“Genesis” – The First Single Malt From The Lakes Distillery!

The Lakes Single Malt whisky – Genesis

Limited to only 101 bottles, The Lakes Distillery is to auction 99 of its first bottles of single malt whisky, with bottle number one expected to go for several thousand pounds.

It’s expected that the bottle of three-year-old single malt whisky will break the record for the most expensive English whisky sold at auction. An historic moment which will confirm the country’s young industry as an authentic new world challenger to the established distilleries North of the border.

The Lakes Single Malt whisky, called Genesis, is being sold at cask strength in a bespoke rosewood presentation box, each individually numbered and hand signed by Dhavall Gandhi, the Whiskymaker. Genesis comes from the Greek word meaning origin. The name pays homage to the distillery’s beginning, and gives a tantalising glimpse into its future.

We have gathered an exceptional team of experts here at the distillery, all with their own specialities, who have all been working towards this important milestone in our history, where we can finally call our spirit whisky. Our whiskymaker has worked tirelessly to ensure that The Lakes Genesis single malt whisky is world class.

The whisky was first matured in Oloroso hogsheads giving it a vibrant character full of dried ginger and wood-spice. After the initial period of maturation, the whisky was finished in casks made-up of American and European oak to add a layer of dried fruit and vanilla. Finally, these two components were married together in Orange wine casks from the Andalucía region of Spain, giving it a spicy and chocolate-orange character.

We don’t just bottle our whisky because it is three years old; instead, I look at each cask to assess them individually until I find the right flavour profile. We have reached a peak for some casks and that is why we are releasing a limited number now.

The auction, which will be hosted on www.whiskyauctioneer.com, starts on Saturday 29th June and will run until 12 noon on Tuesday 10th July.

The Lakes Distillery was founded with money from a group of North of England based investors. A further 2,435 investors supported the Distillery in a round of crowd funding on Crowdcube six months ago, raising £1.62million.

In addition, 2,975 whisky lovers joined an exclusive Founders Club, giving them the opportunity to enjoy a 70cl bottle of The Lakes spirit every year for 10 years.

The Distillery, on the banks of the River Derwent, is already being featured on international lists as a global tourism destination, including being named one of ‘eight distilleries to see [in the world] before you die’ by World Whisky Day and being named ‘best distillery facilities in the world’ for the third year running at Spirits Business Magazine’s Global Distillery Awards 2018.

It was the only distillery in the UK, and only attraction in Cumbria, to be awarded the prestigious Gold Accolade by VisitEngland, and is already a Top Ten Lake District tourist attraction, with its tours, gift shop and Bistro receiving in excess of 100,000 visitors a year.

The company has produced the equivalent of 750,000 bottles of whisky, or whisky spirit to date. It has won numerous prestigious awards for its Gin and Vodka brands, as well as The One, the world’s only blend of British whisky, all on sale in high street outlets in the UK and in major export markets, including the Far East and Australia.

Redbreast Dream Cask 32 Year Old – It’s Gone But Not Forgotten!

Redbreast Dream Cask is (or was!) a limited edition, 32 Year Old single pot still Irish whiskey!

As The Beatles said, “I read the news today oh boy!”

and what was the headline?

“REDBREAST DREAM CASK FLIES OUT OF THE BIRDHOUSE IN JUST SIX HOURS!”

Yep, you heard it right …

Irish Distillers has confirmed that the limited edition, 32 Year Old Single Pot Still Irish whiskey, Redbreast Dream Cask, has sold out. Launched exclusively through The Redbreast Birdhouse, at 4.00pm on 19th May – World Whisky Day – all 816 bottles of Redbreast Dream Cask were sold by 10.30pm, at a rate of more than two bottles per minute.

Redbreast had very kindly sent me a sample pack so I could experience the launch on the day ‘at first taste’.

So, I was obviously gutted not to be there last Saturday as I somehow didn’t hear the postman and missed the parcel delivery! But anyways the package was re-delivered on Monday and what a package it was!

A quick refresher on the Redbreast Dream Cask 32 Year Old Single Pot Still Irish Whiskey:-

Redbreast Dream Cask is a limited edition, 32 Year Old single pot still Irish whiskey – a single cask that was hand-selected last year by Master Blender, Billy Leighton, as his favourite Redbreast whiskey. The cask was chosen for having the perfect balance of pot still, Spanish oak and sherry flavours, which can usually only be achieved through blending – bringing to life Redbreast’s signature sherry style.

The whiskey was originally unveiled during a Facebook LIVE tasting to mark Redbreast’s World Whisky Day 2017 celebrations. Participants and viewers praised the quality and rarity of what is now the oldest Redbreast Irish whiskey ever to go on sale, with many requesting that the whiskey be made available to buy.

In almost 40 years as a blender, Redbreast Dream Cask is a real highlight as I am able to select my own, personal dream Irish whiskey and share it with the world. Our inaugural tasting in 2017 was by far the largest whiskey tasting I have ever held, and the feedback we have received from the whiskey community on the liquid has been phenomenal, so it’s an honour to see it bottled to mark World Whisky Day 2018 – and watch this space for our 2019 plans.

Apprentice Blender, Dave McCabe, and Master Blender, Billy Leighton, taste one of just 816 bottles of Redbreast Dream Cask to mark World Whisky Day 2018 over the weekend

The Redbreast Dream Cask represents the perfect contribution of flavours through a careful maturation journey rounded out by a particularly sublime sherry butt. The original date of bonding goes back to 31st October 1985, with single pot still Irish whiskey filled into re-fill American Oak ex-Bourbon barrels.

Then, on 8th March 2011, the whiskey was re-casked into a first-fill Oloroso Sherry-seasoned butt. The resulting whiskey was bottled without the use of chill-filtration at 46.5% ABV.

So, what did I think? Here are my tasting notes …

Redbreast Dream Cask 32 Year Old Single Pot Still Irish Whiskey (46.5%)


Colour: Glorious sherry colour – deep and vibrant.

Nose: Rich fruits including fresh, crunchy, red apples and blackcurrant. Rich vanilla toffee, chocolate, orange and a little mint.

Palate: Ditto the nose! Luscious mouthfeel, rich, sweet, vanilla toffee, red apples, chocolate.

Finish: Dry finish with plenty of fiery pepper and that rich creamy toffee. Extremely well balanced.

Overall: A beautiful dram. One of the best I’ve ever tasted and I’ve tasted quite a few!

Glorious flavours, fantastic nosing. I’ll be a little sad when the last drops disappear but as they say, it’ll be “Gone But Not Forgotten!”

Irish Distillers Add Two Experimental Limited Editions To Its METHOD AND MADNESS Range!

Irish Distillers, makers of the world’s most well-known and successful Irish whiskeys, has added two new and experimental, limited edition Irish whiskeys to its METHOD AND MADNESS range; Single Pot Still Irish Whiskey Finished in Virgin Hungarian Oak and a 28-year-old Ruby Port Pipe Single Cask Single Pot Still Irish Whiskey. First launched in 2017, METHOD AND MADNESS aims to push the boundaries of Irish whiskey through innovative releases, harnessing the creativity and fresh thinking of the masters and apprentices in Midleton Distillery.

Single Pot Still Irish Whiskey Finished in Virgin Hungarian Oak

In a world first for Irish whiskey, METHOD AND MADNESS Single Pot Still Irish Whiskey Finished in Virgin Hungarian Oak has been finished in virgin oak felled in the Carpathian Mountain range in the North East of Hungary, where volcanic soils are best suited to the growing of Quercus Petrel.

Harvested in winter and air-dried for two years at theKádár Kádár sawmills in Tokaj, the tight grain of this exceptional wood slowly imparts complex compounds and subtle flavours into the whiskey during the finishing process. The whiskey, a single pot still distillate, was first matured in a combination of first-fill and re-fill American oak barrels, before finishing in the virgin Hungarian oak for 11 months.

Our quest for uncommon casks has led us all over the world. We were especially intrigued by the Quercus Petraea from North East Hungary and the unique properties that it could add to our flavour repertoire as whiskey makers.

At Midleton Distillery over the past few years, we have been experimenting with Hungarian virgin oak casks – a trial and error process that we are incredibly proud to have finally mastered. The result is a new first for Irish whiskey that continues to challenge perceptions of image005.jpgwhat the category can be.

The 28 year old Ruby Port Pipe

The second aged release in the METHOD AND MADNESS series is a 28 year old Ruby Port Pipe, which is a single pot still Irish whiskey matured initially for six years in American oak barrels, before being re-casked into a Ruby Port pipe for a further 22 years. The cask was carefully seasoned with a selection of wines to remove some of the heavy tannins and further seasoned with Ruby Port, infusing rich fruit flavours.

The whiskey is alive with notes of ripe stone fruit on the nose and generous with vanilla and cinnamon on the palate, while the light pot still spices shine through on the long, satisfying finish.

METHOD AND MADNESS 28 Year Old Ruby Port Pipe marks the realisation of a 22-year-old prediction from the Midleton Masters, which stated that the marriage of flavours between a single pot still Irish whiskey and a Port pipe will one day achieve balance.

Billy Leighton, our Master Blender, and I have been carefully monitoring the slowly evolving flavours of this rare and exceptional cask as part of my training as Apprentice Blender. It gives us great pleasure to be able to present it as the perfect harmony between whiskey, Port and wood.

Tasting Notes: The nose bears caramel notes with a delicate stone-fruit backdrop. A robust and sturdy palate with some fine leather notes mingling with dry tobacco, a touch of oak and a hint of dried cherries. The finish is smooth and calming.

Handcrafted in the picturesque Glen Moray Distillery in the heart of Elgin, Glen Moray Elgin Classic Whisky is one of the excellent, affordable whiskies in the Elgin Classic Collection, which were created by the Master Distiller, Graham Coull.

It is an approachable whisky with butterscotch and shortbread on the nose and a lightly spiced mouthfeel with malty toffee notes and a lemongrass tang.

“The Northern Great” Cocktail

In a tall glass add a few sprigs of mint and some ice cubes.
Add to a cocktail shaker the juice of half a lime,
50ml of Glen Moray Elgin Classic Whisky,
2 bar spoons of maple syrup,
a few raspberries and ice.
Shake and strain into the tall glass.
Top with sparkling water, stir and garnish with lime peel and one raspberry.

Top 5 Tips on whisky festivals for Whisky Month

May is ‘Whisky Month’ in Scotland, with a host of events up and down the country including World Whisky Day on the 19th, Edinburgh Whisky Stramash (19-20th) and The Islay Festival of Music & Malt (Feis Isle) (25 May to 1st June).

Whisky festivals, especially for first-timers, can be daunting – so how can you make the most of your whisky event or festival experience?
The Scotch Malt Whisky Society’s ambassador John McCheyne travels the world attending and hosting whisky events – below he shares his top tips on how to get the best out of them.

Book in advance for the tasting events you really don’t want to miss!

1. Prepare!

Whether it’s a one-day event or a week-long festival, there are so many whiskies that you may get lost in the possibilities. Book in advance for the tasting events you really don’t want to miss, and take the time to fully enjoy a particular event, instead of rushing from one to another.

2. Start light, end heavy.

Don’t rush to the peated whiskies straight off the bat. You wouldn’t start a wine tasting with a bombastic Barolo, you’d start with a pinot gris.

Sample your drams properly and appreciate them!

3. Whisky festivals can get busy.

So taste your drams away from the madding crowd, sample them properly and appreciate them. Take some notes, then you’ll have a good appreciation of the whiskies you targeted.

4. Remember your ‘festival etiquette’. 

Don’t be the person who stands at the front of the table for an extended period monopolising the ambassador and blocking the people behind from getting a dram. Be mindful of how busy the table may be and choose the right moment to have a word or two. 

Don’t be the person who ‘hogs’ the ambassador!

Ambassadors will do their best to engage an enthusiast, but it’s important to be courteous to all the other people there trying to have the same experience.

5. Lastly, talk to the hosts.

They’ll have some fascinating insights into the drams on offer, the stories behind the distilleries, and the whole experience. Take your time, plot your course, don’t make a fool of yourself, and have fun!
