The nose is initially deceptively gentle, offering icing sugar and a slight earthy smoke, though time in the glass crescendos the coastal peat showing muscular phenolic character. The palate gives more notes of peat smoke along with damp wool, icing sugar, slight floral notes, and more peat smoke! The finish is unmistakably coastal fading slowly with flavours of kippers, tar and yet more smoke.

The heavy distillate from Craigellachie works wonderfully in ex-sherry wood, powerful aromas of struck matches and malting barley roll into muscular notes of dates, clove rock and sultana bread. The palate is incredibly thick bringing a waxy character carried with honey, almonds, prunes with bursts of lime and mango towards the back palate. Wood spice dominates on the finish with an array of baking spices dancing across the tongue. Powerful, complex. cerebral and moreish!

Glen Grant is one of Speyside’s stalwarts, consistently producing outstanding whiskies in its own subtle, understated way, this old sherry butt is a perfect example. The harmonious nose is a masterclass in maturation over wood-seasoning showing well developed distillate character; bruised apples, hessian, orange zest and aged desert wine. This theme drifts onto the palate with the oak very gently guiding more soft fruit notes over the palate. There’s a hint of wood smoke on the palate along with a little more fresh fruit. A great example of classy old distillate left to mature in a wonderfully inactive cask, turns out wood doesn’t always make the whisky.

The palate is an explosion of sweet, ripe fruits; apples and melon with cinder toffee and strawberry jam showing on the back palate. Spicy ginger and nutmeg linger on the finish. An excellent aged Speyside.

A warming spicy nose offers notes of sweet Madeira, Victoria Sponge and lashings of golden syrup. A little time in the glass allows the distillate to power through bringing some green apple and barley sugars into the equation. The chewy palate shows a good balance of sweet sticky dried fruit notes from the cask balanced off with fresher citrus bursts and perhaps a little nuttiness on the back palate. A well made whisky that delivers well in the powerful cask.

Cù Bòcan Releases Two New Limited Creations Designed To Unlock “The Unusual”!

Cù Bòcan Single Malt has just released two limited edition expressions within their Creation series; Creation #3 matured in Moroccan Cabernet Sauvignon and North American Rye casks and Creation #4 which has been matured in a combination of Tawny Port and Cognac casks.

The experimental Highland Single Malt is distilled every winter at Tomatin Distillery in limited batches and made with lightly peated Scottish barley for its signature wisp of smoke. Cù Bòcan is also renowned for exploring innovative maturations, creating whiskies full of intrigue and surprise and these two new Creations are no exception.

The Cù Bòcan Creation series pushes the boundaries of Scotch whisky with experimentation, whilst still paying homage to its protective heritage. A leading innovator in cask selection, Cù Bòcan were the first to use Japanese Shochu casks for maturation for their single malt, a previous Creation release in 2019; Creation #2.

The tastes and smells of a Moroccan Souk are brought to life with the exceptional Cabernet Sauvignon casks used for the Cù Bòcan Creation #3, offering notes of rose water, strawberry and black fig, whilst the North American Rye casks bring the exotic spice, citrus and tropical fruits to the fore.

Cù Bòcan Creation #4 is a nod to The Antrim Cocktail, marrying two of Europe’s most revered drinks, Port and Cognac. The end result is a medley of plum jam, grilled peach, stewed forest fruit, cinnamon and sweet campfire smoke.

The current Cù Bòcan range now comprises of three products, Cù Bòcan Signature is the only ongoing product within the range, matured in Bourbon, Oloroso Sherry and North American Virgin Oak casks, and the latest two creations.

About Cù Bòcan

1. Cù Bòcan is a Highland Single Malt distilled, matured and produced at the Tomatin Distillery (near Inverness), famous for its portfolio of brands including Tomatin Highland Single Malt, The Antiquary, The Talisman and Big T.

2. In 2005, the decision was made to produce a peated single malt and for the last week of production that year a batch of Optic Barley peated to 15ppm was used to produce about 60,000 litres of lightly peated spirit which was filled into a variety of different cask types.

3. Then, on September 3rd 2013 this lightly peated whisky produced at Tomatin was released as Cù Bòcan – A single malt at 15ppm matured in a combination of Bourbon, Sherry and Virgin Oak casks. Since then, the Cù Bòcan brand has grown with a number of vintage releases as part of the brand limited edition collection.

4. Cù Bòcan rebranded in August 2019, the brand is now positioned as a celebration in the subtleties of smoke and perfectly balanced sweetness. It is an experimental Highland Single Malt that explores innovative maturation to create whiskies full of intrigue and surprise. It is made with lightly peated Scottish barley, distilled every winter in limited batches and matured in a variety of interesting casks to unlock unusual flavours.

Inspired by the fragrant, heather cloaked highlands which surround The Balvenie Distillery, The Edge of Burnhead Wood celebrates the pastoral tale of how The Balvenie craftsmen experimented with the distillery’s natural resources to find the perfect match between fresh heather and barley. The expression, which is made from locally sourced ingredients found in the distillery grounds home grown barley malted at The Balvenie Maltings, water from the Robbie Dhu spring, and fresh heather from Burnhead Wood retains the familiar robust Balvenie taste, with a delicate fruitiness, as well as notes of light spice and juicy fruits.

NOSE: Nose: Lively and vibrant, this Balvenie has notes of fig and geranium oil perfectly balanced with fresh herbal undertones reminiscent of green woodland.

TASTE: Flavours of honey, cloves and caramelised baked dates are layered on top of delicate citrus and spice. The sweetness reveals an underlying oaky dryness.

Mackmyra Björksav (birch sap) is a Swedish single malt whisky inspired by the long-awaited return of spring.

By including casks that were seasoned with Swedish birch sap wine, we have created a floral whisky with a fresh spiciness and sweet notes of vanilla fudge. Björksav is a collaboration with our friends at Grythyttan wine.

NOSE: Floral and fruity with a light spiciness, vanilla fudge, sandalwood, cedar and toasted bread. Floral and slightly waxy notes of birch sap wine. Round and fruity notes of cherry, raisins, apple, pear and lemon.

TASTE: A fresh and fruity spiciness with light minerals and herbs together with vanilla fudge, raisins, apple, ripe pears and lemon. Light spices of vanilla, toasted oak, floral honey, sandalwood, cedar, anise, white pepper and ginger. Round oak and vanilla spices together with a slightly oily texture.

AFTERTASTE: Light, spicy notes in harmony with toasted oak and dried fruits.
