The Lakes Distillery “Whiskymaker’s Reserve” – Inspired By Nature!

September 7, 2019 by Gary Leave a Comment

The Whiskymaker’s Reserve

The Lakes Distillery has unveiled the first in a series of widely available single malt whisky releases that will showcase the house style defined by their whiskymaker, Dhavall Gandhi.

“Creating a new whisky requires a framework of sorts, but there must be room within it to play, to follow gut feeling and instinct.”

Inspired by nature, The Whiskymaker’s Reserve No.1 is an artistic exploration of maturation and blending; of flavour evolution and defining a sherry-led house style.

With 5,922 individually numbered bottles at a cask strength of 60.6% ABV, it is a full-bodied expression, matured in the finest, meticulously sourced PX and red wine casks, comprising American, Spanish and French oak.

Non-chill filtered and bottled at the natural colour, the nose is rich and vibrant with vanilla, chocolate and wood spice, layers of dry fruits, ginger and orange on the palate and a long, warming finish.

Joining The Lakes Distillery for the opportunity to define the house style of the new distillery, whiskymaker Dhavall Gandhi is an expert in flavour creation, maturation – particularly in sherry-casks – and blending.

Creating a new whisky requires a framework of sorts, but there must be room within it to play, to follow gut feeling and instinct.

At The Lakes, we respect the conventions of Scotch whisky heritage but are open to a world of other influences, interpreting what we believe is right to make The Lakes Single Malt one of the finest whiskies in the world.

We don’t believe in taking the easy option if there’s another way to add a new dimension of flavour. For The Lakes, that means not only creating flavour in the new-make-spirit but also opening up more flavour possibilities throughout the journey through the entire whisky-making process.
– Dhavall Gandhi: The Lakes Distillery whiskymaker

The standard type of ex-sherry cask used in the whisky industry is a 500-litre ‘butt’ made from European oak, seasoned with Oloroso. This large size makes it ideal for longer-term maturation and gives the spirit notes of dried fruit, clove and a firm tannic grip. The Lakes, on the other hand, has widened the net.

As well as this type of sherry cask, they are also maturing their single malt in PX, Cream and the drier Fino. Furthermore, these casks are made from Spanish, American and French oak in 500-litre ‘butts’ and 205-litre ‘hogsheads’.

The idea of distilling being distinct individual elements is not how we look at the art. We see whisky-making as part of a continuum, a net of possibilities where everything is interlinked. Change one element and the effect will change everything else.

That is why, unusually, Dhavall is actively involved at every stage of the process. From the choice of barley to the intricacy of bespoke cask production and selection, and knowing each cask intimately as it matures. It’s holistic whisky-making.
– Nigel Mills: co-founder of The Lakes Distillery

A series of bottlings will follow, with the architecture of each release evolving in keeping with The Lakes increasing sherry-cask influence.

Launched on the 7th September, The Whiskymaker’s Reserve No.1 retails at £65 and can be bought from www.LakesDistillery.com where you can also discover more about The Lakes’ philosophy and holistic approach to whisky-making.

Irish Distillers Add Two MORE Limited Editions To Its METHOD AND MADNESS Range!

September 5, 2019 by Gary Leave a Comment

Larissa Marrichi and Finbarr Curran

Irish Distillers has added two new and experimental, limited edition Irish whiskeys to its METHOD AND MADNESS range; Single Pot Still Irish Whiskey Finished in Wild Cherry Wood and Single Pot Still Irish Whiskey Finished in Acacia Wood.

METHOD AND MADNESS: Wild Cherry

The whiskeys represent the latest results of the research that Midleton Distillery and Micro Distillery, in County Cork, have undertaken into maturation in different wood types over more than 10 years.

In a world first, the Midleton masters and apprentices present a single pot still Irish whiskey that has been finished in nine casks crafted from wild cherry wood, sourced from France, for between seven months and four years.

Wood from the cherry tree is characterised by its porosity, which results in significant interaction between the wood and the whiskey and has added complex flavours of shredded ginger, coconut and black tea to the ex-bourbon and sherry cask-matured whiskey.

Bottled at 46% ABV, METHOD AND MADNESS Single Pot Still Irish Whiskey Finished in Wild Cherry Wood is available in six markets, including Ireland, the UK and global travel retail, from September 2019 at the RRP of €92.

Since 2014, our research into maturation in different wood types has challenged our expertise and approach to whiskey-making – but none so much as our experimentations with wild cherry casks.

The rare, porous wood is different to anything that we have handled before, so it has been a real achievement to create the perfect balance of flavour – the result is a world-first in Irish whiskey, with a nose of coconut fibre and ginger, a palate of fresh green herbs, black tea and unmistakable pot still spices and a long, fresh finish with prickly spice and hazelnut.
– Kevin O’Gorman: Master of Maturation at Midleton Distillery

METHOD AND MADNESS: Acacia

The second new release is a single pot still Irish whiskey that has been finished in barrels crafted from acacia wood, sourced from France, for between one and four years.

Initially matured in a combination of ex-bourbon and sherry casks, the dense acacia wood has a tight grain that slowly imparts rich nutty and chocolatey flavours and a dark mahogany hue.

METHOD AND MADNESS Single Pot Still Irish Whiskey Finished in Acacia Wood is bottled at 46% ABV and is available exclusively through the Celtic Whiskey Shop in Ireland from September 2019 at the RRP of €92.

METHOD AND MADNESS aims to push the boundaries of Irish whiskey and the Irish spirits category through innovative releases and it has been a real honour to work closely with Kevin in order to craft these two new whiskeys.

The density of the acacia wood presented a challenge in contrast to the wild cherry wood as the maturation process was much slower and required a close eye and nose to achieve the perfect balance. But it was well worth the wait. This stunning single pot still Irish whiskey has a nose of sugared almonds and wood spice, a palate of coffee beans, dark chocolate and chilli and a finish with fading spice, charred wood and barley husk.
– Finbarr Curran: member of the Maturation Research Team at Midleton Distillery

About METHOD AND MADNESS

Launched in February 2017 to push the boundaries of Irish whiskey, METHOD AND MADNESS is crafted in Midleton Distillery, harnessing the creativity of Midleton’s whiskey masters through the fresh talent of its apprentices. Taking inspiration from the famous Shakespearean quote, ‘Though this be madness, yet there is method in ’t’, METHOD AND MADNESS is designed to reflect a next generation Irish spirit brand with a measure of curiosity and intrigue (MADNESS), while honouring the tradition and expertise grounded in the generations of expertise at the Midleton Distillery (METHOD)

About The SMWS

The Scotch Malt Whisky Society is a club unlike any other.

As well as being a place to connect with other like-minded whisky lovers, they are also internationally renowned for their mission: “to provide our members with an adventurous and fun journey of discovery of the world’s widest collection of single cask whiskies.”

Conceptualised in the late 70’s and established in 1983, the Scotch Malt Whisky Society, now 35 years old, has branches and partners bars in 19 countries globally. The Society has a selection of over 500 casks every year, each cask yielding a few hundred or less whisky bottles which are unique to that cask.

Rather than name their Whiskies after the distillery, the Society has a coding system. The Society also creates fantastic tasting notes summaries for their Whiskies and other bottles. The whiskies are straight from the cask single malt, undiluted, without chill-filtration or colouring at cask strength.

More recently the Society has been named Independent Bottler of the Year in Whisky Magazine’s prestigious Independent Bottlers’ Challenge (IBC) competition.

Knockdhu Distillery Celebrates 125 Years With Two Limited Edition anCnoc Whiskies!

September 2, 2019 by Gary Leave a Comment

anCnoc 16 Years Old Cask Strength and a 125 Year anniversary peated whisky

To celebrate the 125th Anniversary of Knockdhu Distillery, anCnoc whisky are proud to introduce two Limited Edition single malt Scotch whiskies: anCnoc 16 Years Old Cask Strength and a 125 Year anniversary peated whisky!

anCnoc’s Limited Edition 16 Years Old Cask Strength, retailing at £100, is matured exclusively in American oak ex-bourbon casks. Bottled at cask strength, the whisky combines traditions from the distillery’s past and modern methods of the present, honouring the distillery team’s passion for whisky making. It offers up a light, elegant expression – the epitome of a spectacular anCnoc malt. The pale, bright golden whisky offers aromas of sweet vanilla mixed with coconut and butterscotch toffee, and to taste, green apple and citrus mix with a faint, warming spice.

The second Limited Edition, anCnoc’s Peated whisky takes the drinker on a mellow journey from the heart of Banffshire’s rich peatlands. Retailing at £80, it is matured in American oak ex-bourbon casks, then further matured in Spanish oak butt, giving it a deliciously sunset gold colouring. The new peated whisky features a hint of wood smoke mixed with almonds and dried fruit; with smoke and a touch of burnt toffee on the palate. A stunning, smoky sweet dram.

The Limited Editions feature collectible packaging, each one illustrated to tell anCnoc’s unique story about the distillery’s heritage, with a celebratory copper lid, marked in honour of the 125th Anniversary. From August 2019, just 500 bottles of each will be available to purchase in the UK, in specialist retailers including The Whisky Exchange and Master of Malt.

Gordon Bruce & Dog!

To be celebrating 125 years of making exceptional whisky is a real achievement.
The traditional methods that make our whisky so special are still in use today, but we’re constantly innovating to offer a fresh take. It’s this combination of tried and tested means with a contemporary twist that makes anCnoc, and Knockdhu Distillery, one of the best places in the world to work – we have a lot of fun here. I’m lucky to have a seat at the helm of the Distillery in such an exciting year, and it’s an honour to the whole team to be able to oversee these two very special Limited Editions.

To me, anCnoc 16 Years Old is a very good example of what anCnoc should be – it’s a lovely, light, bouncy, zingy whisky – a beautiful dram. The Limited Edition Peated whisky is a great opportunity to offer something smoky with a hint of sweetness too – appealing to both peat enthusiasts and those who might not normally opt for peat. It was really important that, to mark this special year, we could offer something for everyone, and I think we’ve done just that.
– Gordon Bruce: anCnoc distillery manager

Knockdhu Distillery, home to the award-winning anCnoc whisky, is a distillery like no other, using traditional production methods to craft a bold and modern single malt. Founded in 1894 by visionary John Morrison, the copper pot stills remain the same shape and style as they did at the beginning. Meanwhile, the distillery proudly uses worms to condense the vaporised alcohol – a rarity in this day and age. Ironically, it’s these traditional techniques which help to create the distinctive, modern flavour.

About the Limited Editions

Both limited editions proudly celebrate anCnoc’s Highland home, and 125 years of pride and passion; and the bespoke packaging brings tales of the distillery’s history to life through striking turquoise illustrations from Leib Chigrin.

anCnoc’s Limited Edition Peated Whisky

anCnoc’s Limited Edition Peated Whisky (RRP £80)
· Colour: Sunset gold

· Aroma: Wood smoke, with almonds & dried fruit

· Palate: Smoky with a hint of burnt toffee

The Trainline – The story of Knockdhu Distillery starts with John Morrison’s vision – he had a great eye for good investment. The surrounding land was full of peat, barley and the Great North Scottish Railway line ran nearby.

The Deer – Deer are often seen roaming the land, an animal which shares the land with Knockdhu distillery just as equally today as it did 125 years ago.

anCnoc 16 Years Old Cask Strength

anCnoc 16 Years Old Cask Strength (RRP £100)
· SUMMARY-(16YO)Colour: Pale bright golden

· Aroma: Sweet vanilla, notes of coconut & butterscotch toffee

· Palate: Citrus, faintly spice, vanilla & green apple fruitiness

The Black Hill – The timeless allure of the nearby Knock Hill, known to the locals as the Black Hill attracted John Morrison to the land. It is the source of the springs which bring our whisky to life and in whose shadow the distillery has flourished since 1894.
Bramble the Dog – There are several dogs owned by the distillery manager and distilling team who are now considered part of the family at Knockdhu. Bramble in particular is a character and is often on site with Gordon Bruce. Visitors all over the world are familiar with the family of dogs and recognise them as part of the family of Knockdhu.
The Pot Still – The pot stills have not changed shape since the original design and are one of the reasons that we still product a light, intriguing and thoroughly modern whisky to this day.
