THE EFFECT OF VIRGIN OAK ON WHISKY CAN BE DRAMATIC. HEAD DISTILLER ADAM HANNETT MUST BALANCE THE IMMENSE SENSORY FORCE OF THE RAW WOOD WHILST RETAINING THE SUBTLE COMPLEXITY OF THE OCTOMORE SPIRIT.

The solution demands a complex cask management system. Although all of the spirit in 08.4 is eight years old just 20% has been held full-term in virgin oak. 80% was originally introduced to American oak, first-fill ex-Bourbon casks, before being transferred into the European virgin oak that had previously held Octomore 07.4.

CHARACTER: The power of Octomore and virgin oak combine again to show another of the endless possibilities we can create when our focus is on the fundamental elements of whisky making.

COLOUR: Autumn leaves,

NOSE: A little smoke but gentle and warm. The oak comes with sweet honeyed malt and banana bread. The phenolic muddy notes come again now with a peppery, floral edge. With time the oak gives more and more, toffee popcorn, vanilla fudge, coconut, cinnamon. The smoke fades back a little now.

PALATE: A rich texture feels like honey as it slowly builds the flavour of the sweet mellow oak. Leather and toasted wood combine with the delicate smoke. There is balance here as there is no oak notes without an equal and complimenting note from the smoke. Praline, coconut, clove are matched with barbeque, burnt heather and iodine. The spirit behind the smoke and oak brings a lemon and salt spray hit once opened with spring water as well as hints of mint and stewed apple.

FINISH: Clove, aniseed and coffee grounds fade to peat smoke – the typical, classic Octomore finish that always lingers in your mind.

CASK TYPE: 1st Fill Bourbon & Pedro Ximénez Sherry Casks.

STRENGTH: 46.0 % Vol.

The Double Cask is matured in the finest first fill bourbon barrels before being finished for up to twelve months in Pedro Ximenez sherry casks producing this outstanding single malt whisky that provides the perfect balance of rich spicy fruits, overlaid with the characteristic sea spray and vanilla oak finish for which the house of Glen Scotia is famous.

NOSE: Amber. Very sweet. Initially it is all creme caramel, caramelised fruit sugars, wood sugar, toffee and fudge before some apple and peach come through. In time a charred note of bourbon with a pleasing dusty dryness. Has some power.

PALATE: Sweet start and quite fat and though the alcohol gives a little tongue-tingling buzz the result is a good mid-palate weight. The dry distillery character is there still, but there is now depth to counter. Water slightly dismantles the different elements, but adds some dried mint.

FINISH: Deep and dark.

STRENGTH: 45.8% Vol.

Double matured in port casks, this malt is a toast to the Scottish traders who braved the high seas and were instrumental in the foundation of the port wine trade. Port Ruighe, pronounced ‘Portree’ is the Gaelic spelling of the once-bustling trading port on Skye. The port finish combines Talisker’ s powerful maritime character with succulent sweet notes of rich berry fruits for a superb taste experience.

APPEARANCE: Dark, rich amber gold.

NOSE: Instant, very well balanced and sweet, yet not cloying; overall, rather like the sweet smokiness of a fading wood fire with the fruity richness of ripe plums.

BODY: Medium bodied and softly textured.

PALATE: Sublime, smoky and savoury: spicy pepper rapidly grows into peatiness, as a creamy smokiness mingles with spice and dark fruits.

FINISH: Long, memorable and mouth-filling, leaving on the tongue an appealing and intense cocoa-rich drying smokiness.

DELIVERY: All our wines are stored in our importers bonded warehouse’s, which have the optimum environment for fine wine storage, by carefully regulating temperature, humidity and other microclimatic factors.

NOSE: Powerful peat-smoke with just a hint of the sea-water salt of fresh oysters, with a citrus sweetness.

BODY: Full and rich.

PALATE: A rich dried-fruit sweetness, clouds of smoke, strong barley-malt flavours, warming and intense. Peppery at the back of the mouth.

FINISH: Huge, long, warming and peppery in the finish with an appetising sweetness.

Sam Simmons and Lora Hemy join Atom Brands

Atom Brands has bolstered its senior management team with the appointment of renowned spirits industry figures Sam Simmons and Lora Hemy as Head of Whisky and Head of Distillation respectively.

That Boutique-y Whisky Company and Ableforth’s maker Atom Brands has invested significantly in category and production expertise with the appointment of Sam Simmons as Head of Whisky and Lora Hemy as Head of Distillation.

Samuel J Simmons, PhD., is a highly respected whisky educator, communicator and Keeper of the Quaich. He joins Atom Brands from William Grant & Sons, where he served as Global Ambassador for The Balvenie single malt Scotch whisky since 2010. Prior to that, Simmons worked at The Scotch Malt Whisky Society and The Whisky Exchange, after establishing himself through his groundbreaking blog, Dr. Whisky.

Simmons, who holds a PhD. in English Literature, now takes up the role of Atom Brands Head of Whisky, where he will work with one of the best teams in the business to oversee the liquid for the company’s existing whisky brands (That Boutique-y Whisky Company, Darkness!, The Blended Whisky Company) as well as developing and creating all future mature liquid.

I have known the Atom guys since they were three nerds sat in a shed,” said Simmons. “To join a company of peers and friends, people who I have watched grow a business from strength to strength in a way that is so admirable, industry-leading and downright cool, there was no decision time needed when Ben invited me onboard.

Appointed as Atom Brands head of distillation in late 2017, Lora Hemy has worked as a Head Distiller and consultant at distillery start-ups, including at Welsh distillery Aber Falls. She joins Atom Brands from Halewood Wines and Spirits, where she launched the company’s distilling operations, and previously worked at Whyte & Mackay’s Dalmore single malt whisky distillery.

Hemy, who holds an MSc in Brewing & Distilling from Heriot-Watt University, will oversee all Atom Brands distilling and rectifying operations, across the likes of Ableforth’s Bathtub Gin, That Boutique-y Gin Company and The Handmade Cocktail Company. Lora’s extensive experience in recipe development will also see her contribute heavily to the NPD process.
