Summary: 75cl / 12.5% – Ver Sacrum is one of the most exciting new wineries in Argentina focusing mainly on varietals that are not so commonly found in Argentina. This is a blend of Viognier, Marsanne and Criolla Blanca which is co fermented with wild yeasts in concrete eggs, then left sur lie for 11 months and 10% is aged under flor. Not an easy wine to make but definitely worth the effort.

Portsmouth Cinnabar Spiced Rum

Summary: 70cl / 41% – This spiced rum is named after the red and black Cinnabar moth which flits over the Portsmouth distillery, which is located in Fort Cumberland. It is made with cinnamon, clove, cardamom, coriander, nutmeg, orange peel and Szechuan pepper, all of which are added into the second distillation. The resulting spirit is then sweetened with the distillery's own Costa Rican sugar syrup and a dash of vanilla.

Inspired by Swedish pastries, this is a wonderful match with cola or grapefruit soda. The name comes from the fact that one co-founder Rick, 'twisted the arm' of the other, Ian, to produce a spiced rum.

Named after the distillery’s warehouse in Royal Elizabeth Yard, which was used as a Royal Navy Victualling Depot until 1970, this expression was married at the site in a combination of Oloroso and American oak octaves.
