Midleton Releases ‘Knockrath Forest’ Single Pot Still Irish Whiskey!

Midleton – Dair Ghaelach

Irish Distillers has introduced Midleton Very Rare Dair Ghaelach Knockrath Forest, the third release in the Dair Ghaelach collection. A remarkable addition to the Midleton Very Rare story, the new expression has matured in barrels made from virgin Irish oak grown in Knockrath Forest, County Wicklow, reinforcing Midleton’s provenance and its standing as a true taste of Ireland.

The story of Midleton Very Rare Dair Ghaelach, which translates as ‘Irish oak’, began over a decade ago when the Midleton Masters, ever keen to innovate and create unique and exemplary whiskeys, decided to explore the possibility of maturing Irish whiskey in native oak.

Midleton’s talented team, led by Master of Maturation Kevin O’Gorman, Master Cooper Ger Buckley and Master Blender Billy Leighton, set out to source sustainable Irish oak from estates throughout Ireland to produce a series of whiskeys, each with their own individual history and taste profile, that could be traced back to the specific tree from which the oak cask was made.

For the third edition, the Midleton team selected the Knockrath estate in the ancient Vale of Clara where the oak has grown for more than 150 years amidst the landscape of mountains and lakes. Known for its cool summers and heavy rainfall, the climate of County Wicklow impacts the density and porosity of the oak.

This, in addition to a lighter toasting of the wood and unique combination of distillates, results in subtle flavour differences between Dair Ghaelach Knockrath Forest and its predecessors, Dair Ghaelach Grinsell’s Wood [1] and Dair Ghaelach Bluebell Forest. [2]

[1] Launched in 2015, Dair Ghaelach Grinsell’s Wood was the first expression in the collection, matured in Irish oak barrels grown on the Ballaghtobin Estate in County Kilkenny.
[2] In 2017 the second edition, Dair Ghaealch Bluebell Forest, was launched created using oak from the Castle Blunden Estate in County Kilkenny.

Since the 16th century the Brabazon family has watched over Knockrath Forest and continues to sustainably manage the trees from one season to the next. Under their guardianship, the Knockrath estate became one of the first sites where the iconic Great Spotted Woodpecker – engraved into the whiskey’s stunning wooden case – set up residence on its return to Ireland following years in exile. Today, after ten years of silence, the woodpecker’s drumming can be heard throughout the forests of Wicklow and beyond thanks to the Brabazon family and the expanding oak forests.

Once felled, the carefully harvested trees were shipped to the Maderbar sawmills in Baralla, north-west Spain, where they were traditionally quarter sawn into staves for barrel manufacturing and transferred to the Antonio Páez Lobato cooperage in Jerez. After a 15-month drying process, the staves were worked into barrels and given a light toasting before returning to Ireland. Back at Midleton Distillery, the virgin oak casks were filled with Irish pot still whiskeys ranging in age from 13-26 years.

Following two further years maturing in the Irish oak, O’Gorman and Leighton diligently checked the barrels each month until finally the pair felt the whiskey had the perfect balance of flavour, aroma and wood contribution ready for bottling.

Knockrath Forest

Midleton Very Rare Dair Ghaelach Knockrath Forest is bottled at cask strength ranging from 56.1% – 56.6% ABV, giving drinkers the opportunity to taste Irish whiskey almost directly from Irish oak. The native wood contributes notes of caramel, fruits, vanilla and chocolate for a smooth and robust whiskey.

Midleton Very Rare Dair Ghaelach Knockrath Forest is an amazing 150-year journey from Knockrath Forest to bottle and one we’re proud to be part of. Traceability and sustainability are at the heart of this whiskey and, until we started this project, Irish oak had not been used to mature whiskey for well over 100 years.

Today, thanks to sustainable practices, we can harvest small volumes and trace each bottle right back to the very oak tree that helped to create it. This has, in turn, fostered an awareness and appreciation among whiskey lovers that there is even a subtle difference between trees which contributes to a whiskey’s unique flavour.

Midleton Very Rare Dair Ghaelach Knockrath Forest Tasting Notes

Nose: Pot still spices are accentuated by the Irish oak contribution, adding waves of toasted wood with hints of vanilla and roasted coffee, layered over fresh fruit which evolves from orchard fruits to tropical notes.
Taste: Classic pot still spices give a luscious texture to the fore, while the influence of the Irish oak adds a medley of sweet notes including chocolate and honeycomb.
Finish: Remarkably long finish with fruit and spices fading to allow the Irish oak to have the final say.

Irish Distillers Add Two MORE Limited Editions To Its METHOD AND MADNESS Range!

Irish Distillers has added two new and experimental, limited edition Irish whiskeys to its METHOD AND MADNESS range; Single Pot Still Irish Whiskey Finished in Wild Cherry Wood and Single Pot Still Irish Whiskey Finished in Acacia Wood.

METHOD AND MADNESS: Wild Cherry

The whiskeys represent the latest results of the research that Midleton Distillery and Micro Distillery, in County Cork, have undertaken into maturation in different wood types over more than 10 years.

In a world first, the Midleton masters and apprentices present a single pot still Irish whiskey that has been finished in nine casks crafted from wild cherry wood, sourced from France, for between seven months and four years.

Wood from the cherry tree is characterised by its porosity, which results in significant interaction between the wood and the whiskey and has added complex flavours of shredded ginger, coconut and black tea to the ex-bourbon and sherry cask-matured whiskey.

Bottled at 46% ABV, METHOD AND MADNESS Single Pot Still Irish Whiskey Finished in Wild Cherry Wood is available in six markets, including Ireland, the UK and global travel retail, from September 2019 at the RRP of €92.

Since 2014, our research into maturation in different wood types has challenged our expertise and approach to whiskey-making – but none so much as our experimentations with wild cherry casks.

The rare, porous wood is different to anything that we have handled before, so it has been a real achievement to create the perfect balance of flavour – the result is a world-first in Irish whiskey, with a nose of coconut fibre and ginger, a palate of fresh green herbs, black tea and unmistakable pot still spices and a long, fresh finish with prickly spice and hazelnut.

METHOD AND MADNESS: Acacia

The second new release is a single pot still Irish whiskey that has been finished in barrels crafted from acacia wood, sourced from France, for between one and four years.

Initially matured in a combination of ex-bourbon and sherry casks, the dense acacia wood has a tight grain that slowly imparts rich nutty and chocolatey flavours and a dark mahogany hue.

METHOD AND MADNESS Single Pot Still Irish Whiskey Finished in Acacia Wood is bottled at 46% ABV and is available exclusively through the Celtic Whiskey Shop in Ireland from September 2019 at the RRP of €92.

METHOD AND MADNESS aims to push the boundaries of Irish whiskey and the Irish spirits category through innovative releases and it has been a real honour to work closely with Kevin in order to craft these two new whiskeys.

The density of the acacia wood presented a challenge in contrast to the wild cherry wood as the maturation process was much slower and required a close eye and nose to achieve the perfect balance. But it was well worth the wait. This stunning single pot still Irish whiskey has a nose of sugared almonds and wood spice, a palate of coffee beans, dark chocolate and chilli and a finish with fading spice, charred wood and barley husk.

Six Bars To Tell The Bold Story Of Powers Whiskey & Its Dublin History!

Six bars collaborate to tell the bold story of Powers and its Dublin history

Powers Irish Whiskey, which is made by Irish Distillers in Midleton Distillery, has unveiled the Powers Quarter; a collaboration between six Dublin bars that each tell a different chapter of Powers’ Bold Character and its illustrious Dublin whiskey history since 1791.

The six bars lie within walking distance of the old John’s Lane distillery and original Powers bottling hall on Drury Street. The initiative aims to celebrate the historic Powers neighbourhood by bringing to life the bars’ historic links to the brand through Powers-educated bartenders, point-of-sale and signature serves inspired by the unique story of Powers. The Powers Quarter covers the following key Dublin accounts; Thomas House, Market Bar, The Oak, The Swan, Idlewild and John Fallons The Capstan Bar.

The Powers Quarter is supported by social media, PR and a dedicated website on which whiskey fans can a download map and take a virtual tour. The journey is free to participate in for Irish whiskey fans and will also be used by Powers for educational visits with the trade, bartenders and distributors from around the world and within the Pernod Ricard network. There’s also an option to do a guided tour with the Powers global ambassador, Michael Carr, for €60.

For generations, the Powers distillery at John’s Lane shaped the development of the area around it through the direct employment of families, provision of houses for workers and even the maintenance of the local streets. While Powers went on to become a global success story over the past two hundred years, its heart always remained in Dublin and its public houses over the years.

In fact, Powers’ founder, James Powers, was a publican himself and his pub on John’s Lane stayed within the family until the closure of the distillery in the 1970s, so it only seems right that we honour the legacy of Powers and bring more of its Dublin history to light through six bars and put Powers firmly back on the whiskey map of Dublin. Across the Powers Quarter, Irish whiskey connoisseurs and casual fans alike can enjoy a sip back in time and learn about the true character of the Powers family as purveyors of Irish whiskey – and with whiskey tourism in Dublin booming to almost 400,000 visitors last year, we are confident that the Powers Quarter will enchant a whole new generation of whiskey fans.

Billy Leighton Joins The Whisky Magazine Hall Of Fame!

The Icons of Whiskey Ireland aim to recognise the diversity and passion within the Irish whiskey industry today

Billy Leighton, Master Blender at Midleton distillery, has been inducted into the Whisky Magazine Hall of Fame in a special ceremony at The Dean Hotel, Dublin. Billy was bestowed the great honour in recognition of his 42 years in the industry and contribution to the growth of the Irish whiskey category with Irish Distillers.

The Icons of Whiskey Ireland aim to recognise the diversity and passion within the Irish whiskey industry today.

Billy Leighton is an Irish whiskey legend. His contribution to the revival of single pot still whiskey has re-shaped the Irish whiskey landscape and whiskey fans around the world owe him a debt of gratitude.

With almost a decade of experience as Master Blender behind him, Billy has diligently managed the mature stocks of Irish whiskey at Midleton Distillery in Co. Cork and used his logistical nous to forecast future demands.

Some of Billy’s finest triumphs have come in the past 10 years with the revival of the much-loved Redbreast whiskey amongst his greatest achievements. The launch of Redbreast Dream Cask in May 2018 has arguably been the crowning glory of his work with Ireland’s most famous single pot still whiskey and will be remembered as Billy’s dream whiskey.

I’m deeply honoured to join the pantheon of whiskey greats in the Whisky Magazine Hall of Fame, not least an old mentor of mine, Barry Crockett. It has been a pleasure to watch Irish whiskey regain its rightful place amongst the world’s leading spirits and I hope I’ve been able to make a contribution to this.

Redbreast 12 Year Old Cask Strength Batch B1/17, which is crafted at Midleton Distillery by Irish Distillers, has been awarded the overall ‘Best Irish Whiskey’ in the world and ‘Best Irish Pot Still Whiskey’ in the annual Jim Murray’s Whisky Bible 2019.

Redbreast 12 Year Old Cask Strength Edition

Scoring an impressive 97 out of 100 points, Redbreast 12 Cask Strength is the most highly-awarded of all new Irish whiskeys to be tasted this year.

The achievement continues success for Redbreast in the Whisky Bible, with the range having scooped ‘Best Irish Whiskey’ in the whiskey compendium for the sixth time in seven years.

Recognition from Murray completes the whiskey awards season for 2018, a year in which Redbreast 12 Cask Strength has excelled across the board.

Key awards won include a Double Gold medal at the San Francisco World Spirit Competition, a Master medal at The Irish Whiskey Masters and a 94 out of 100 point score at the Ultimate Spirits Challenge.

It is a real honour to accept the ‘Best Irish Whiskey’ award on behalf of Redbreast again this year – the sixth time in seven years that I’ve had the opportunity to do so.

Jim Murray is one of most distinguished names in the whiskey world, and I hope that his resounding endorsement for Redbreast, the quintessential Irish whiskey, will help to spread the gospel for exceptional Irish whiskey even further around the world. Irish Distillers Announces Major €150 Million Investment Programme!

More than €150 million is to be invested

Irish Distillers, one of Ireland’s leading suppliers of spirits and wines, has announced the investment of over €150 million in its sites in Cork and Dublin to meet demand for its products as the Irish whiskey renaissance continues apace.

This is accelerated by the continued growth of Jameson which is now in double or triple-digit growth in more than 80 markets across the world. Nearly €130 million is to be spent expanding and upgrading the distillery in Midleton, and maturation site in Dungourney, Co. Cork, with over €20 million being invested in development of its bottling plant in Fox and Geese, Co. Dublin.

The investment will see the construction of eight new maturation warehouses, each holding 16,800 casks, with further land to be purchased to support the next phase of development, in Dungourney, Co. Cork.

The company has also added an additional mechanical vapour recompression evaporator, made by GEA Wiegand in Germany, to its Midleton Distillery in East Cork. The addition allows the distillery to further expand its capacity. A third mash filter and new fermenters are also to be installed in the distillery to meet the increasing demand for its portfolio of whiskeys. The distillery will also complete construction of a new office building in July 2019.

Investment in Irish Distillers’ bottling site in Fox and Geese will see extensions to the main operating bottling hall, storage warehouses, laboratory, and office spaces and additional upgrades to bottling and packing equipment.

This €150 million investment in Midleton, Dungourney and Fox and Geese reflects the growing international success of Irish Distillers’ whiskey portfolio.

With a tradition dating back to 1780, we have been distilling in the Midleton Distillery since 1975 and we are delighted to confirm our commitment to this tradition, and at the same time continue to embrace progress, delivering new and innovative expressions of Irish whiskey. Irish Distillers has unveiled the 2018 vintage of Midleton Very Rare.

Bottled at 40% ABV, Midleton Very Rare 2018 is available globally

The 35th edition in the renowned and highly collectable range, first unveiled in 1984, is a masterfully blended Irish whiskey, crafted at the Midleton Distillery, Co Cork, by Master Distiller Brian Nation.

Midleton Very Rare 2018 is the result of the careful blending of exceptional, rare and hand-selected single pot still and single grain Irish whiskeys.

Each cask has been matured exclusively in lightly-charred ex-Bourbon American oak barrels for between 12 and 28 years, imparting a vanilla sweetness which is in keeping with the rich tradition laid down by the series over the past four decades.

The 2018 edition offers a subtle floral note alongside a hint of fresh herbs and citrus from the Irish grain whiskey contribution, which is complemented by the spicier Irish single pot still whiskey characteristics of cinnamon, clove and black pepper.

The vanilla sweetness contrasts with the charred oak to deliver a finishing touch of orchard fruit, green banana and a hint of barley sugar.

Bottled at 40% ABV, Midleton Very Rare 2018 is available globally from this month at the RRP of €180 in markets including Ireland, the UK, and the US.

Irish Distillers, makers of the world’s most well-known and successful Irish whiskeys, has added two new and experimental, limited edition Irish whiskeys to its METHOD AND MADNESS range; Single Pot Still Irish Whiskey Finished in Virgin Hungarian Oak and a 28-year-old Ruby Port Pipe Single Cask Single Pot Still Irish Whiskey. First launched in 2017, METHOD AND MADNESS aims to push the boundaries of Irish whiskey through innovative releases, harnessing the creativity and fresh thinking of the masters and apprentices in Midleton Distillery.

Single Pot Still Irish Whiskey Finished in Virgin Hungarian Oak

In a world first for Irish whiskey, METHOD AND MADNESS Single Pot Still Irish Whiskey Finished in Virgin Hungarian Oak has been finished in virgin oak felled in the Carpathian Mountain range in the North East of Hungary, where volcanic soils are best suited to the growing of Quercus Petrel.

Harvested in winter and air-dried for two years at theKádár Kádár sawmills in Tokaj, the tight grain of this exceptional wood slowly imparts complex compounds and subtle flavours into the whiskey during the finishing process. The whiskey, a single pot still distillate, was first matured in a combination of first-fill and re-fill American oak barrels, before finishing in the virgin Hungarian oak for 11 months.

Our quest for uncommon casks has led us all over the world. We were especially intrigued by the Quercus Petraea from North East Hungary and the unique properties that it could add to our flavour repertoire as whiskey makers.

At Midleton Distillery over the past few years, we have been experimenting with Hungarian virgin oak casks – a trial and error process that we are incredibly proud to have finally mastered. The result is a new first for Irish whiskey that continues to challenge perceptions of image005.jpgwhat the category can be.

The 28 year old Ruby Port Pipe

The second aged release in the METHOD AND MADNESS series is a 28 year old Ruby Port Pipe, which is a single pot still Irish whiskey matured initially for six years in American oak barrels, before being re-casked into a Ruby Port pipe for a further 22 years. The cask was carefully seasoned with a selection of wines to remove some of the heavy tannins and further seasoned with Ruby Port, infusing rich fruit flavours.

The whiskey is alive with notes of ripe stone fruit on the nose and generous with vanilla and cinnamon on the palate, while the light pot still spices shine through on the long, satisfying finish.

METHOD AND MADNESS 28 Year Old Ruby Port Pipe marks the realisation of a 22-year-old prediction from the Midleton Masters, which stated that the marriage of flavours between a single pot still Irish whiskey and a Port pipe will one day achieve balance.

Henry Donnelly Is Appointed The New Distiller At The Micro Distillery, Midleton!

Irish Distillers has announced the appointment of Henry Donnelly as the new Distiller of the Micro Distillery at the Midleton Distillery in Co Cork. As part of his new role, Henry will be responsible for the day to day operations of the Micro Distillery in Midleton and will work closely with Master Distiller Brian Nation on the production of innovative and experimental new whiskeys to add to the existing Irish Distillers portfolio.

Henry graduated from University College Cork in 2016 with a degree in Process and Chemical Engineering and joined the Jameson Graduate Distiller programme. Following successful completion of the programme, Henry was appointed as Process Technologist in the Midleton Distillery, a role that combined the role of brand ambassador with process optimisation.

I started my journey with Irish Distillers in 2016 when I was accepted on the graduate distiller programme and was lucky to learn from the masters about the intricacies of the entire whiskey production process – from grain to glass.

As the new Distiller of the Micro Distillery, I am looking forward to working closely with Brian and using my training and experience to produce a range of exciting and innovative new whiskeys.

We opened the Micro Distillery in 2015 and since then it has allowed us to explore experimental and innovative new mash bills and distillates, all of which are currently maturing. We are also looking to the past and experimenting with recipes and production techniques used by the great distillers that have come before us from the Jameson and Powers families and the Murphy family of the Cork Distilleries Company.

On top of that, it is a space where we can train the up and coming distillers of tomorrow. It is a fully manual operation which requires our young talent to hone and test their skills every day and to really understand the fundamentals of how to make the finest whiskeys in the world. We are delighted to announce the appointment of Henry to the role, we have no doubt that he will play his part in adding exciting new chapters to the incredible story of Irish whiskey.

Jameson Irish whiskey, which is produced by Irish Distillers in Midleton Distillery, has kicked off St. Patrick’s Day 2018 (Saturday, 17 March) with its seventh annual limited-edition bottle design. For the first time in its history, Jameson has collaborated with a group of artists, representing the bravery, unity and opportunities that are possible when friends come together.

Irish illustrator Claudine O’Sullivan led the design process, recruiting two close friends from different creative fields to form a collective to curate the label. British designer, Alex Mellon, and Irish photographer Leonn Ward joined O’Sullivan, with the result being a design that celebrates the openness and spirit of friendship that Ireland is renowned for.

The 2018 collectable bottle is inspired by the Fianna; Irish mythological warriors known for valuing loyalty and bravery – the foundation of every strong friendship. Claudine’s soaring eagle, drawn by hand, represents the unity felt by the silhouette of three friends on a night out – shot against Dublin’s Ha’penny Bridge by Leonn.

The three friends on the label are depicted rallying around banners and symbols representing Irish tribes of past and present, drawn by Alex, and are set to inspire whiskey drinkers around the world to come together and celebrate St. Patrick’s Day with Jameson.

A limited edition for March 2018, each bottle is equipped with a near field communication (NFC) chip which allows consumers to access content on www.jamesonwhiskey.com where they can find out more about the artists and the story behind their design. The limited edition bottle will be available in 35 countries, including Ireland, Japan and Australia, from February 2018.

Over the past 18 months, Leonn, Alex and I have come together from our different disciplines with the same vision – to create a clean, fresh and impactful design that brings the spirit of the Fianna and Ireland’s history of embellishment in storytelling to life.

On a personal note, it has been a dream come true to work with Jameson. My family lives on historic Jameson land both in Dublin and in Cork, so the whiskey has been in my life since before I can remember. Sláinte!
