The Caol Ila 2005 15 Years Old – Whisky Exchange Exclusive!

The Whisky Exchange has released another one of their Exclusives – namely a Caol Ila 2005 15 Years Old!

This 2005 Caol Ila single malt was matured in a single refill sherry hogshead for 15 years, before being bottled in January 2021 by Gordon & MacPhail as part of their Connoisseurs Choice range – exclusively for The Whisky Exchange.

Gordon & MacPhail was established in Elgin, Scotland in 1895 and has always been a family owned and family run business.

They carefully select casks of whiskies from more than a hundred Scottish distilleries, many of which have since stopped production or simply vanished entirely.

Their ranges include Discovery – aimed at categorising Scotch whisky’s many facets and introducing new drinkers to new tastes in a manageable way – to the exclusive Private Collection and the iconic Connoisseurs Choice allowing them to cater for drinkers at every point on the Scotch whisky spectrum, from beginners to true connoisseurs.

So, what did I think? Here are my tasting notes …

Tasting Notes – Caol Ila 2005 15 Years Old – Whisky Exchange Exclusive (57.5%)

Nose: Fruit and smoke battle it out in a friendly fashion! There’s wisps of woodsmoke and peat mixed with fresh orchard fruits, mainly apple, with some additional sweet, sherry notes – glorious!

Palate: Wonderful mix of orchard fruits and peaty smoke! Sweet sherry with shades of toffee and some zingy mint.

Finish: Fiesty spice with some serious punch to it! It’s tempered though with fading smoke and vanilla sweetness.

Overall: A great selection of flavours wrapped up in a very enjoyable dram. I love the combination of fruit and smoke – making for a fantastic taste bud treat!

Each Distillers Edition expression undergoes a second (or ‘double’) maturation in casks that have previously held a fortified wine.
This extraordinarily stylish and complex expression of Caol Ila has been double-matured in carefully selected Moscatel casks. The wood is not over-evident and instead balances perfectly with this richly flavoured single malt.
Appearance: Clear gold.
Nose: Wonderfully concentrated pure, clean Caol Ila – peaty and medicinal, with rich fruit, spicy and fragrant. With water, the fragrant smokiness comes singing through.
Body: Medium.
Palate: Sweetness and maltiness strike first, then are quickly overwhelmed by peat smoke and intense, clean, crisp flavours. Caol Ila’s signature smoky bonfires are here, and build to quite a size. Overall, drying, in a beautifully balanced, complex, elegant development, complemented with cinnamon spice.
Finish: Long, rounded, robust and multi-layered.

Tomatin are excited to announce an addition to their range – a 36 year old small batch release – which is available to all markets now.
Batch 1 of this new 36 Year Old expression has been vatted from a combination of ex-Bourbon and ex-Oloroso Sherry casks, producing just 800 bottles. Smooth and creamy, it has been bottled at natural cask strength (46%abv), non chill filtered and natural colour. Packaged in an attractive wooden box, each bottle is individually numbered and comes with its own certificate.
Tomatin are in a unique position to be able to offer a product of this age on an ongoing basis. Following the withdrawal of their famed 30 year old expression, we expect this new 36 year old to be a welcome addition for drinkers, of Tomatin single malt.
AROMA: Pear drops, ginger snaps, butterscotch, vanilla ice cream, sherry notes, milk chocolate.
PALATE: Woody and malty, less sweet than the nose, cloves and cardamom.
FINISH: Elegantly smooth and creamy with just a hint of spice.

This Lowland Distillery took its name from St Magdalene's Cross, once a site of a medieval fair and leper colony. The Union Canal ran behind the distillery and not only supplied the cooling water, but in the distillery's heyday it was also the main method of supply, with barley and other materials brought in by barge to its jetty. The distillery was closed down in 1983, and sold for property development. Now a very rare single malt.
AROMA WITHOUT WATER: Sherry notes with strong fruit aromas – melons, red apples. Dry hessian note with a herbal aroma.
TASTE WITHOUT WATER: Sweet, with wine, oak and hop flavours. Some heather blossom (honey) elements are also present.
AROMA WITH WATER: Floral with polished oak influences initially. Subtle malt, dark chocolate and nuts aromas follow.
TASTE WITH WATER: A little smokiness initially followed by sweet, Sherry elements with floral flavours also present.

Summary: For over 25 years Miltonduff Distillery produced 2 different Single Malt Whiskies. In 1955 due to the increased demand within Hiram Walker for different styles of whisky, a chemical engineer, Alistair Cunningham designed the Lomond Still. This type of still had a wide neck which housed three rectifying plates. These plates were used to vary the amount of reflux that took place within the still thus altering the spirit produced. The plates could either be filled with cool liquid or left dry. They could be rotated – the horizontal position would maximise reflux while the vertical position would reduce reflux. Due to increased demand for Ballantines Blend in the 1980s, the Mosstowie stills were altered to produce Miltonduff – the key component of Ballantines.

Following the success of the award-winning Chivas 12 Year Old Magnum by Christian Lacroix last year, the two international luxury brands – flamboyant fashion designer Christian Lacroix and ultra premium Scotch whisky Chivas Regal – have extended their exclusive partnership, unveiling Chivas 18 Year Old by Christian Lacroix.
Lacroix has delivered a lavish and sophisticated design for the bottle that is perfectly coupled by the bespoke mirrored presentation box, resembling an ancient relic of regal nature. It is a true gem for collectors.
The whisky bottle, label, capsule and presentation box are embellished in a rich tapestry, embroidered and bejeweled, yet still instantly recognizable as the Chivas Regal brand.
The intricate and finely detailed jacquard fabric, interwoven with metallic threads and diamante stones, created by one of the designer’s regular suppliers, is hand applied to the capsule, bottle and box.
Again the bottle features the metallic decoration that was developed for the Chivas 12 Year Old Magnum, but this time the technology as been challenged even further in order to extend it over the curved shoulders of the bottle. Summary: The distillery began life as a flax mill and became a Malt Distillery in 1898. It was re-equipped to produce grain whisky around the Second World War. It was then converted back to malt in the 1960's and extended in the 1970's. The majority of the distillery?s output was used for the Vat 69 blend. Aroma: Toffee, butterscotch, vanilla, and a curious hint of stewed fruits. Classic Glenmorangie mentholic top-note, interwoven with an unusual nuttiness, reminiscent of Brazil nuts in toffee.

Finish: The taste goes on and on, finally giving way to some oak-derived spices – clove, ginger and a hint of aniseed.

Nose: beautiful structure and weight; a little toasty, but welcomes the nutty spread. Excellent salt to suger ratio;
Taste: sublime delivery with near perfect weight and poise and some ramped up barley. The oils are delicate, the sugars playful and the quasi-bourbon style liquorice adding just the right degree of tostesterone;
Finish: a late settling of some sugary scores as the light muscovado overpowers the fudgy oak;
Balance: an early morning reminder why I can really love this job.

Summary: Colour: Deep amber. Aroma: Mellow, rich and enticing, with the unmistakable Ardbeggian combination of tar, soot and pine resin. Finish: here’s the dull bit Glendullan…the oak injects a little natural caramel but a few spices compensate; Balance: at last! A Glendullan how I normally see it in the blending lab, rather than when tasting bottling’s for the bible. Of late they have been pretty ordinary and hardly representative. Nose: This is clearly a wonderful nose: a lot of oak influence, but what a fragrant sexy kind of oak it is: Old, Hints of smoke and cigar humidor. Lots of sherry cask influence too. Fortified wine. Balsamic. Plum jam. Thick with a few mint leaves to create one heck of a complex nose. Heavenly.
Palate: Great mouthfeel. Very approachable. Dried fruit and smoky tobacco leaves. Orange bits , plums, peaches. Chocolate and bitter oak. A peppery tang too. Sweet and savoury. With a nice amount of oak.
Finish: Sweet orange marmalade with traces of smoke tobacco. Dry. Oak.
This is a superb dram, one of the better Karuizawas i had in the same league give or take as the other 1984 cask 3692 , (if we take out the 1964 one I’ve had, which is in its own league).

Summary: The distillery was built in 1821 by Peter Brown, the factor of the Seafield Estates of Moray and Banffshire, and is named after Linkwood House, the family home. Brown?s son, William, carried on the business and rebuilt the distillery in the 1870s. One of the managers in the 1930s believed that absolutely everything in the distillery played its part in making the whisky what it was and he commanded that nothing – not even a cobweb – be removed. Had he lived long enough, he would have been dismayed in 1962 when the internal layout was radically changed and again in 1971 when a second distilling unit with two pairs of stills was built alongside the original Linkwood single-pair set-up. Summary: For over 25 years Miltonduff Distillery produced 2 different Single Malt Whiskies. In 1955 due to the increased demand within Hiram Walker for different styles of whisky, a chemical engineer, Alistair Cunningham designed the Lomond Still. This type of still had a wide neck which housed three rectifying plates. These plates were used to vary the amount of reflux that took place within the still thus altering the spirit produced. The plates could either be filled with cool liquid or left dry. They could be rotated – the horizontal position would maximise reflux while the vertical position would reduce reflux. Due to increased demand for Ballantines Blend in the 1980s, the Mosstowie stills were altered to produce Miltonduff – the key component of Ballantines. Country/Region: Scotland/Speyside. The emerging statesman Thomas Jefferson, who went on to become one of America's most famous Presidents, was one of the fifty-six men who adopted the Declaration of Independence. Wales is a small country with an equally small population, yet Jefferson and fifteen of his fellow signatories came from Welsh roots. Penderyn Independence is beautifully presented and wrapped in a copy of the Declaration, accompanied with a quill and boxed. The front of the box also highlights the signatories from the Declaration. Summary: Douglas Laing & Co. proudly offer this fine example of the Distillers’ Art as a special selection from their oldest stocks of whisky. No water is added to reduce its strength, as the Angel’s share has already taken care of that. No caramel, colouring is added, so that you can see it’s pure and natural colour. They have chosen to bottle this malt without chill-filtration in the old fashioned and traditional style. By so doing, they leave in the entire Distillers’ preferred qualities apparent on the nose, palate and finish – self evident when you remove the cork. As you can see on the label, this is one bottle of a very restricted offering, which once consumed, cannot ever be repeated. On the nose, detect a harbourlike quality with an Islay ferry, oily engine room style plus late soft summer tar. The palate opens softly and sweetly spiced, developing to a richly smoked, softly peated character. On the finish, waves of smoke and spices intermingle and run to a hot chilli amd dark chocolate trait plus a late mentholated style.

Summary: GLENTURRET DISTILLERY was licensed in 1775 but had been distilling illicitly since 1717 and can therefore claim to be THE OLDEST DISTILLERY IN SCOTLAND.

Colour: Golden to dark straw in colour, its tint speaks clearly of its long maturation in North American oak;
Nose: The whisky is wonderfully complex on the nose with sweet, fruity notes such as toffee apples combining with strong confectionery elements including milk chocolate & caramel along with toffee popcorn & fragrant woody notes including sandalwood & furniture polish. With the addition of some water it then becomes a little briny & musty;
Taste: On the palate, this Glenturret remains sweet with sherbet, some gentle spice and toffee notes. The caramel and golden syrup notes carry across from the nose to the palate and combine with an appealing vanilla sweetness;

Finish: a late settling of some sugary scores as the light muscovado overpowers the fudgy oak;

Independent farm distillery, Kilchoman, will be releasing a limited edition Loch Gorm Single Malt Whisky in March. Only a limited quantity of the exclusive bottling will be available and if past releases are anything to go by, it will sell quickly.
This is the third annual Loch Gorm Single Malt to be released by Kilchoman. Each release is differentiated by the distillation and bottling dates on the front of the bottle and gift carton.
Kilchoman’s Loch Gorm releases are traditionally matured in ex Oloroso sherry butts and this latest edition is no exception. Where the 2015 version differs from the previous year is the use of sherry hogsheads to mature a portion of the whisky rather than just sherry butts. This edition will also be marginally older than the five year old 2014 version, it being bottled from casks filled in both 2009 and 2010.
Anthony Wills, Founder and Managing Director of Kilchoman, said: “As well as this year’s release being slightly older, we decided to increase the ratio of single malt matured in smaller sherry hogsheads versus that matured in larger sherry butts. This increases the influence from the sherry casks and gives the whisky a striking intensity and richness. That said, the whisky retains the balance and complexity Kilchoman releases are well-known for.”
This range is named after a famously peaty loch over looked by the distillery; Kilchoman draws water for the production of Loch Gorm and their other releases from the burn that runs into the loch.

Summary: Longmorn Distillery is found between Glen of Rothes and Elgin. Its name is derived from the Gaelic, Lhanmorgund, which means "place of the holy man". This is a reference to the church which once stood there. Prior to the distillery being built in 1897, there had also been a grain mill on the site. R.J.S. McDowell considered Longmorn to be one of the top four malt whiskies.

Edencroft	Glengoyne / 1968 Vintage Reserve Country: Scotland Region: Highlands Age: Strength: 50.3%. Summary: The Glengoyne Distillery is situated in a wooded valley in the southern Highlands of Scotland close to a small river that flows into the famous Loch Lomond. The distillery, which takes its name from "Glen Guin" or Glen of the Wild Geese, has been producing an exceptional single malt scotch whisky for nearly 200 years. Glengoyne is one of the few distilleries producing whisky in this part of Scotland today. However at the beginning of the nineteenth century it is recorded that at least eighteen whisky stills were in operation in this area. But these, like many others at that time, were illegal. Whisky producers were forced to produce whisky illicitly as they were unable to pay the heavy taxes imposed by the government on spirit production to fund wars against France. Smuggling became rife and the hills and glens around Glengoyne formed a perfect cover for this lawless activity. It was not until the 1820's that an Act of Parliament was passed reducing the duty on spirit and the cost of a licence to distil which put an end to illegal production. This gave rise to a rush of stills being legalised, including those at Glengoyne in 1833. It is reputed that Glengoyne was one of only a few stills to be licensed in the southern Highlands due to the high quality of whisky it produced.Sir Walter Scott's novels capture the romance and intrigue of this period in Scottish history. In particular with his character, Rob Roy, who was renowned for cattle thieving and other activities and is believed to have once escaped the law by hiding in an oak tree just 300 metres from the Glengoyne Distillery. In 1876, the Lang Brothers from neighbouring Glasgow bought the distillery and ownership still remains in Scottish hands with the Edrington Group taking over the distillery in the 1960's and the independent, Scottish, family owned business, Ian Macleod Distillers Ltd. acquiring the distillery in 2003. The changes in ownership have done little to affect production of this unique malt as the traditional working methods have been passed from generation to generation to create this subtle, complex whisky in which all the delicate flavours are freely allowed to express themselves. Edencroft	Glenrothes – 21 Year Old – Old & Rare Edition Country: Scotland Region: Speyside Age: 21 Year Old Strength: 56.10% Summary: Douglas Laing & Co. proudly offer this fine example of the Distillers’ Art as a special selection from their oldest stocks of whisky. No water is added to reduce its strength, as the Angel’s share has already taken care of that. No caramel, colouring is added, so that you can see it’s pure and natural colour. They have chosen to bottle this malt without chill-filtration in the old fashioned and traditional style. By so doing, they leave in the entire Distillers’ preferred qualities apparent on the nose, palate and finish – self evident when you remove the cork. As you can see on the label, this is one bottle of a very restricted offering, which once consumed, cannot ever be repeated. Nose: full of dark fruits and lively spices on the nose initially – it mellows as it warms to tobacco smells and a damp whisky warehouse character. Edencroft	Old Pulteney – 1990 Vintage Country: Scotland Region: Highlands Age: 23 Year Old Strength: 46% Summary: Old Pulteney 1990 has been matured in hand selected American oak ex-Bourbon barrels and Spanish oak ex-Sherry butts. The casks previously held heavily peated malt which gives this Vintage a slight smoky character. Appearance: Polished amber. Aroma: Subtle, warm wood smoke envelopes the sweetness of peardrops & crunchy green apples. Fragrant floral notes, fresh lemon zest & honey are followed by a spicy & fruity touch of ex-sherry casks. Taste: Full bodied & rich. The initial sweet honey note is quickly followed by a wave of thick peat smoke, joined a moment later by a spicy vanilla, toffee & rum smoked raisins. OLD PULTENEY DISTILLERY Founded in 1826 by James Henderson at the height of Wicks celebrated herring boom, the Pulteney Distillery is one of the most northerly on the British mainland. At a time when road links to the town were yet to be established, the distillery was dependent on the sea for its supply of barley and for the shipping out of its malt whisky. Wick became known for the barrels of silver (herring) and gold (whisky) which left the port in vast numbers. The distillery itself has an absorbing history, with its unique stills defying convention to this day. The wash still, in particular, is a source of fascination to visitors due to the absence of a swan neck. Legend has it that when the still was delivered it was too tall for the still house and the manager simply decided to cut the top off! The Old Pulteney bottle now incorporates a bulbous neck to reflect the shape of the stills. Over time, the distillery has passed through the hands of various owners, and even closed during times of trouble for the industry in 1930. Luckily, the repeal of an often forgotten period of prohibition in 1947 saw the welcome resumption of whisky production, with the distillery changing ownership a number of times, before its purchase by Inver House Distillers in 1995. Throughout this history what has endured is the quality of the whisky. From a mix of refill American Oak, rejuvenated American Oak and ex-bodega European Oak casks, so interesting to compare with expressions from first fill Bourbon previously released at 8, 10 and 12 years old and a 14 year old from ex-bodega oak, released in 2012. Appearance: Clear, olive gold. Light beading. Nose: At full strength, immediately clean, aromatic and fresh: like inhaling Friar’s Balsam. After this first blast, more reticent; softly sweet, then a vivid freshness like that of crisp green fruit or lemon zest. Water raises a fruity, nutty honeyed sweetness and a faint note of treacle, with perhaps just a hazy hint of smoke. Body: Light to medium. Oily, yet firm. Palate: Drinks well straight; has an intense and in your face style, with a most appealing smooth, lightly oily texture. Firm, clean and fresh throughout. Edencroft	Cardhu – 21 Year Old/2013 Release Country: Scotland Region: Speyside Age: Strength: 54.2% Summary: A limited edition, natural cask strength single malt. From the renowned Cardhu distillery on Speyside. A second limited release in this series. Interesting to compare with the 22 year old 1982, released in 2005. From ex-bourbon American Oak casks filled in 1991. Appearance: Old gold; richer amber depths. Good beading. Nose: Mild and at first quite shy. An early creamy, fruity note of vanilla and boiled sweets (bubble gum!) is faintly underscored by a rich, floral perfume with a cleansing edge. The creamy fruitiness persists as dried figs, rum- and-raisin ice cream, red apple skins and beeswax. Later a malty, biscuity base layer is revealed, as the cleansing edge becomes a sharply defined top layer. Overall, it’s a richer vanilla custard and fruit trifle creaminess that emerges. Water opens things out, raising both fruit and floral scents slightly, the boiled sweets now mandarin-flavoured. Body: Fine and light. Palate: At natural strength, smooth and savoury, with light acidity. Clean, refined, pleasantly drying and delicate. Then wonderfully aromatic with notes of black cherry; growing spicy, warming and elegant, with nutty, dark chocolate offset by buttery shortbread. It’s even softer with a drop of water. Now the taste starts cooler and sweeter; still savoury (mint on a fresh fruit salad) but also newly spicy across the tongue. From Dufftown, an active distillery on Speyside. A first limited cask strength release of The Singleton in this series. From American Oak refill casks filled in 1985. Appearance: Deep antique gold. Good beading. Nose: Grand and mild; compact yet detailed, with ripe apple and pear fruit or perhaps beeswax and heather pollen, and scents of moorland herbs. Quite autumnal, with faint smoke and a savoury cereal note, and like an old dusty library carrying scents of wax and worn leather. Later, orange oil underscores the complex floral notes. In time some vanilla develops, becoming intense buttercream. Water lightens it considerably and brings out the malty, cereal character (like being in a grain loft), with leafy strawberries, more waxiness and the merest trace of smoke. Body: Oily, dense. Palate: At natural strength, this malt has a big, oily feel; sweet and reminiscent of a whole wheat breakfast cereal coated with honey. The initial effect is warming, with an instantly appetising astringency. Below this lie minty and faintly smoky notes and rich chewy liquorice with a digestive biscuit sweetness. It’s all sweeter and less oily with water; losing that piercing aromatic dryness and with the cereal note dimmed, it’s altogether gentler and more approachable. Edencroft	Lagavulin – 12 Year Old/2013 Release Country: Scotland Region: Islay Age: Strength: 55.1% Summary: A limited edition, natural cask strength single malt whisky. From the essential Islay distillery, Lagavulin, on Islay’s rocky south coast. Twelfth in a series of special 12 year old releases from the original distiller’s stocks. Vatted from refill American Oak casks, each at least 12 years old. Appearance: Extremely pale green-gold. Nose: Soft, beguiling and cautious at first, when an appetising sharpness slowly crystallises into red berry fruit, then developing soft, savoury aromas and a delicious smoky sweetness. Savoury hints of charred baked potato skins cooked in a bonfire come first, then peat smoke and a box of spent matches come through. Later still, there are teasing, oily hints of sharp tropical fruit (lime pickle?). These aromas are altogether softer with water; less tense and underscored by youthful sweetness. There are smoky-fresh notes, then raisins and dried fruit, with distant wood smoke. Body: Light. Oily. Palate: Cooling at first, then salty, drying and dusty, with a good balance of sweetness and acidity. Beautifully cleansing, like a salad of tarragon and peppery rocket, then really appetizing, as if a char-grilled endive splashed with peppery olive oil. The charred notes then strengthen, into smoky wax. Sweeter with water and more accessible, as captivating notes of aniseed and fennel seeds give way to charred fruit scones and burnt jam tarts. Finish: Simultaneously sweet and savoury, dominated by pungent smoke and appetising aniseed. With growing warmth, it becomes oily near the end.
