned casks, these whiskeys were married in a single outstanding oloroso sherry butt from Jerez de la Frontera in Spain’s Andalusia region.

They were then left to mature for a further 15 months to bring an evolution of its characteristic flavours to the Redbreast experience.

With an ABV of 51.2%, this rare bottling is luscious in flavour with notes of dark brown sugar, succulent berries and vanilla perfectly off-setting Redbreast’s trademark spices. Just 924 bottles are available at an RRP of €520.

Our annual Dream Cask release is an opportunity for whiskey lovers to savour something truly exceptional from our warehouse. All 816 bottles of our first Dream Cask release in 2018 – a hand-selected 32 Year Old single pot still Irish whiskey finished in a first-fill Oloroso Sherry-seasoned butt – sold out on the first day of release, at a rate of more than two bottles per minute.

Our 2019 release, which was created from a vatting of bourbon, Oloroso sherry and Pedro Ximénez sherry casks which were re-casked and finished in a specially selected Pedro Ximénez cask, a first for Redbreast and Midleton Distillery, sold out even more quickly, at a rate of 65 bottles per minute. Due to this phenomenal demand, we have since sought to make this highly sought-after annual release as equitable as possible, introducing a new balloting system in 2020.

Hand-selected by Master Blender Billy Leighton, Redbreast Dream Cask Oloroso Sherry Edition will be available in limited quantities exclusively via Redbreast’s private members’ club, The Birdhouse!

Launching for World Whisky Day, 924 bottles of Redbreast Dream Cask Oloroso Sherry Edition will be available exclusively through an online ballot hosted on The Birdhouse. The ballot will be live from 17th to 25th May when successful participants will be given an opportunity to purchase a 500ml bottle for €520.

Redbreast Dream Cask Oloroso Sherry Edition is a 29-year-old single pot still Irish whiskey that celebrates the signature Redbreast style and represents the fulfilment of a dream held by Master Blender Billy Leighton to share an annual release like no other.

When selecting their whiskey of choice for this fourth release, Leighton and Blender Dave McCabe combined innovation, tradition and time-honoured craftsmanship by vatting together four special whiskeys, aged for a minimum of 29 years in ex-bourbon, sherry and ruby port seasoned casks. The whiskeys were married in a single outstanding Oloroso sherry butt from Jerez de la Frontera in Spain’s Andalusia region, and left to mature for a further 15 months to bring an evolution of its characteristic flavours to the Redbreast experience.

The extended finishing time of this magnificent Dream Cask enables the individual wood contributions to come together and take on a wide spectrum of mellow fruit flavours and pot still spices. The result is a luxuriously rich Irish whiskey with notes of dried fruits, herbs and toasted oak and a complex aroma of liquorice, leather and nutmeg reminiscent of Andalusian bodegas. With an ABV of 51.2%, this rare bottling is luscious in flavour with notes of dark brown sugar, succulent berries and vanilla perfectly off-setting Redbreast’s trademark spices.

There is no greater joy in my job than to come across an excellent cask while conducting a sensory assessment of our whiskeys. It is from four such outstanding casks that this year’s Redbreast Dream Cask was born. To craft the 2021 expression, we experimented with new ways of vatting, marrying and finishing to create something greater than the sum of its parts and we are delighted with the result.

Tasting notes

Aroma: A rich and complex array of aromas with liquorice, dried fruits and a freshly crushed garden mint character to the fore, while dark berries and delicate touches of orange marmalade build over time, working in tandem with the pronounced aromas of worn leather tobacco leaf and nutmeg. Cinnamon spice and sweet vanilla highlight the intricate nature of the oak, complimenting and enhancing the pot still spices.

Taste: Luscious and full, with succulent berry fruits, soft anise spice and mild tannins. The taste effortlessly evolves with notes of dark brown sugar, vanilla, and raisins adding a sweet element to create balance with the pot still spice, while cinnamon and nutmeg remain constant in the background.

Finish: Lingering finish with the spices slowly fading allowing the oak and fruit to have the final say.

Redbreast Dream Oloroso Sherry Edition represents four unique whiskeys which were aged for a minimum of 29 years and then vatted together and left to marry in the Oloroso sherry butt. These include:

Cask 1- a single pot still Irish whiskey distilled in 1989, matured in an ex-bourbon barrel and re-casked into a ruby port cask in 1995.

Cask 2- a single pot still Irish whiskey distilled in 1991, matured in a second-fill ex-bourbon barrel.

Cask 3- a single pot still Irish whiskey distilled in 1991, matured in a second-fill ex-bourbon barrel.

Cask 4- a single pot still Irish whiskey distilled in 1991, matured in an ex-bourbon barrel and re-casked into a sherry butt in 2011.

The release celebrates 30 years since Irish Distillers resurrected the Redbreast Irish Whiskey brand in 1991!

Redbreast Irish Whiskey, which is produced by Irish Distillers at Midleton Distillery, has unveiled Redbreast 10-Year-Old, a reimagining of Gilbey’s historic expression, last produced half a century ago.

The limited-edition release celebrates 30 years since the resurrection of Redbreast Irish Whiskey and salutes the continuous revival of single pot still Irish whiskey on the world stage.

Redbreast 10-Year-Old pays tribute to the historic expression originally produced by W.A Gilbey, a wine and spirits merchant operating in Dublin at the turn of the 20th century. As importers, Gilbey’s had an ample supply of sherry casks in their vaults and would source distillate exclusively from the nearby Jameson Distillery to mature in their casks. This special bottling of Redbreast 10-Year-Old has been reimagined for a contemporary audience, signifying the ongoing renaissance of single pot still Irish whiskey.

The liquid is composed of three exceptional distillates, spanning 10 to 15 years in age, matured in both American oak ex-bourbon barrels and Oloroso sherry seasoned butts from Spain. A truly special offering, the inclusion of a rare, more traditional style of single pot still distillate which is usually reserved for older age-statement whiskeys in the Redbreast range pays tribute to the historic expression last produced in the 1970s.

A significant contribution from the sherry butts references the prominent use of fortified wine casks in whiskey bonding throughout Ireland in the 1960s. Evoking the quality and craftmanship of Redbreast Irish Whiskey, this expression brings together rich and fruity flavours from across the world while paying homage to bonding, a tradition embedded in Ireland’s whiskey history.

The distinctive packaging of Redbreast 10-Year-Old has been designed to enhance the traditional credentials of the Redbreast brand, which was first brought to life in 1912, and features a timeline of significant dates in the brand’s history. The label, an outlier within the current Redbreast Irish Whiskey family and reminiscent of the original white label and red seal from the historic Gilbey’s 10-Year-Old, is set to appeal to the nostalgia of dedicated Redbreast fans around the world.

Bottled at cask strength, at an ABV of 59.1%, Redbreast 10-Year-Old will retail at €100. The expression will be available exclusively via The Birdhouse, Redbreast’s online membership platform, as a reward for loyal Redbreast fans whose dedication is driving the brand’s success as the most decorated single pot still Irish whiskey in the world.

Tasting notes:

Aroma: Intense aromatics of honeycomb and cedarwood with earthy notes, dried tobacco leaf and worn leather. Dark fruits linger in the background and slowly develop overtime along with toasted almonds and demerara sugar, while a pot still spice intensity continues to build, adding to the complexity of flavours layered over a strong foundation of oak.

Taste: Rich in tannins that work in tandem with the inclusion of traditional pot still distillate creating balance between oak and spirit. The oloroso wine casks emerge to contribute marzipan and fig along with subtle hints of mixed berry compote, while delicate touches of vanilla and treacle are found lingering in the background.

Finish: The pot still spices rise to a crescendo and then finally give way to the toasted oak and delicate sweetness that lingers until the very end.

Redbreast Irish Whiskey is today launching a limited-edition copper whiskey casing that neatly transforms into a beautiful bird feeder!

Following the launch of a partnership with BirdLife International earlier this year, €15 for every limited-edition Redbreast 12 Year Old purchased will be donated to support Redbreast’s and BirdLife International’s joint mission to keep common birds common.

Available from the Redbreast website for €60 (£50), the intricately designed shell sits around a bottle of Redbreast 12-Year-Old, the world’s bestselling and most awarded single pot still Irish whiskey. Once removed from the bottle, the casing can be filled with bird feed and hung in the garden to keep our feathery friends fed as the weather gets colder, protecting common species from becoming endangered.
