Redbreast Release Their ‘Dream Cask Pedro Ximénez Edition’ To Mark World Whisky Day!

The Redbreast Dream Cask

Redbreast Irish Whiskey, which is produced by Irish Distillers in their Midleton Distillery, marks World Whisky Day 2019 with the launch of Redbreast Dream Cask Pedro Ximénez Edition!

Redbreast Dream Cask Pedro Ximénez Edition will be available through the Redbreast online private members’ club, The Birdhouse, from 3pm on 27th May at the RRP of €380

Available to purchase exclusively through the Redbreast online members’ club, The Birdhouse, the new Redbreast Dream Cask was created from a vatting of bourbon, Oloroso sherry and Pedro Ximénez sherry casks which has been re-casked and finished in a specially selected Pedro Ximénez cask – a first for Redbreast and Midleton Distillery.

Redbreast Dream Cask Pedro Ximénez Edition is a 20-year-old, single cask single pot still Irish whiskey created by Master Blender, Billy Leighton, in collaboration with Blender, Dave McCabe.

The cask represents the coming together of four unique whiskey journeys spanning 20 to 33 years in age, including a rare Pedro Ximénez-matured Irish whiskey, which have been vatted together and married in the Pedro Ximénez butt to offer a unique interpretation of the signature sherry style of the Redbreast range.

The result is a luxuriously smooth and rich Irish whiskey with assertive spices and sweet, ripe fruit that slowly evolves into exotic fruits and berries, reminiscent of the classic Redbreast character.

Bottled at 52.2% ABV, 924 bottles of Redbreast Dream Cask Pedro Ximénez Edition will be available through the Redbreast online private members’ club, The Birdhouse, from 3pm on 27th May at the RRP of €380.

Redbreast Dream Cask is made up of the following whiskeys, which represent a cross-section of single pot still distillate styles and maturation techniques:

Cask 1 – a single pot still Irish whiskey distilled in 1998, matured in an ex-bourbon barrel and re-casked into a Pedro Ximénez sherry butt in 2012
Cask 2 – a single pot still Irish whiskey distilled in 1995, matured in an ex-bourbon cask and re-casked into an Oloroso sherry butt in 2012
Cask 3 – a single pot still Irish whiskey distilled in 1985 and matured in a second-fill ex-bourbon barrel
Cask 4 – a single pot still Irish whiskey distilled in 1997 and matured in a second-fill ex-bourbon barrel

Rather than try to seek out another extraordinary cask from the Midleton inventory like the inaugural Redbreast Dream Cask, we set out to create a new Redbreast Irish whiskey like you have never tasted before.

The coming together of three exceptional casks, originally destined for Redbreast 21, and a rare Pedro Ximénez butt is a first for Midleton, and the careful balance of sweet, spice and sherry flavours offers a new and complex take on the classic Redbreast Christmas cake flavour profile – it’s sure to add an extra cheer to your World Whisky Day celebrations this year!

Aroma: full rich aroma of liquorice and treacle toffee, giving cover to vanilla sweetness and a concentrate of caramelised dried fruits. Cinnamon and clove acknowledge the presence of the ex-bourbon influence whilst hazelnut and almond nuttiness adds to the complexity delivered by the fine old Pedro Ximénez Butt from Jerez

Taste: A rich viscose mouthful of satisfyingly assertive spices combined with sweet ripe fruit. The liquorice notes slowly evolve to reveal those typical exotic fruits and berries which define the Redbreast style

Glen Moray Distillery have come up with a fine cocktail to celebrate World Whisky Day on the 18th May 2019.

The Glen Moray Lion Heart cocktail

Launched in November 2018 Glen Moray Fired Oak 10-year-old single malt whisky brings an international feel to World Whisky Day.

Matured for 10 years in ex-Bourbon casks and finished in heavily charred virgin American Oak casks, Glen Moray Fired Oak is a Single Malt Whisky is sublimely smooth with intense spice and toasted vanilla flavour. It has just won the Speyside 12 Year Old and Under category at this year’s World Whiskies Awards.

Glen Moray Distillery has been distilling quality single malts since 1897 and Glen Moray Elgin Classic Port Cask Finish Single Malt, from the Elgin Classic Collection, combines the best of the soft gentle Glen Moray Classic Single Malt with the spicy, plum, wine-like, tannic elements from the port casks from Porto Cruz.

Created by whisky specialist George Harper, this whisky features malts from Clynelish and Cardhu.

Johnnie Walker “White Walker” Whisky is designed to be served chilled, which is unusual for a whisky!

So much so, that the very collectable, fantastic bottle design incorporates ‘thermochromic ink’ which reveals a message when frozen (Spoiler Alert: See image below.)

The concept of this release is to honour the “White Walkers beyond The Wall”, a bunch of baddies like no other and not to be messed with!

The Johnnie Walker bottle has a themed GOT look and Johnnie himself is wearing some natty armour. He also has the distinctive, piercing blue eyes, the un-mistakable sign of the White Walkers and don’t forget those fantastic horns!

31dover.com has very generously sent me some “White Walker” to try (thanks 31dover.com!).

So, what did I think? Here are my tasting notes …

Tasting Notes – Johnnie Walker “White Walker” Whisky (41.7%)

Available from 31dover.com and ON OFFER – WAS: £33.95 NOW: £28.00 (SAVE 9.97%) for 70cl.


Colour: Pale gold.

Nose: Green apples and vanilla with tuiti-fruiti tropical fruits. Shades of citrus which gives way to some white wood.

Palate: Very similar to the Nose with the addition of a little smoke and creamy vanilla fudge flavours. The crisp coldness gives it a morish quality that makes it very drinkable.
I drunk it way quicker than I would a room temperature dram!

Finish: Smooth, sweet finish with some smoke and increasing dryness. Right at the end there’s also some fiery spice coming through – must be the magic taking hold!

Overall: This is not a connoisseur whisky but it makes a great, fun, drink that should only be served straight from the fridge.

I haven’t included tasting notes at room temperature – it’s really not designed for that – it should be drunk well chilled – in the “spirit” of the whole GOT ice world.

Used in a cocktail “White Walker” will be to die for (there’s some ideas here) especially if we have a summer like last year, or even an Easter!

Interestingly, the addition of ice to increase the coldness seems to enhance the flavours rather than dulling them which is often the case.

Of course, it will taste great with a Coke but I thought I’d try something of my own.

My ‘Return of the Night King’ cocktail

I was thinking of calling my cocktail …


‘Return of the Night King’

  • To a tall glass add a “arrowhead mountain” * measure of Johnnie Walker “White Walker” Whisky.
  • Add a generous dash of Elderflower cordial.
  • Don’t forget to add plenty of ice.
  • Top up with Coke Zero (not as sweet.)
  • Add some Lemon juice if desired to give it some ‘bite’.

Superb! (“like the cracking of ice on a winter lake” **)

Be careful though, it has a “dragonglass” hit behind it!

GOT fans will certainly love this release, even with the bottle empty, which is not something that can be said of most whiskies!

But to be honest, Game of Thrones fan or not, this is a fun, refreshing and tasty way to experience whisky and I heartily recommended you to give it a try.

But one, burning, icy, question we all need to ask is: “Is Johnnie Walker the ‘Night King’?” ***

I’ll leave it up to you to decide!

Speyside’s Tamnavulin Distillery has revealed its latest Single Malt, the ‘Tamnavulin Sherry Cask Edition’.

The newly released Sherry Cask Edition shows the classic character of the Speyside distillery and its continued union with Sherry. It is matured in American White Oak Barrels and enhanced by a finesse in three different types of Oloroso Sherry casks created from a selection of the finest European and American Hogsheads.

The team behind the popular Single Malt expertly sourced casks from three individual cooperages across Spain. Each cooperage selected for its ability to gift different flavours to this single malt and bring to life the quintessential Sherry notes of raisin, vanilla and orange.
