£25M NEW SPEYSIDE MALT WHISKY DISTILLERY OPENED BY FIRST MINISTER

Chivas Brothers, the Scotch whisky and premium gin business of Pernod Ricard, has moved to secure future malt supplies with the launch of the Dalmunach Distillery. The £25m state-of-the-art operation has been opened on the site of a former silent distillery on the banks of the River Spey.

Dalmunach Distillery, named after the nearby pool in the River Spey on whose banks the new facility sits, was officially opened today by First Minister Nicola Sturgeon. The completion of the distillery in Carron sees the culmination of an investment package which has increased Chivas Brothers’ malt whisky distillation capacity by 17% as it looks to support long-term global demand for its brands.

Situated on the site of the former Imperial Distillery which was mothballed in 1998, Dalmunach has been built using the latest innovations and environmental expertise such as heat recovery technology. It is the most energy efficient distillery within Chivas Brothers’ portfolio, with a 20% efficiency improvement over traditional distilleries. Chivas Brothers recently won The Sustainability Award at The Drinks Business Green Awards with Dalmunach praised for its design efficiency.
Dalmunach is capable of producing up to 10 million litres per year, with the high quality Speyside style spirit used in bestselling blended whisky brands within Chivas Brothers’ portfolio, which includes Chivas Regal, Ballantine’s and Royal Salute.

Every element of the distillery design, including the unique still shapes, has been geared to producing the very highest quality Speyside malt whisky with a rich, fruity character, a vital ingredient to the highest quality blended Scotch whiskies.

Local Speyside companies were heavily involved in the Distillery’s construction and five permanent employees have been recruited.

Today is the latest culmination of our ongoing investment to satisfy the growing demand for our brands.

Dalmunach Distillery is an excellent example of securing the future of the industry by respecting its heritage and it’s fitting that the remnants from the old Imperial Distillery have been built into an extremely efficient distillery with an architecturally stunning design. It is a real pleasure to see this piece of land in Carron which has had a role in whisky making all the way back to 1897 play a future role in whisky production.

With the opening today, over the last three years we have expanded our malt whisky distillation by 17% as part of an annual capital expenditure commitment of £60m per annum. This investment continues and we have already begun work on significantly increasing capacity at The Glenlivet.

Scotch Whisky is one of Scotland’s iconic brands and is in huge demand all over the globe due to the exceptional quality the industry produces. It is hugely important to the Scottish economy and its protected EU status means it has an unmatched international reputation.

The Dalmunach Distillery is one of a 115 across Scotland and it is a sign of continued investment from Chivas Brothers. It’s also fitting that this facility opens in the Year of Food and Drink as we celebrate and promote the magnificence of our natural larder.

We want to work with firms to sustain and build on the success the industry enjoys – this distillery will play its part in that and will also contribute to the continued growth of Scotland’s economy as a whole.

The distillery architecture of Dalmunach has been inspired by the shape of a sheaf of barley reflecting the core ingredient of single malt whisky. It houses eight unique copper pot stills, with a tulip shape used for the wash stills and an onion shape used for the spirit stills, replicating those from the Imperial distillery which was situated on the site from 1897 until 2012. In a departure from tradition, the stills have been positioned in a circular design that provides a unique aesthetic for the future.

Other original features from the previous distillery have been carefully incorporated to ensure a sense of heritage remains intact. Red brick from the original mill building has been reclaimed to create a feature wall in the new entrance area, and wood from the original washbacks has been used to form an entrance ‘drum’ and adorn the gable walls of the new tun room which contains 16 new stainless steel washbacks. A new 9.5m diameter mashtun has been installed which draws spring water for production from the site’s original water sources. Dalmunach also features a unique hexagonal spirit safe housing four safes with a waterfall feature which is a first in the Scotch whisky industry.

The Dalmunach Distillery will not be open to visitors but will be visible from the nearby Speyside Way walking trail. Great care has been taken to ensure the external façade of the distillery is in-keeping with its surrounding environment and the traditional architectural style of the region, thus providing an interesting and fitting new viewpoint for passers-by.

The design and construction of the distillery was overseen from start to finish by Douglas Cruickshank, who stepped back from his role as Chivas Brothers’ Production Director two years ago to concentrate on the new build until its completion.

The completion of the project is a fitting end to Cruickshank’s career which began at the age of 15 at the Imperial Distillery, he now takes retirement having come full circle restoring distilling to the same location after a 16 year slumber.

Bushmills Whiskey Tweet Tasting: Tropical Fruit & Irish Genius!

Bushmills was the selected distillery for Wednesday nights Tweet Tasting and we had the chance to try five of their superior Whiskey range.

Bushmills is the oldest licensed distillery in the world (1608) and their recent acquisition by Jose Cuervo could herald the start of a new era for this most famous of Irish distilleries.

The event was once again ably hosted by Steve from The Whisky Wire and the drams sampled were:-

  • Bushmills Black Bush
  • Bushmills 10 Year Old Single Malt
  • Bushmills 12 Year Old Distillery Reserve
  • Bushmills 16 Year Old Old Single Malt

One thing that became obvious during the night was how consistent the core flavours were over the range – in short, tropical fruits abound!

So, what did I think?

Here are my tasting notes … and the one which was my favourite on the night!

Tasting Notes – Bushmills Original Whiskey ( 40% )

A NAS blend of triple distilled Irish single malt & Irish grain whiskey. Matured for at least 5 years in American oak casks. It is named after the River Bush, a fine salmon river that powered the textile mills of the Scottish settlers.


Nose: Fruity vanilla, slightly woody, furniture polish and then those “little green apples” start to come thru. Closely followed by pineapple, peach & mint – a feast!

Palate: Fruit cake mixture, sweet, with a little caramel thrown in.

Finish: Very smooth with a satisfying, spicy finish – quite short.

Overall: The Chilli is on slow burn but makes itself known after a time making this a very sippable dram indeed!

Tasting Notes – Bushmills Black Bush Whiskey ( 40% )

Made up of 80% malt whiskey & matured for up to 7 years in oloroso sherry casks & bourbon barrels.


Nose: More honey & caramel than the Original & more body menthol. There’s lots of apples as well as a smattering of demerera and rum.

Palate: Still getting sweet fruit cake mixture but there’s more treacle & it’s lovely and smooth!

Finish: A sweeter dram than the Original, syrupy and full of chilli spice.

Overall: Another short finish but it’s spiciness is warming my cockles! A welcome addition to any drinks selection!

Tasting Notes – Bushmills 10 Year Old Single Malt Whiskey (40%)

Matured for at least 10 years mainly in bourbon barrels.


Nose: Less sweetness than the previous drams with hints of pears & pineapple – ‘thinner’. Plus there’s bananas, apples giving some very fresh and clean aromas!

Palate: Light mouthfeel, pineapple, mango – basically 40% Lilt!

Finish: The spice seemed to disappear from this but then made a welcome return right at the end – it’s a bit shyer on this dram!

Overall: Another winner and continuing the tropical fruit theme that runs through all these drams.

Tasting Notes – Bushmills 12 Year Old Distillery Reserve Whiskey ( 40% )

Matured mainly in oloroso sherry casks and only available from the Bushmills distillery shop.


Nose: Vanilla & syrupy apples, pineapple, icing sugar.

Palate: Rich tropical fruit with a mango hit – nicely sweet.

Finish: Nutty caramel with a well balanced spiciness to finish.

Overall: Bit of a slow burner the 12YO- needs time to develop in the glass but stick with it and the rewards will come to those who wait!

Tasting Notes – Bushmills 16 Year Old Single Malt Whiskey (40%)

Made with two whiskies that have been matured for 16 years – one from a bourbon barrel the second from a sherry cask. They are then married together in port infused casks.


Nose: Fruit cake, sherry & port are very present. In addition there’s caramel and blackcurrant which was a revelation.

Palate: Sweet port giving way to pineapple & fruit sugar syrup.

Finish: The sweetness lingers and only gives way slightly to some welcoming spiciness!

Overall: These older drams certainly benefit from a little more time in the glass. Satisfying, rich mature flavours with lovely port being quite prominent.

My Favourite On The Night

Black Bush – smooth, sweet, full of chilli spice & fantastically priced.

But all had an interesting array of flavours – a close second being the 16 year old!

Summary: Baby Blue is not only Texas’ first whisky, but so far we know the only blue corn whisky made anywhere. It pays homage to the American whisky tradition and while adding something we think is new and innovative.
Balcones Baby Blue is made from 100% roasted Hopi blue corn. The Hopi have used it as a staple for thousands of years. Their origin mythology describes how the Creator gave the first people corn of many types, and the Hopi received the blue corn. The Hopi use blue corn as a major food source, but it has spiritual significance for them as well. It is used in many ceremonies representing long life, wisdom, understanding, and the strength that comes through overcoming hardship.
While Hopi blue corn we use has an extremely interesting history, there is really only reason one we prefer it to all other corn for our whisky– taste. Its gorgeous midnight blue kernels are packed with a rich, roasty nuttiness that is truly exceptional. Unlike most of the blue corn on the market, Hopi blue corn is not just white dent corn which has been specially crossed to give it a blue tint. There is a lot of quality corn in this category, even some nice organic examples. But in a blind taste test, we could not tell the blue from the white corn. Hopi blue corn, however, has been grown with the same rich colour and flavour for thousands of years and is the only corn that could impart the rich character we require for our whisky.
Americans have innovated the use of corn in whisky since we first set foot on this continent. Baby Blue is not white lighting nor bourbon. It has the freshness and verve of a traditional corn whisky but with a refined complexity added by brief aging in small oak barrels. It has a round nuttiness and roasty overtones with a smooth finish. By legal definitions it could be labelled as a bourbon, but it is not essentially a bourbon in character. Bourbon is largely dominated by the flavours of the wood in the barrel; the new charred oak barrels give bourbon is defining and recognizable flavours, colour and aroma. Our brief aging in oak certainly contributes some of the recognizable oak notes and characteristic of bourbon, but these flavours do not dominate the rich corn flavours we have taken so much trouble to impart to the spirit. In any case, bourbon drinkers, as well as other whisky drinkers, will find plenty here to like.
Tasting Notes: butter, masa corn meal, marzipan/toasted almonds, smoked chillies, dark chocolate, fresh baked bread aroma Our unique aging process encourages a maturation that is surprisingly balanced and smooth for such a young whisky…young whisky with an old soul. Best enjoyed neat, with a little cool water, or even on ice.

Nose: Sweet and spicy with notes of honey and toffee. Warm Christmas cake is accentuated by the freshness of lemons, green apples and cut flowers. All wrapped in a delicate whiff of wood smoke.
Taste: Full bodied and complex. Distinct crushed clove, raisin and blood orange flavours are at the front, closely followed by layers of fragrant vanilla and leather. The long, rich finish is smoky and spicy.

Penderyn have announced the release of their popular Port Wood finish whisky in a single cask edition.   Only 231 bottles of the Port Wood-matured Single Cask will be produced, and because the bottles contain whisky from specially selected cask No. PT72, their unique characteristics will remain distinctive and unmatched. The whisky is bottled at a cask strength of 59% and is presented in a handmade American Oak box.  Each bottle is hand labelled, numbered and individually signed by our director, Sian Whitelock.  The bottle and box are finished in a cream stencilling.
Tasting Notes: The rich ruby red colour of this Penderyn port cask matured whisky does not disappoint! The initial nose is one of rich port and fresh red berry fruits. Soon spiciness and fresh oak chime in. The overall effect is both complex and intensely fruity. In the mouth this whisky is both very sweet and mouth drying at the same time while revealing a rich ruby port flavour. Smooth and easy to drink yet we recommend sipping it gently to enjoy its complexity and port flavour. Few port wood matured whiskies are as intense as this one. It leaves a long lingering finish rich in fruit, vanilla and milk chocolate. Savour the moment!

As this is Rugby World Cup year we are delighted to announce the launch of Penderyn’s fourth in the series 'Icons of Wales' called simply 'That Try'.
That Try recounts the highlights of the match that took place on 27th January 1973 in a packed Cardiff Arms Park, when the All Blacks’ wing Bryan Williams kicked a high ball into the Barbarians twenty-two, little did he think that less than thirty astonishing seconds later the Baa-Baas would score the greatest try ever seen. The edition, which features a specially commissioned drawing of Gareth on the black bottle, and comes in a handsome black and white box to match the famous Baa-baas kit, is a Peated Single Malt Whisky at 41% abv.
This memorable moment in sporting history has been recounted with the full approval, and by kind permission, of the Barbarian Football Club, whose famous colours and distinctive badge have been the hallmark for fair play and open rugby for the past 125 years. They have committed all royalty fees relating to this product to a charity of their choice.
Tasting Notes: Mild aromas of peat smoke, early morning at the rocky seaside and warm marmalade-on-toast all compete for our attention.  A very fresh and clean whisky, beautifully distilled gives pleasure from the very first sip.  In the mouth it begins with great sweetness before the smoky, slightly medicinal flavours descend.  Slight bitterness follows that leaves a long and lingering fresh taste in the mouth.

Last Wednesday I was lucky enough to be invited to the latest online Tweet Tasting with the opportunity of sampling the delights produced by the Glen Moray Speyside distillery.
The event, once again ably hosted by Steve from The Whisky Wire, gave us the chance to try five different drams including two New Make Spirits – a rare thing indeed.

The malts sampled were:-

  • Glen Moray New Make Spirit
  • Glen Moray Classic
  • Glen Moray Port Cask Finish
  • Glen Moray New Make Peated Spirit
  • Glen Moray Peated Single Malt

So, what did I think?

Here are my tasting notes … and the one which was my favourite on the night!

Tasting Notes – Glen Moray New Make Spirit ( 69% )

New Make Spirit is at the core of the dram that will eventually end up in your glass but in this form it’s the raw essence of what will be whisky, once it’s been aged in oak casks for a minimum of 3 years.


Nose: Creamy, raw, fruity! Basically Banana smoothie! White rum with a little malt & barley (reminds me of moonshine) comes thru later.

Palate: Thick mouth feel, oily, sweet plums – God that’s strong!

Finish: Hot, fiery with a passion!

Overall: You have to be careful with the new make – it sent my taste buds flying like a bunch of skittles! Would make a good gin replacement in summer cocktails etc. if they ever retailed it – but I doubt they ever will!

Tasting Notes – Glen Moray Classic ( 40% )

Glen Moray mature their whisky in ex-bourbon barrels sourced from North America.


Nose: Slightly peaty, hint of vanilla & fruit, red apples & pears.

Palate: Very smooth, light with vanilla & fruit. There’s some grapefruit in there as well.

Finish: Peppery but also sweet – nice bit of glowing spice!

Overall: It’s really interesting to dram this after tasting the New Make as you can really taste the new make in there. All muted down of course to save those taste buds! A really nice dram this – nice and easy going!

Tasting Notes – Glen Moray Port Cask Finish ( 40% )

Glen Moray Classic Port Cask is finished for 8 months in Tawny Port casks before being bottled. A lovely rose colour when in the glass – the Twitter community thought this hue was very fetching!


Nose: Very similar to the Classic but there’s also a satisfying porty sweetness.

Palate: Creamy, sweet, jam-like, little bit of tanin.

Finish: Long, spicy finish coupled with a dry, fruity port hit!

Overall: If you like port and a dram with a rosy look to it then you’ll love this! Nicely balanced fruit, spice and sweetness!

Tasting Notes – Glen Moray New Make Peated Spirit ( 69% )

A peated base spirit with around 18ppm phenols.


Nose: Heavy peat, smoke, charcoal – BOOM! No fruit or sweetness at all – just a smokery!

Palate: Pretty much tastes like it noses – full on! Hot and fiery – quite oily – but mainly heavy peat n’ smoke.

Finish: Adding water brings out sweet, salty Liquorice.

Overall: Amazing opportunity to try this New Make but it demands respect – don’t expect it to be gentle with you!

Tasting Notes – Glen Moray Peated Single Malt ( 40% )

Glen Moray Classic Peated Cask is aimed at consumers who want a gentle peated style of whisky.


Nose: Again the Classic foundation is there but it’s infused with a lovely, smoky, albeit quite a shy, peat.

Palate: Very light, sweet with a dash of smoke n’peat – morish!

Finish: Light Liquorice comes thru at the end with a gentle warming finish.

Overall: This is a great peated malt, especially for those who are new to or wishing to explore the world of smokey drams! Great for quiet sipping and relaxing!

My Favourite On The Night

This would normally be the peatier dram but the Classic bags it for me tonight – it is what it says on the label – a Classic!
Their bedrock malt from which all their other styles flow!

A special mention though for the New Makes. Always a rare and welcome opportunity to taste the spirit in it’s original form, just so long as you do it in moderation!

Green Spot Unveils First Bordeaux Wine Finished Irish Whiskey!

Irish Distillers Pernod Ricard has unveiled the first ever Single Pot Still Irish Whiskey to be finished in Bordeaux wine casks, Green Spot Château Léoville Barton.

Set in the heart of the Saint Julien appellation in Bordeaux, one of the most revered winemaking regions in the world, Léoville Barton is a grand cru Château renowned for producing world class wine. Léoville Barton is overseen today by Anthony and Lilian Barton, direct descendants of Thomas Barton, a ‘Wine Geese’* winemaker who founded a wine merchant company in 1725, after migrating from his native Ireland.

(*‘Wine Geese’ winemakers migrated from Ireland in the 16th, 17th and 18th Centuries to establish wineries in countries such as France, Spain, Australia and the USA, many of which are considered among the best in the world.)

Green Spot can trace its roots back to Dublin-based wine merchants, Mitchell & Son, who matured, bottled and sold the original Green Spot under bond. Established in 1805, Mitchell & Son aged whiskeys bought from John Jameson’s Bow St Distillery in Dublin in their own casks up until 1968, when the practice of selling whiskey to bonders in cask ceased. From that date, Green Spot was bottled by Irish Distillers who also produce Yellow Spot 12 Year Old and now the new Green Spot Château Léoville Barton.

Initially matured in a traditional mix of ex-Oloroso sherry, new Bourbon and ex-Bourbon barrels the whiskeys were then transferred into the ex-Bordeaux wine casks for between 12 and 24 months. This imparted distinctive, floral flavours of varying intensity, resulting in a perfectly balanced whiskey.

With its fresh taste profile featuring notes of green apple, vanilla, toffee and liquorice, Green Spot has been a favourite among Irish whiskey lovers thanks to the Mitchell family since the 19th Century, so it is an honour to launch a further extension to our Spot family.

Maturing Green Spot in the Château Léoville Barton wine casks provided a fascinating assortment of floral and wood characteristics on the nose and palate, which give way to a long, spicy finish reminiscent of the terroir in France and Ireland.

Nose: It is the contribution of the French oak which drives the initial aroma adding some crisp woodland notes to the spicy Single Pot Still character.
The wine seasoning brings a delicate touch of floral perfume and a hint of ripe berries such as raspberries and strawberries, these are in addition to the orchard fruits typical of Green Spot.

Taste: The familiar mouth coating effect is a very satisfying balance of oak and spices. Some vanilla sweetness works in harmony with the dry wine influence, while the fresh orchard fruits and French oak combine effortlessly with barley grains to complete the complexity.

Finish: The rich French oak character is slow to fade leaving the wine and spices of France and Ireland with the last word.

Summary: Nose: complex? Doesn't even touch upon what is going on here. Most ungrain like in the manner ny which a complex prickle teaes the nose. A bit like the small grains working wonders in a bourbon. Not overly sweet, but the cooked molassed sugars do add depth as well as balance; butterscotch in a midly overcooked tart;
Taste: initially a silkier delivery than the nose suggests will hapen. But those corn oils are relatively brief and a combination of sugars, of varying degree of intensity, begin to box with the fizzing spices;
Finish: some bitterness as one comes to expect from old Allied casks, but the clarity of the grain and now honyed sugars negates the worst and has a little to spare;
Balance: when this distillery was closed I was beside myself with disappointment…and rage. Following the closure of Cambus, this left Dumbarton as the brightest star in the collapsing grain whisky galaxy. This bottle will give you some insight into just why I treasured it so greatly; certainly more so then the bean counters at Allied who saw its potential as prime real estate over its ability to keep making arguably the best blended Scotch whiskies in the world. My main point of surprise now is why so few bottlings from this giant of a distillery ever see the shelves.

Summary: To celebrate their 10th anniversary Compass Box brought back a small-batch whisky they first and last made in 2004. “Double Single” was a marriage of two single whiskies – one single malt and one single grain. The idea highlighted the true virtue of blending grain whisky with malt whisky to create a truly elegant style.
“Double Single 10th Anniversary” was a one-off, limited release of 876 bottles made of 18 year-old single malt whisky from the Glen Elgin distillery (76% of the vatting) combined with a single cask of 21 year-old grain whisky distilled at Port Dundas (24%).

Each expression retains the distinctive shape of The Glenlivet bottle and is presented in clear glass to reveal the alluring gold colouring, used to reinforce the quality credentials of the liquid. The new signifier for The Glenlivet, the iconic Packhorse Bridge which crosses the River Livet, features on the bottle ‘cartouche’ as a symbol of authenticity and heritage.

Furthering the premium mark through to the packaging, the range is presented in a luxury carton containing tasting notes and is completed with a bold symbol to signify the three types of wood and the multi-layered characters of the whisky.

Ballantine’s has launched the world’s first digital whisky magazine hosted exclusively on Instagram.

Adapting traditional magazine publishing for the social media platform, the Ballantine’s Insta-zine has been specially created to appeal to modern whisky drinkers, design and tech enthusiasts, and pop-culture fans.

The Ballantine’s Insta-zine is accessible from the @Ballantines_Official Instagram account.

Users land on the Insta-zine’s contents page – a mosaic-style grid of Instagram posts – from where they can navigate between articles published on @W_IssueONE by tapping on individual image posts.

The smart functionality and creative use of the social media platform demonstrates Ballantine’s commitment to staying true to its values of innovation and leadership since it was created 180 years ago by George Ballantine.

The Ballantine’s Insta-zine explores the current whisky zeitgeist and is comprised of three articles: The Women Shaping Whisky, The Rise of Bitter Drinks, and Did the Sims Introduce Mixology to the Masses?

In the first, Ballantine’s interviews three women changing the face of modern whisky, while The Rise of Bitter Drinks visually explores cocktails with a bitter taste profile and features some of Ballantine’s own signature serves.
The third article delves into the surprising link between mixology and the popular Sims game, exploring whether the craft of bartending has influenced the way consumers drink cocktails today.
