Midleton Dair Ghaelach Releases New ‘Bluebell Forest’ Edition!

Oak grown in the Bluebell Forest

Irish Distillers has unveiled the next chapter in its Virgin Irish Oak Collection of Single Pot Still Irish Whiskeys; Midleton Dair Ghaelach Bluebell Forest edition. This exceptional offering has been finished in barrels made from Irish oak grown in the Bluebell Forest of Castle Blunden Estate in County Kilkenny, imparting a true and unique flavour of Ireland.

Dair Ghaelach, which is Gaelic for ‘Irish oak’, is the result of an eight-year exploration by the expert production team at the Midleton Distillery, County Cork, into using native oak to mature Irish whiskey and follows the release of Midleton Dair Ghaelach Grinsell’s Wood in February 2015.

In collaboration with expert forestry consultant, Paddy Purser, the Irish Distillers team of Kevin O’Gorman, Head of Maturation, and Billy Leighton, Head Blender, chose Bluebell Forest on Castle Blunden Estate to provide the oak for the second edition in the Midleton Dair Ghaelach series. Each bottle can be traced back to one of six individual 130-year-old oak trees that were carefully felled in the Bluebell Forest in May of 2013.

It is a joy to be able to showcase more of our experimentation with maturation in Irish oak through the release of Midleton Dair Ghaelach Bluebell Forest. The naturally sweet compounds found in Irish oak work in perfect harmony with this whiskey to deliver milk chocolate and honeycomb on the nose, a beautifully round and silky-smooth mouth feel and a long, pot still finish.

The nuances in flavour in the two editions of Midleton Dair Ghaelach come from our native wood, and offer whiskey fans a true flavour of Ireland – the range has provenance unlike any Irish whiskey before it and we look forward to exploring more of Ireland’s woodlands further in the years to come.

Bluebell Forest is found among the historic stone walls of Castle Blunden Estate in County Kilkenny. Since the 1600s, generations of the Blunden Family have watched over a stand of Irish oak trees with a carpet of luminescent bluebells covering the forest floor. The carefully felled oak from these woods imparts its character and nuances into Midleton Dair Ghaelach Bluebell Forest to create an intrinsically Irish whiskey with historical provenance, traceability and a clear link to the sustainability and rejuvenation of Irish oak.

To craft the oak into barrels, fellow artisans at the Maderbar sawmills in Baralla, north-west Spain, used the quarter-sawing process to cut the trees into staves, which were then transferred to the Antonio Páez Lobato cooperage in Jerez. After drying for 15 months, the staves were worked into 29 Irish oak Hogshead casks and given a light toast.

The whiskey, made up of a selection of Midleton’s classic rich and spicy pot still distillates matured for between 12 and 23 years in American oak barrels, was then filled into the Irish oak Hogshead casks and diligently nosed and tasted each month by Leighton and O’Gorman. After a year and a half, the pair judged that the whiskey had reached the perfect balance between the spicy single post still Irish whiskey and Irish oak characteristics.

Bottled at cask strength, between 55.30% to 56.30% ABV, and without the use of chill filtration, Midleton Dair Ghaelach Bluebell Forest is available now.

Bere is britain’s oldest strain of cultivated cereal but its origins in the distant mists of time are still unclear. One view is that bere was brought to the hebridean isles by norse invaders in the eighth century. However there are indications from the excavations of neolithic sites that could push that date back into pre-history, some 5,000 years ago.
Romantically one can certainly attribute viking qualities to bere. It is a hardy and resilient grain, well adapted to poor soil conditions and a short growing season. It ripens quickly in the long hours of gentle summer sunshine at extreme northern latitudes.
Bere produces a low yield of tough grains, and the dense grist was to break our victorian equipment when we first tried to mash it. But the results speak for themselves. Bere gives us a whisky of notably viscous texture, with a finesse and elegance unexpected in a younger spirit.

The whisky we distil from the organic barley of mid coul reflects the complex natural flavours of the landscape. Just as our stillmen refuse to abandon the traditional crafts of distillation in favour of automation or industrialisation, so farmer william rose rejects the use of herbicides, persticides and artificial fertilisers.
Crop rotation is key. Our barley must take its turn in a seven year farm cycle that also produces organic cattle, sheep,  oats, beans, grass, carrots, market gardening and a megawatt of green electricity.
Respecting the land, the soil and the climate nourishes a genuine understanding of terroir and the results are pure bruichladdich; rich, intricate and fascinating. We can sense, feel and taste the consequences in our spirit. Land and dram are completely united.

Ardbeg Ten Years Old is revered around the world as the peatiest, smokiest, most complex single malt of them all. Yet it does not flaunt the peat; rather it gives way to the natural sweetness of the malt to produce a whisky of perfect balance. Named World Whisky of the Year in 2008.
COLOUR: Light Gold.
AROMA: A burst of intense smoky fruit escapes into the atmosphere of peat infused with zesty lemon and lime, wrapped in waxy dark chocolate. Bold menthol and black pepper slice through the sweet smoke followed by tarry ropes and graphite. Savour the aroma of smoked fish and crispy bacon alongside green bell peppers, baked pineapple and pear juice.
Add water and an oceanic minerality brings a breath of cool, briny seaspray. Waxed lemon and lime follows with coal tar soap, beeswax and herby pine woodlands. Toasted vanilla and sizzling cinnamon simmer with warm hazelnut and almond toffee.
TASTE: An explosion of crackling peat sets off millions of flavour explosions: peat effervesces with tangy lemon and lime juice, black pepper pops with sizzling cinnamon-spiced toffee. Then comes a wave of brine infused with smooth buttermilk, ripe bananas and currants. Smoke gradually wells up on the palate bringing a mouthful of warm creamy cappuccino and toasted marshmallows. As the taste lengthens and deepens, dry espresso, liquorice root and tarry smoke develop coating the palate with chewy peat oils.
FINISH: The finish goes on and on a long and smoky with tarry espresso, aniseed, toasted almonds and traces of soft barley and fresh pear.

Pronounced ‘Oog-a-dal’, it’s a special vatting that marries Ardbeg’s traditional deep, smoky notes with luscious, raisiny tones of old ex-Sherry casks. Ardbeg Uigeadail was voted by the 120,000+ strong Ardbeg Committee as their favourite Ardbeg.
COLOUR: Deepest Gold.
AROMA: Rich and weighty with heady and smoky aromatics. At full strength, the initial aroma is a beguiling mix of warm Christmas cake, walnut oil and parma violets fused with fresh ocean spice, cedar and pine needles falling from the Christmas tree. A smouldering coal fire and the scent of well-oiled leather brings warmth. The sweetness of treacle toffees and chocolate-coated raisins emerge through the smoke. With water, the deep smokiness increases in intensity, reminiscent of a fired Christmas pudding. Rich flowering currants and warm baked banana and walnut bread are served with simmering mocha espresso.
TASTE: Full flavoured and rich with a deep mouth-coating texture, the taste is an intriguing balance between sweet, spicy and deep smoky flavours. The flavour is initially sweet. A burst of winter spices sets off a smoky-spicy explosion countered by a sumptuous mid-palate of honey glazed smoked food and chewy treacle. Waves of deep smoky tones and rich aromas build up on the palate like a fine Montecristo cigar.
FINISH: Amazingly long and chewy with lingering raisiny, deep mocha tones and rich aromatic smoke into the perfectly integrated finish.

From salty seasoning comes a briny character with tangy crisp seaweed and smoky bacon swirling on the surface with hints of sweet vanilla, spicy cloves and blueberries. Surrender to its dangerous depths with the heady force of menthol, treacle and chilli sauce.
TASTE: Plunge into the whirlpool and torrents of taste well up on the palate; deep, peppery and chewy, bombarding the tongue. The first plunge brings forth chewy peppered steak soaked in pepper sauce with the tang of crispy seaweed. As you descend deeper, encounter a mouthful of black tarry espresso coffee that coats the palate with rich melted dark fruits (blackcurrants, blueberries and cherries) and bitter almonds. As the taste soaks in deeper, star anise and hickory dry out the palate before a surprise of chalky effervescent violets fizz to the surface.
FINISH: Long, deep and remaining powerful into the finish with black tarry coffee, chocolate coated cherries and hot pepper sauce, the lingering memories of your mysterious and daring journey into Corryvreckan.

A super simple cocktail that makes a bold statement
25 ml Yuletide Gin
25 ml White Vermouth
25 ml Luxardo Bitter Branco

Build over ice and stir to chill. Garnish with a clove studded orange wedge. It can also be batched into a pitcher for a group serve.

Sampling The Kilchoman 2009 Vintage Single Malt – Bliss In A Glass!

Kilchoman 2009 Vintage

Kilchoman, Islay’s Farm Distillery, has released their 2009 Vintage limited edition, an eight year old single malt and one of the oldest expressions to be bottled since the distillery was founded in 2005.

Kilchoman 2009 Vintage is bottled at 46% ABV

The Vintage range is released by-annually from Kilchoman, with these whiskies spearheading the distilleries releases in terms of maturation. This will be the fourth release since the 2006 Vintage was bottled back in 2011. All three previous releases have been exclusively matured in ex bourbon barrels from Buffalo Trace distillery, whereas the 2009 Vintage is a combination of carefully selected oloroso sherry butts distilled in 2008 and bourbon barrels distilled in both 2008 and 2009.

The evolution of Kilchoman single malt is well represented through our Vintage range. Now at eight years of maturation, the balance and depth of character coming through on both the nose and the palate is incredible.

The oloroso sherry influence in the 2009 Vintage compared to the previous releases has given this whisky a different dimension with layered fruit and added sweet notes.

Founded in 2005, Kilchoman is one of the smallest distilleries in Scotland and was the first distillery to be built on Islay for 125 years. Kilchoman, the only independently owned Islay distillery is most famous as the only distillery to produce a portion of it’s whisky from barley grown onsite, completing all stages of the whisky-making process themselves using traditional farm distillery methods.

Kilchoman 2009 Vintage is bottled at 46% ABV and retails for around £67.00.

So, what did I think? Here are my tasting notes …

Tasting Notes – Kilchoman 2009 Vintage (46%)


Colour: Pale straw.

Nose: Fantastic, earthy, smokey peat. Creamy vanilla sweetness, a touch of green apples.

Palate: Sweet vanilla, charred wood, smokey peat, a little salt.

Finish: Clean, sweet, long, smokey finish with a little tobacco.

Overall: If you can manage to keep your hands off it (!) This dram gets better and better the longer you leave it.

So, be in no rush as the 2009 is well worth savouring. Conjuring up images of quietly sitting and watching glowing embers on a cosy night in with little to do except sip and relax.

Bruichladdich head distiller Adam Hannett believes Old Bruichladdich in bourbon is the ultimate expression of their spirit. The fruit, the faint salt tang, the signature elegance is all there but there is now layer upon layer of vanilla / butterscotch complexity.
In 2008, their then master distiller Jim McEwan identified a classic vintage parcel of that celebrated style and re-casked it into fresh bourbon for the last leg of an epic journey.
This dram comes from the very last 12 casks of the 1984 legacy distillation, poignantly filled on 31st December that year.

32 years. A long journey with a few crossroads, a few considered and inspired decisions down the line. This dram comes from the final 22 casks of the legacy stock distilled back in 1985 by a previous generation of Bruichladdich Stillmen.
This whisky was originally filled into gentle third fill bourbon casks and lay untouched in a warehouse until 2012. The then master distiller Jim McEwan discovered this forgotten parcel and re-casked it into fresh bourbon adding depth and complexity.
Now in 2017 the final coup de grace is a tantalising nuance in French oak from one of the greatest French Chateaux. Truly this is a dram with a story to tell.

Ultra rare. This is an elegant floral Bruichladdich with intense full term sherry maturation.
First filled into Oloroso butts in 1986, this spirit lay untouched until 2012 when it was already 26 years old. Adam’s mentor, Master Distiller Jim McEwan decided to supercharge this sublime single malt by filling it into their privileged parcel of Pedro Ximinez butts from winemaker Jan Petersen, at Bodega Fernando de Castilla.
Poignantly, this dram is made up of the very last seven casks of 1986 spirit – the magnificent seven.
This is a dram with a history and a back-story that will be hard to beat. Sherry plus. Sherry 2.0. Sherry to infinity and beyond!

Barley varieties Optic and Oxbridge were planted across the breadth of the island in 2009; gathering the harvests together was to result in this first 'regional Islay release' – the fifth in the Islay Barley series.
We distilled their spirit early in 2010 and it ran clean, rich and malty, before being filled into ex-Bourbon and French wine casks and matured in our warehouses by Loch Indaal.

COLOUR: Soft Winter sun shimmering on a golden sandy beach.
NOSE: The floral nature of Bruichladdich spirit is immediately to the fore, its purity and openness at once refreshing and stimulating. A sea breeze filled with a delicate floral bouquet drifts through before the beauty of young, clean Bruichladdich emerges with crisp sweet apple, ripe gooseberry and peach. The malted barley brings brown sugar and toffee, while aromas from the toasted oak are calm and restrained as a backdrop, allowing the malt and spirit to shine. Butterscotch, spice, and creamy vanilla custard give more clues to the tremendous quality of the casks we filled with this precious spirit.
PALATE: The mouthfeel, the viscosity, is a delight. Trickle distillation is a slow and simple technique but fundamental to producing such quality. The texture is muscular and rich. The natural oils coaxed gently from the grain temper the spice to allow its character, its young, clean, fresh charm to flourish. Appreciate the expertise of the maltster, the cooper’s craft and the experience and patience of the distillers. For this, their peatiest whisky yet, Compass Box have decided on No Name.
Compass Box came across a parcel of American oak barrels filled with mature, massively peaty single malt whisky – tarry and full of bonfire-like smokiness. To them, this was a whisky crying out to be tamed and shaped into a very special Compass Box limited edition.
Even peatier than their whisky called ‘The Peat Monster’ – the staple peated Blended Malt Scotch Whisky in the Compass Box range – the resulting blend is massive in terms of the intensity and complexity of flavour; a whisky brimming with complex peatiness, but tempered with hints of fruit character and an underlying sweetness.
Tasting Notes: A bonfire-like smokiness on the nose with a peatiness that is by turns tarry and medicinal with hints of autumn leaves. A powerful smokiness and peatiness follow, accented by hints of ripe cherries, plums and spice.

Master of Malt is set to give away over £150,000-worth of whisky, gin and other fine spirits in the run up to Christmas as #WhiskySanta returns for 2017!

The multi-award-winning campaign, first launched back in 2014, sees #WhiskySanta grant wishes from drinks lovers on social media and surprise thousands of lucky shoppers on masterofmalt.com with unexpected Christmas gifts at the checkout, from free drams of unusual and rare spirits, to full bottles worth hundreds of pounds – some will even receive their entire order completely free!

#WhiskySanta will be doing his rounds from now right up until until Christmas Eve.

Drinks fans can ‘wish’ for absolutely anything available on masterofmalt.com by using #WhiskySanta across social media, and in turn everyone’s favourite festive, heavily-bearded, omniscient being will grant wishes each and every day!

With around 10,000 delicious whiskies, rums, gins, tequilas, Cognacs, wines, beers and other drinks in stock, there’s something for everyone. Shoppers can also make wishes on Twitter or Facebook in just a couple of clicks via the handy ‘Wish’ button next to every drink on the site.

As if that wasn’t exciting enough, #WhiskySanta will also reveal an additional extra-special gift that will be up for grabs each week. Above and beyond the regular wishes, he’ll be letting Master of Malt’s followers know when to place their ‘Super Wishes’ for these incredible gifts, the first of which will be announced on Monday 6 November. Last year’s Super Wish gifts included drams of the rare-as-hen’s-teeth Buffalo Trace Antique Collection whiskeys and a full bottle of luxurious Macallan M single malt Scotch whisky. Drinks fans will want to keep an eye on the Master of Malt blog and social media channels throughout the festive season for details of this years’ exciting Super Wishes!

But wait, there’s more! #WhiskySanta is back behind the scenes on the Master of Malt site, offering customers thousands of free gifts when they place their orders. These goodies include Drinks by the Dram 30ml samples of fine spirits and spirit-filled Christmas Crackers; full bottles of award-winning single malt whiskies, gins and bourbons; free gift vouchers up to £100; and he’ll even pick up the entire tab from time to time. That’s right, some masterofmalt.com shoppers will be walking away with their whole order for free!

Taking a Liberty … Yes Please!

Dublin Liberties was the dram of choice for Wednesday nights Tweet Tasting.

Hosted by Steve from The Whisky Wire, he gave us the opportunity to sample one of the fastest growing Irish whiskey brands. So much so that construction work began last March on a new €15 million distillery and visitors centre which will open in 2018.

The drams sampled were:-

  • Dublin Liberties Oak Devil
  • Dublin Liberties Copper Alley

So, what did I think?

Here are my tasting notes … and the one which was my favourite on the night!

Tasting Notes – Dublin Liberties Oak Devil (46%)

Oak Devil was launched in 2015 and is a blend of Irish malt and grain whiskeys which have been matured in bourbon casks.

Oak Devil takes its name from the Liberties area of Dublin. A riotous quarter of the city known as ‘Hell’ in the 1700’s. Oak Devil is inspired, literally, by the fact that an oak-carved devil stood watch over the entrance to the Liberties!


Nose: Sweet toffee flavours, crisp green apples with oaky wood coming thru’ later on. The nose went more towards cognac the longer it was in the glass.

Palate: Tropical fruit with honey and vanilla creaminess. With a nice whizz of spiciness!

Finish: Punchy dram with lots of pepper coupled with a honey smoothness. Slight tobacco and waxiness at the end.

Overall: Cracking tasting whiskey with some interesting flavours and ever-changing aromas.

Tasting Notes – Dublin Liberties Copper Alley (46%)

Copper Alley is a 10 Year Old Irish single malt. It is then finished in 30 Year Old Oloroso Sherry Casks.

Copper Alley was the oldest street in Dublin, named after the coin which was minted there in the 17th Century. The alley was at the centre of the Liberties amongst the tanners, merchants, taverns and of course distilleries!


Nose: Getting the sherry and there’s honey and vanilla creaminess. A little aniseed and there’s something savoury lurkin’ at the back … smokey bacon maybe?!

Palate: Reduced sweetness with a creamier feel and lovely sherry! Some apples and a little chocolate.

Finish: Nice peppery spice coupled with honey again but the balance is more in favour of the spice than the Oak Devil.

Overall: A nice dram but less sherried than I thought it would be – this whiskey was very popular amongst my fellow tweeters!
