Waterford’s New “Cuvée: Argot” – Where The Whole Is Greater Than The Sum Of It’s Parts – And A Dash Of Real Irish Peat As Well!

Waterford’s Cuvée: Argot

Terroir-driven producer of natural whiskies, Waterford Distillery, is delighted to announce a major release to its Cuvée Concept single malts – “Cuvée: Argot” is a new, permanent addition to the Waterford range!

Argot – pronounced “ar-go” – means a patois, the underground language of bohemians and renegades, an underworld idiom, a secret tongue, reserved for those in the know.

Argot, a single malt whisky, is created as a vibrant, enthusiastic, devil-may-care bottling, bringing together several of Waterford’s Single Farm Origins for beguiling depth and ultimate complexity with a mere hint of true Irish peat.

Argot is the exuberant little brother to the distillery’s flagship bottling The Cuvée, a new iteration of which is scheduled for the autumn

CUVÉE CONCEPT

Inspired by Bordeaux’s greatest chateaux, the Cuvée concept is the apogee of Waterford Distillery’s radical, novel philosophy. By harvesting, distilling and maturing Irish barley farm by farm – each expressing its own distinct terroir-derived flavour profile – an unprecedented flavour library is achieved.

By drawing on these building blocks, Head Distiller Ned Gahan can bring them together, layer by layer, to create the ultimate in complexity – where the whole is greater than simply the sum of the parts.

Argot is the exuberant little brother to the distillery’s flagship bottling The Cuvée, a new iteration of which is scheduled for the autumn.

Our somewhat sacrilegious view is rather than a manufactured product, Waterford Whisky is an agricultural produce. It’s of the land; our reverence for its raw material, barley. And Argot is our introduction to that Waterford Whisky world.

On the one hand we can express barley by letting Ireland’s farmlands do the talking via uber-specific focus of our Single Farm Origins; or as in this case, with ultimate creativity, we can bring these flavours, those barley ingredients together for ultimate harmony and complexity in the same way as Bordeaux Grand Vin and Champagne Grand Marques.

We call it the Cuvée Concept.

TASTING NOTES

Cuvée: Argot is matured fully in a mixture of 37% first-fill US Oak, 19% Virgin US oak, 19% Premium French Oak and 23% Vin Doux Naturel.

The whisky has aromas of orange peel, almonds stewed apple, bread crust, green foliage, mixed berries, fennel and white chocolate, with the flavours of bell peppers, granola, grapefruit, smokey barbecue, banana milkshake, green apple skin – the finish is long, warming, peppery and dry.

Cuvée: Argot is bottled at 47% ABV.

Argot will be available in selected retail locations worldwide as a permanent listing, priced at €59.90, £56.00 and US$59.95.

ORGANIC: GAIA 1.1 is the first organic Irish whisky as certified by the Organic Trust, having met rigorous production regimens and audits. It begins the new Arcadian Series – the unconventional array of organic, biodynamic and heritage distillates. This first whisky is distilled from organic Irish barley grown by Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley, Trevor Harris and John Mallick.

A century ago organic malting barley would have been ubiquitous in Ireland; today it is frustratingly rare. When they started the organic project in 2015 – their quest to go back in time to explore alternative farming methods – the volumes of Irish organic malting barley from any one farm were so small there was no possibility of distilling them as a Single Farm Origin. So given the incredibly low yields of organic barley, prior to distillation they combined these crops together as one batch, in contrast to their other distillations. In the years to come, they will be in a position to add a number of Organic Single Farm Origins. As it stands, they have taken all the organic malting barley they can possibly get their hands on – now laying down some 400-600 casks of organic spirit a year.

ORGANIC: GAIA 1.1 is fully matured in a spectrum of super-premium oak: 42% first-fill US oak, 17% virgin US oak, 18% Vin Doux Naturel – sweet fortified wines – and 23% premium French oak. It’s bottled at 50% ABV without colouring, chill-filtration or any additives. Totally natural.

Waterford Irish Distillery Unveils New ‘Single Farm Origins’ Whiskies For Spring!

New Single Farm Origins for Spring!

Winner of the coveted Distiller and Brand Innovator of the Year awards at the 2021 Icons of Whisky Ireland, Waterford Distillery is pleased to announce a new set of Single Farm Origin releases for Spring 2021!

Waterford Whisky is an Irish Single Malt, fully matured (no finishes) in a spectrum of super-premium casks including first-fill and virgin US, and French oak. All whiskies are bottled at 50% ABV without colouring, chill-filtration or any additives.

Hook Head 1.1

Waterford Whisky is influenced by the world’s greatest winemakers, obsessively bringing the same intellectual drive, methodology and rigour to single malt whisky by exploring Irish-grown barley – one farm, one terroir, at a time.

The fully traceable Single Farm Origin whiskies each carry a unique digital number – the TÉIREOIR code – on the back label, which introduces the Irish farm origin, the people that work it, the casks used to compose the whisky, and an array of media.

These Spring releases introduce two new globally available expressions and five national exclusives.

Two Waterford Single Farm Origins will be available worldwide from mid-March onwards:-

Hook Head: Edition 1.1 – The lighthouse at Hook Head, an extreme maritime terroir, stands resolute against the full force of the Atlantic Ocean on Ireland’s southern coast. Exposed to salt-laden storms, Martin Foley’s barley grows on clay/loam soils of the Elton series. This edition is a spice bomb with notes of cloves, salted caramel, liquorice, ginger biscuits, lemon zest, and chilli chocolate.

Lakefield 1.1

Lakefield: Edition 1.1 – Lakefield, inland in lush Co. Laois, is farmed by the enigmatic Seamus Duggan – a Barley Grower of the Year trophy winner. Derived from limestone and sandstone, these well-drained, deep loam soils produce exceptional barley. This edition is a mellow dram with hints of rhubarb and apple tart fresh from the oven.

Part of Waterford’s strategy is to allow individual markets to follow the development of ‘their own’ single terroir over a number of years. Five Single Farm Origins have been allocated to European countries on an exclusive basis:
Grattansbrook: Edition 1.1 – UK only
Lacken: Edition 1.1 – France only
Tinnashrule: Edition 1.1 – Germany only
Mortarstown: Edition 1.1 – Belgium only
Wilkinstown: Edition 1.1 – Netherlands only

The internationally renowned Icons of Whisky awards are announced annually by Whisky Magazine, the world’s largest whisky publication. The Icons of Whisky Awards recognise the people, places and products that complete the whole dynamic of the whisky industry. Waterford Distillery – in just seven months of its whiskies being on sale – won not just one, but two of the biggest Icons of Whisky Ireland awards of the event: Distillery

Waterford founder and CEO Mark Reynier has over four decades’ experience in the drinks industry – 20 years in wine, and over 20 years in spirits. A maverick entrepreneur who has done perhaps more than any other figure to apply the rigours of terroir to the spirits world, he began his career in the London wine trade in 1980, formed La Réserve – one of London’s premier wine & spirit merchants – before resurrecting the mothballed Bruichladdich Distillery at the end of 2000.

Sampling Two Waterford Whiskey Editions – Tasty With AND Without Water!

Waterford’s Ballymorgan: Edition 1.2 & Sheestown: Edition 1.2!

Waterford Distillery has a very different way of doing things and I’ve blogged about them on numerous occasions since their inception:-

So it was great to receive some samples to try – courtesy of Waterford Distillery – Cheers!

So, what did I think? Here are my tasting notes …

Tasting Notes – Waterford Irish Single Malt Whiskey – Single Farm – Ballymorgan: Edition 1.2 (50%)

Approx. 4 years old with barley grown by Robert Milne in Co. Wexford. Matured in a combination of French and American oak casks.



Nose: Popcorn, fruity toffee. Aromas of dusky pannelled rooms. Later on there’s thick creamy caramel.

Palate: Sweet popcorn, crisp apples, orange coupled with toffee caramel and creamy chocolate.

Finish: Great spice and pepper hit with some salt at the end.

Water brings out a lot more with this dram reaviling more of the above, especially more chocolate.

Overall: This is a very mature, dignified dram – despite being pretty young. A few drops of water works very well in optimising it’s flavours – making for a tasty dram indeed!

Tasting Notes – Waterford Irish Single Malt Whiskey – Single Farm – Sheestown: Edition 1.2 (50%)

Approx. 5.6 yrs old with barley grown by Phil O’Brien of Kilkenny. Matured in a combination of French and American oak casks.



Nose: Shades of tropical fruits with creamy vanilla toffee.

Palate: Toffee, tropical fruits, creamy biscuit, chocolate.

Finish: Smooth, peppery finish with some creamy toffee to go with it.

Overall: Again, addition of water (just a few drops) really releases the flavours of this dram – to good effect!

Waterford Distillery Releases ORGANIC: GAIA 1.1 – Ireland’s First Organic Whiskey In Modern Times!

Waterford Distillery, the barley-forward, terroir-driven Irish distiller, has released Ireland’s very first organic whiskey in the modern age.

ORGANIC: GAIA 1.1 was distilled in 2016 from organic Irish barley grown by a small, dedicated band of organic farmers. The single malt whisky is certified by the Organic Trust.

John Mallick, Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley and Trevor Harris rose to the challenge laid down by Waterford Distillery to produce the first Irish-grown organic malting barley.

It forms part of Waterford’s ARCADIAN SERIES, which celebrates radical growers and alternative philosophies, including heritage grains and unusual growing methods.

Waterford’s ORGANIC: GAIA 1.1 is matured in a spectrum of fresh, super-premium oak: 42% first-fill US oak, 17% virgin US oak, 23% premium French oak and 18% Vin Doux Naturel – sweet fortified wine casks. It is bottled at 50% ABV without colouring, chill-filtration or any additives whatsoever – totally natural.

It beggars belief that much of the industry treats with indifference the primary source of single malt whisky’s extraordinary flavour: barley. We have placed barley – where and how it is grown – at the heart of what we do, curious about where the real whisky flavour may be found.

A natural progression of this philosophy is to see what not only single farm origins can accomplish but what organically grown barley can do when it is given the right platform. Compliance for organic status is not straight forward by any means – there’ s a shed load of hoops to jump through, deep cleaning regimens, audits and assessments to undergo.

So, is it worth it? We certainly think so, what we lose in yield and hair pulling we gain in purity and definition of flavour.

We’re not playing at it; we lay down 400 to 600 casks of organic spirit a year, we buy all the Irish grown organic malting barley that can get our hands on. Waterford Organic will be a main player in our ongoing portfolio for the discerning whisky drinker.

Waterford Distillery Releases New Whiskies After Sell-Out Debut!

After the dramatic success of its first commercial bottlings, which sold out within a matter of hours in major retailers across Europe, terroir-driven producer Waterford Distillery has brought forward four new whisky bottlings to meet demand.

Ballymorgan: Edition 1.1

The Single Farm Origin whiskies form part of Waterford’s highly sought-after range of uber-provenance, natural single malt whiskies, which explore Irish terroir one farm, once place, at a time.

Influenced by the world’s greatest winemakers, Waterford Distillery obsessively brings the same intellectual drive, methodology & rigour to single malt whisky. For the first time the focus is on barley, the origin of whisky’s complex flavours. Irish barley is widely considered to be the world’s finest.

Waterford’s Single Farm Origin whiskies are expressions of precision and purity showcasing barley flavours derived from individual Irish farms and harvests.

The debut of two entirely new Single Farm Origins editions are:

Ballymorgan: Edition 1.1 – grown by Robert Milne on one of Ireland’s premier malting barley terroirs – the famous Clonroche Series in Co. Wexford, with its loamy, clay soils derived from slate and granite.

Sheestown: Edition 1.1 – grown just outside the historic town of Kilkenny on an undulating, well-drained, lowland terroir predominantly derived from limestone, by Phil O’Brien, father of one of our distillery workers.

In addition, a reprise of the original two sold out bottlings, slightly older second editions, has been brought forward to meet demand:

Bannow Island: Edition 1.2 – the second release, now 3 months older, was grown by Ed Harpur on the extreme southern coast of Co. Wexford, where salt-laden Atlantic winds and sandy soils create a unique, if challenging, terroir.

Sheestown: Edition 1.1

Ballykilcavan: Edition 1.2 – the second release, now 3 months older, uses barley grown by David Walsh-Kemmis west of the Barrow in Co. Laois in the barley heartlands, where his fertile fields are sheltered by ancient woodland.

Bottled at 50% ABV without colouring, chill-filtration or any additives – totally natural – each bottle is priced at €70-80/£70 and will be available from specialist retailers from the end of July 2020 onwards.

9,300 bottles of each whisky will be available throughout Europe, Taiwan and Japan, with totally unique Single Farm Origins coming to the US in September.

Supporting the unparalleled provenance is the full disclosure on each whisky, including barrel breakdown, barley agronomy, farm origin maps, distillation data, farm photography and field audio accessed via each bottle’s unique TÉIREOIR Code.

We knew there was great interest from the inquisitive, curious and open-minded in our unique philosophy but we were totally unprepared – and mighty humbled – by such an enthusiastic reception. We know this has meant some frustration for people getting their hands on a pair, but please bear with us.

Our distributors say this is the most successful launch of a new distillery brand they have ever seen, and we have all been taken off guard. Everyone associated with Waterford Whisky from farmers to maltsters to distillers to warehousemen should be very proud. Sure, it’s early days, but our novel, traceable, transparent, terroir approach seems to have found a niche appreciated by today’s enlightened consumers.

Waterford Distillery Appoints It’s Very Own ‘Terroir Agronomist’ – Grace O’Reilly!

Waterford Distillery, the Irish single malt whisky producer, is delighted to announce that Grace O’Reilly will be joining the team as the company’s agronomist in charge of terroir.

Grace will be overseeing the distillery’s relationship with its barley growers

Grace will be overseeing the distillery’s relationship with its barley growers, and deepening the company’s understanding of the barley grown across their multiple Irish terroirs.

Terroir is the French word used primarily in the wine trade to describe the interaction between soil, microclimate and place.

Grace will help unearth knowledge on how these variables influence the different flavours found in the terroir-derived distillates produced at Waterford Distillery.

Grace’s career started with the Minch Malt, part of maltsters Boortmalt, and was from day one closely involved with the distillery’s initial intricate barley logistics.

Latterly Grace was with agricultural specialists Glanbia, before joining Waterford Distillery directly. She has continued to advise malting barley growers over the past four harvests across Ireland’s tillage-growing regions.

Having witnessed first-hand the successes and challenges of localized barley production across Ireland, Grace has a profound understanding of the variance from eld to eld in a given growing season.

Terroir, provenance and traceability may be trendy buzzwords frequently bandied about by marketing men, but to us they actually mean something.

Heretical as it may seem, we can show that a whisky’s flavour can indeed be influenced by where its barley is grown.

While large distillers understandably are reluctant to accept this inconvenience, we find it both compelling and intriguing. Grace’s appointment is a kind of ‘putting money where our mouth is’ thing.

From the beginning I really enjoyed collaborating with the team at Waterford Distillery and I’m thrilled to be joining at this exciting stage.

It is highly unusual for a whisky distillery to require its own in-house agronomist, but is indicative of the importance attributable to the extensive barley provisioning policy and the consequent understanding of terroir.

Given Waterford Distillery’s obsession with barley – the essential variable that makes single malt whisky the most complex spirit in the world – the team believes this appointment will further enhance the company’s pioneering exploration in to whisky terroir.

Waterford Distillery Makes History With First Biodynamic Irish Whiskey!

Waterford Distillery become the first distillery to create Irish whisky from biodynamic barley.

The innovative Irish distillery set an industry milestone in 2016 when it distilled Ireland’s first organic whisky. The new biodynamic distillation takes it to a whole new level, creating a significant first for the Irish drinks industry.

Biodynamic agriculture, ultimate organics, is the controversial agricultural principal outlined in 1924 by Austrian philosopher Dr Rudolf Steiner, the codified manual, the culmination of 10,000 years of farming know-how. To others it’s just folklore.

The concept involves a farm becoming self-sufficient for all its needs, relying on home-made organic fertilisers and naturally occurring plant insecticides.

As our forefathers knew, the astrological calendar not only predicts tides but guides planting, growing and harvesting. Preparations, unusual to us, such as “horn manure”, made from buried, manure-packed, cow horns, is super efficacious stimulating microbial activity in the soil, seed germination and root development, say adherents; barking mad, say critics.

Working closely with Minch Maltsters, the pioneering farmers that answered the call to grow the biodynamic barley were John McDonnell, Co. Meath; Alan Mooney, Kilcock, Co. Kildare; and Trevor Harris from Naas, Co. Kildare.

The distillery received the prestigious Demeter certification from the Biodynamic Association, which it holds alongside its existing certification from the Organic Trust.

Biodynamics is a farming philosophy, a way of life. It’s fascinating to see the world’s greatest wine makers attracted to this time-consuming way of running their farms.

It started with the fear of losing the accumulated knowledge of millennia to the march of the agrochemical industry last century. It’s about minimal treatments, ancient homeopathic remedies, natural fertilisers focused on enhancing the biodiversity of a naturally healthy soil.

It all sounds pretty crazy, it’s easy to dismiss as cranky tree-hugging bunkum, but yet it’s funny how the greatest wines in the world are made under this unusual regime. Only natural we should give it a go for our whisky. As part of our extensive research we travelled Alsace, to see bioydynamics in action. So I wanted to extend my thanks to Olivier Humbrrecht and Jean Paul Zusslin – as well as to Trevor Harris, John McDonnell and Alan Mooney for rising to the challenge when I first raised the idea in 2015.

Though biodynamic farming methods may appear eccentric, many of the greatest wine producers, including the legendary Domaine Zind Humbrecht, Romanee Conti, and Chateau Margaux, maintain biodynamic vineyards.

When Mark first mentioned the idea, we thought he was mad. We had to educate ourselves on what exactly biodynamic farming is and how biodynamically grown grain may effect the production process in the distillery. I’ve found biodynamics fascinating, particularly the preparations involved and understanding how they activate and mobilize different nutrients that the barley crop needs.

The most satisfying part has been the openness of all the people involved in this project. It’s been a real team effort from the biodynamic growers, our maltsters and everyone at Waterford Distillery. We’re all learning from each other during this new chapter of malting, brewing and distilling.

A new generation of consumers is taking ever-more interest in the provenance of their drinks – how and where the ingredients are grown – which is key to the Waterford philosophy. The distillery’s unparalleled production methods involve distilling barley from 61 individual Irish farms, one a week, in isolation from eld to barrel – with complete traceability.

Like no other distillery, by celebrating and exploring the differences in soil, location and microclimate, or terroir as it is known, and extolling the virtue of super-premium wood, both French and American oak, Waterford Distillery aims to create the world’s most profound – and natural – single malt whisky.

The special spirit distilled from biodynamic barley won’t be bottled for several years, but the distillery’s first whiskies are on the horizon.

Waterford Distillery does not source spirit from other producers to be used in its products.
