Sampling Two Waterford Whiskey Editions – Tasty With AND Without Water!

Waterford’s Ballymorgan: Edition 1.2 & Sheestown: Edition 1.2!

Waterford Distillery has a very different way of doing things and I’ve blogged about them on numerous occasions since their inception:-

So it was great to receive some samples to try – courtesy of Waterford Distillery – Cheers!

So, what did I think? Here are my tasting notes …

Tasting Notes – Waterford Irish Single Malt Whiskey – Single Farm – Ballymorgan: Edition 1.2 (50%)

Approx. 4 years old with barley grown by Robert Milne in Co. Wexford. Matured in a combination of French and American oak casks.



Nose: Popcorn, fruity toffee. Aromas of dusky pannelled rooms. Later on there’s thick creamy caramel.

Palate: Sweet popcorn, crisp apples, orange coupled with toffee caramel and creamy chocolate.

Finish: Great spice and pepper hit with some salt at the end.

Water brings out a lot more with this dram reaviling more of the above, especially more chocolate.

Overall: This is a very mature, dignified dram – despite being pretty young. A few drops of water works very well in optimising it’s flavours – making for a tasty dram indeed!

Tasting Notes – Waterford Irish Single Malt Whiskey – Single Farm – Sheestown: Edition 1.2 (50%)

Approx. 5.6 yrs old with barley grown by Phil O’Brien of Kilkenny. Matured in a combination of French and American oak casks.



Nose: Shades of tropical fruits with creamy vanilla toffee.

Palate: Toffee, tropical fruits, creamy biscuit, chocolate.

Finish: Smooth, peppery finish with some creamy toffee to go with it.

Overall: Again, addition of water (just a few drops) really releases the flavours of this dram – to good effect!

A whisky to inspire us to feel the spirit of Christmas this year – more so than any other year that the majority of us cares to remember.

So, what did I think? Here are my tasting notes …

Tasting Notes: The Christmas Malt 2020 – 19 Years Old Blended Scotch Whisky (44.5%)


Colour: Medium sherry.

Nose: Powerful aroma of red apples, toffee, raisins and sultanas. There’s also sherbet sweetness to boot. The toffee caramel really takes hold later on.

Palate: Sweet apples, toffee, sherry with a little orange. Dark fruits and even darker chocolate.

Finish: Spicy, feisty, finish that’ll certainly wake you up! The finish ends with some tobacco dryness.

Overall: Once again, The Whisky Exchange haven’t let us down – a great Chrimbo dram – as long as you can leave it that long to drink it!

Sampling Three New Releases From Smögen Whisky – They Pack A Punch!

Smögen Whisky have three new releases and I’ve been lucky enough to receive some samples for tasting (Cheers Robert!)

They are:-

Smögen 100 Proof – Swedish Single Malt Whisky 57.1%

Smögen Single Cask No. 12, 2011 Cask 48 Swedish Single Malt Whisky 61%

Kinghaven Rum – Diamond Distillery, Versailles Still, 15YO Single Cask 59.2%

So, what did I think? Here are my tasting notes …

Tasting Notes – Smögen 100 Proof – Swedish Single Malt Whisky (57.1%)

Distilled from heavily peated optic barley, matured for at least six years in sherry quarter casks, this has been bottled at the traditional ‘100 Proof’. Natural colour and non chill filtered. Presented in a gift carton.

£99.00 – 500ml



Nose: Buttery popcorn, creamy vanilla toffee and hints of peat. Later there’s chocolate and coffee.

Palate: Sherbet sweetness, buttery popcorn, creamy vanilla toffee and chocolate – WoW!

Finish: Fiery, peaty spice with a nice warming feel.

Overall: A powerful whisky and no mistake! The peat grows in strength with time adding a lovely warmth to the dram and balancing the popcorn flavours nicely.

Tasting Notes – Smögen Single Cask No. 12, 2011 Cask 48 Swedish Single Malt Whisky (61%)

Local barley, grown literally on the distillery’s doorstep, matured in a first fill former Bourbon barrel for 8 years. Bottled at cask strength in 2020.

£154.98 – 500ml



Nose: Pleasant peat and smoke aromas with fresh orchard fruits – mainly apple. Sweet biscuit and there’s quite coastal aroma in the background.

Palate: Muted peat and smoke with sweet apples.

Finish: Strong, fiery spice cranked up to the max! It’s a long long finish with a tobacco dryness at the end.

Overall: 61% – yes 61%!!!

This dram packs some punch and warms the tummy! Adding some water (highly recommended) releases sweeter, more caramel flavours without losing any of that spicy kick!

Tasting Notes – Kinghaven Rum – Diamond Distillery, Versailles Still, 15YO Single Cask (59.2%)

Single Cask rum selected by Pär Caldenby, independently bottled by Smögen Whisky AB at cask strength. Distilled in Guyana at the Diamond distillery in their Versailles still, which is one of two remaining wooden pot stills, and over 250 years old.
This rum has been finished in Swedish oak, and bottled at cask strength.

£124.98 – 500ml



Nose: Gorgeous rum n’ raisin ice cream – very inviting! Banoffee pie and rum soaked raisins.

Palate: Fantastic rum flavour and cane sugar sweetness. Add in some caramel and creamy vanilla chocolate and that’s quite a palate!

Finish: Cask strength chilli spiciness!

Overall: Adding water fills out this rum with flavours of blackcurrant liquorice coming through.

GlenAllachie Releases A Limited Edition 21-Year-Old Cask Strength!

The GlenAllachie 21-year-old Cask Strength

The GlenAllachie Distillery is celebrating the festive season by adding a very small batch release expression to its range – Batch One of The GlenAllachie 21-year-old Cask Strength single malt Scotch whisky.

After a remarkable period of innovation and achievement, which saw a 50th award win in just 3 years, a very limited release of only 1,600 bottles of the 21-year-old Cask Strength will be available worldwide.

The expression will be batch-released on an annual basis and is intended to cater to both whisky enthusiasts and the festive gifting market.

“Whisky lovers can anticipate a single malt which reveals an indulgent combination of fruit cake and treacle, alongside stewed plums, dark chocolate shavings and sweet cinnamon pancakes”

The first instalment of The GlenAllachie 21-year-old Cask Strength single malt features five Pedro Ximénez (PX) puncheons and hogsheads from 1997 and 1998 which have been hand-picked and married together by Master Distiller/Blender of the Year, Billy Walker (Icons of Whisky Awards, 2020).

Specially selected from The GlenAllachie’s enviable stock of over 50,000 casks, the PX puncheons and hogsheads impart rich, sherried tones upon the distinctive butterscotch and chocolate flavours of the distillery’s archetypal spirit.

The resulting first batch of the 21-year-old Cask Strength has been bottled at 51.4% and is unchillfiltered for maximum flavour. The intense mahogany colour of the whisky is drawn from its contact with the PX casks, with no artificial colouring added.

There are some whiskies which are simply a pleasure to create; our 15-year-old which we launched in 2019 was one, and this new 21-year-old is undoubtedly another. Sherry casks of this vintage are scarce, so I have been carefully monitoring each since we bought the distillery in anticipation of releasing a very special and beautifully aged expression at its peak.

These casks have now achieved the perfect balance of sherried depth and complexity, which we have bottled at natural cask strength to showcase the full experience that these casks deliver.

Sampling Compass Box Whisky’s New Limited Edition – Peat Monster ‘Arcana’

Compass Box has released Peat Monster Arcana as part of its 20th anniversary year. It is the result of a long-running experiment into the secrets and mysteries of oak and smoke.

John Glaser will host a Virtual Tasting of Peat Monster Arcana on Sunday, 22nd November at 20:00 GMT

A cask strength version of The Peat Monster was further matured in three French oak custom casks for more than two years; it was then blended with malt whiskies from the Talisker, Miltonduff and Ardbeg Distilleries in order to complement the richly spicy and more subtly smoky profile that developed.

Now Available globally, Peat Monster Arcana joins limited edition releases Hedonism Felicitas and Rogues’ Banquet to celebrate their anniversary.

We have been experimenting with French oak since the early days of our company. Peat Monster Arcana is the first Compass Box to feature smoky whiskies matured in French oak.

We’re delighted to be able to build on this experiment in our 20th anniversary year and we hope dedicated fans of The Peat Monster discover a new side to this charismatic whisky.

It is a truly delicious release and one that has taught us so much about the influence of French oak. Of course, there will always be further mysteries to explore.

Compass Box has kindly sent me some samples to try – the ‘Arcana’ and their ‘Hedonism’ (Thanks @CompassBoxWhiskyCo (Instagaram)!).

So, what did I think? Here are my tasting notes …

Tasting Notes – Peat Monster Arcana Blended Malt Scotch Whisky (46%)

– Natural colour. Not chill-filtered.
– 8,328 bottles produced globally
– £75.00 (70cl)

Serving Recommendations: Peat Monster Arcana rewards experimentation. Explore how the addition of water or soda reveals new textures or discover how its sweet smokiness reacts with different foods.


Colour: Pale straw.

Nose: Peat n’ smoke – lovely and lots of it! Smokey fires and smokey clothes! Sweet white wood. creamy coffee.

Palate: Sweet and fruity with lots of smoke and peat but the peat is more in the background than I expected. Lovely creamy chocolate.

Finish: More of the same and the cane sugar sweetnss balances the smoke very well. Antiseptic, licorice and it’s quite peppery as well with a dry tanin mouthfeel at the end.

Overall: The fruitiness was a very pleasant surprise to this dram – I really wasn’t expecting it! It manages to stand it’s ground against peat which is no mean feat!

I love the peat aromas – very much a ‘hanging around bonfires too long’ vibe to it!

Tasting Notes – Compass Box ‘Hedonism’ blended grain whisky (43%)

The world’s first Blended Grain Scotch Whisky. A unique vatting of Scotch grain whiskies from top quality American oak casks.

– Natural colour Not chill-filtered


Colour: Pale straw.

Nose: Powerful, sweet, tropical fruits!

Palate: Thick mouthfeel. Plenty of sweet tropical fruits, cherries and banana.

Finish: Intense finish with lots of tropical fruitiness still going on. A little pepper just to compliment.

Overall: Tropical fruit heaven! quite a sweet whisky – surprising!

JOHN GLASER, WHISKYMAKER

American ex-pat John Glaser is the founder and head whiskymaker of Compass Box, the boutique Scotch whisky blending house widely recognised in the industry for their innovative approach to the creation and enjoyment of whisky. Cotswolds Distillery Old Fashioned

Happy Old Fashioned Week!

Celebrate Old Fashioned Week (30th October – 8th November) with these four amazing cocktail recipes from around the world!

Delicious recipes to inspire you to get creative and have a go at creating this classic cocktail!


Cotswolds Single Malt Whisky – this award winning English single malt whisky adds a twist to the classic recipe which is simplicity in a glass. With delicious notes of sweet malted barley, hints of caramel and overtones of toasted butterscotch, with a marmalade finish!

Ingredients: 60ml Cotswolds Distillery Single Malt Whisky, 10ml maple syrup and 2 dashes Aromatic Bitters

Method: dissolve the whisky and maple syrup in a cocktail jar or glass. Add ice and stir continuously for dilution. Add the bitters, more ice and stir a few more times. Strain into an ice filled rocks glass, express orange peel around the glass. Garnish with the orange peel and serve.

Rampur Old Fashioned (Photographed by @Mix.Mann)

Rampur Double Cask Indian Single Malt Whisky Golden Old Fashioned – add an Indian touch to your Old Fashioned with this stunning subtly spiced recipe created by @Mix.Mann which includes Cumin, Star Anise, Orange Peel and Demerara Sugar. The addition of Black Pepper Cardamom Bitters adds further spice.


Cumin Anise Syrup ingredients:
half teaspoon Cumin Seeds (place in palm of hand, use your other thumb to apply pressure whilst rubbing the seeds, this opens them up releasing the delicious aromas),
2 pods/points from a Star Anise,
Orange Peel from 1 x Orange (remove as much pith as possible),
200ml Water
200ml Demerara Sugar.

Method: add all the ingredients to a saucepan. Gently bring to the boil, stir occasionally and simmer for 6-7 minutes. Remove from the heat and leave to infuse for 30 minutes. Strain into a clean jar to remove the spices and peels. Store in the fridge.

Rampur Golden Old Fashioned ingredients:
60ml Rampur Double Cask Single Malt Whisky,
10ml Cumin Anise Syrup,
1 x dash Ms Betters Bitters Black Pepper Cardamom Bitters
Garnish with dehydrated orange wheel, STARLINO Maraschino Cherry and Star Anise

Method: add all the ingredients to a mixing glass half filled with ice. Stir for 30 seconds, add more ice and stir again for 30-40 seconds. Strain into a glass over a rocks glass filled with ice and garnish.

Rampur Double Cask Single Malt Whisky: RRP: £60 for a 70cl bottle 45% ABV

J&B Rare

J&B Rare Old Fashioned. Created in the 1930’s and distilled, blended and bottled in Scotland.

Ingredients: 50ml J&B Rare, 1 x sugar cube, 2 x dashes of Angostura Bitters and orange zest to garnish

Method: stir all the ingredients in a rocks glass, adding ice as you go along. Garnish with orange zest and STARLINO Maraschino Cherries!

Storywood Tequila

Storywood Tequila – why not add a twist to the cocktail and create an Old Fashioned with a whisky aged Tequila – Storywood Speyside 14 Añejo?

Ingredients: 50ml Storywood Speyside 14 Añejo, 10ml agave syrup, 2 dashes of bitters and dehydrated orange wheel.

Method: Stir half the tequila with three cubes of ice in a glass. Add agave syrup, bitters and two more ice cubes, before stirring again. Add the rest of the tequila before stirring once more. Add more ice cubes, if there is room, and garnish with a dehydrated orange wheel.

Hotel STARLINO Maraschino Cherries would add the final flourish to an Old Fashioned Cocktail. Hailing from San Gennaro, Vesuviano, close to Naples, these cherries are moreish and a delicious addition to the classic old fashioned cocktail.
