Tomatin Distillery Named “Sustainable Distillery Of The Year” At Icons of Whisky Awards 2023!

The Tomatin Distillery Co Ltd is delighted to announce that the company was named ‘Sustainable Distillery of the Year’ at the Whisky Magazine’s Icons of Whisky Awards 2023, announced at the prestigious awards ceremony in Edinburgh on Thursday the 8th of December, 2022!

Tomatin Distillery is located in the Scottish Highlands (near Inverness) and is famous for its portfolio of whiskies from brands including Tomatin Single Malt, Cù Bòcan Single Malt and premium blend The Antiquary.

Tomatin Distillery has been dedicated to protecting its craft, its environment and particularly its community, which is at the very heart of the Distillery. Many of the craftspeople working on site have been doing so their entire working lives – all working towards producing a wide range of single malts, loved across the world.

Reducing greenhouse gas emissions and increasing the use of non-fossil fuels are the cornerstones of the Tomatin Distillery and Scotch Whisky Industry’s efforts to make manufacturing more sustainable and support a low carbon economy. In 2013 Tomatin Distillery became the first distillery in Scotland to install an environmentally efficient wood pellet fueled steam boiler for use in production. 80% of production is biomass energy, the remaining 20% is LPG which is utilised to make up the balance during periods of high demand.

In 2019 the distillery installed a weir to prevent over abstraction and ensure that the downstream water environment is healthy, in 2021 control valves were installed on the cooling system which has cut water consumption by more than half. Instead of using the draff (resultant from the mashing process) in animal feed, Tomatin Distillery now send it to a biogas plant to generate a green sustainable fuel which is then fed into the mains gas network. The local environment is protected from the effluent streams created as a result of the production process by spreading it to local land as a soil improver.

This year the Distillery invested in a partnership with Highland Tourism CIC, promoting sustainable tourism in the Highlands and supporting its key responsibility to the local community by protecting the local environment through conservation and sustainable practices to enhance the ecosystem resilience. The Distillery is working with fellow members of the Scotch Whisky Association towards achieving the ambitious target, for the industry, of having net zero emissions in our operations by 2040.

We are aware that it is very easy to make statements about supporting sustainability and having a care for the environment but it’s actions that really count. We have watched the rapid growth of Highland Tourism CIC and believe their goals for the sector, the region, and world-class sustainable status will bring many benefits for the economy and the environment, which we are glad to support.

Cù Bòcan Single Malt, which is made with lightly peated barley and only produced in the winter at Tomatin Distillery, won “Gold” at the World Whiskies Awards and went on to claim “Category Winner” in the 13–20-Year-Old Highland Single Malt Scotch Category for the newly released Cù Bòcan 15 Year Old.

Matured fully in Oloroso Sherry casks for a minimum of 15 years, Cù Bòcan 15 Year Old is a decadent single malt with sun dried fruits and smoky exotic spices, bottled at 50% Abv. and is a limited batch release featuring some of the brand’s oldest whisky with only 3,000 bottles available worldwide. Cù Bòcan 15 Year Old is available in specialist shops worldwide with an RRP of £95 per 700ml bottle.

The Cù Bòcan brand is working with Highland Tourism CIC to develop a peatland restoration initiative to offset the small amount of peat used in production of Cù Bòcan Single Malt.

Each Distillers Edition expression undergoes a second (or ‘double’) maturation in casks that have previously held a fortified wine.
This extraordinarily stylish and complex expression of Caol Ila has been double-matured in carefully selected Moscatel casks. The wood is not over-evident and instead balances perfectly with this richly flavoured single malt.
Appearance: Clear gold.
Nose: Wonderfully concentrated pure, clean Caol Ila – peaty and medicinal, with rich fruit, spicy and fragrant. With water, the fragrant smokiness comes singing through.
Body: Medium.
Palate: Sweetness and maltiness strike first, then are quickly overwhelmed by peat smoke and intense, clean, crisp flavours. Caol Ila’s signature smoky bonfires are here, and build to quite a size. Overall, drying, in a beautifully balanced, complex, elegant development, complemented with cinnamon spice.
Finish: Long, rounded, robust and multi-layered.

Tomatin are excited to announce an addition to their range – a 36 year old small batch release – which is available to all markets now.
Batch 1 of this new 36 Year Old expression has been vatted from a combination of ex-Bourbon and ex-Oloroso Sherry casks, producing just 800 bottles. Smooth and creamy, it has been bottled at natural cask strength (46%abv), non chill filtered and natural colour. Packaged in an attractive wooden box, each bottle is individually numbered and comes with its own certificate.
Tomatin are in a unique position to be able to offer a product of this age on an ongoing basis. Following the withdrawal of their famed 30 year old expression, we expect this new 36 year old to be a welcome addition for drinkers, of Tomatin single malt.
AROMA: Pear drops, ginger snaps, butterscotch, vanilla ice cream, sherry notes, milk chocolate.
PALATE: Woody and malty, less sweet than the nose, cloves and cardamom.
FINISH: Elegantly smooth and creamy with just a hint of spice.

Palate: Crisp peat then softens to great richness in the mouth. Sweet, roasty malt with heathery dryness. Sherry notes keep back some pepper. In its place is luscious, slightly oily sweetness with juicy fruit and vanilla.
Finish: Some very deep cocoa notes, vanilla and lingering quite earthy peat. An enormously chewable single malt, with sweetness having the edge on dryness.

This Lowland Distillery took its name from St Magdalene's Cross, once a site of a medieval fair and leper colony. The Union Canal ran behind the distillery and not only supplied the cooling water, but in the distillery's heyday it was also the main method of supply, with barley and other materials brought in by barge to its jetty. The distillery was closed down in 1983, and sold for property development. Now a very rare single malt.
AROMA WITHOUT WATER: Sherry notes with strong fruit aromas – melons, red apples. Dry hessian note with a herbal aroma.
TASTE WITHOUT WATER: Sweet, with wine, oak and hop flavours. Some heather blossom (honey) elements are also present.
AROMA WITH WATER: Floral with polished oak influences initially. Subtle malt, dark chocolate and nuts aromas follow.
TASTE WITH WATER: A little smokiness initially followed by sweet, Sherry elements with floral flavours also present.

Summary: For over 25 years Miltonduff Distillery produced 2 different Single Malt Whiskies. In 1955 due to the increased demand within Hiram Walker for different styles of whisky, a chemical engineer, Alistair Cunningham designed the Lomond Still. This type of still had a wide neck which housed three rectifying plates. These plates were used to vary the amount of reflux that took place within the still thus altering the spirit produced. The plates could either be filled with cool liquid or left dry. They could be rotated – the horizontal position would maximise reflux while the vertical position would reduce reflux. Due to increased demand for Ballantines Blend in the 1980s, the Mosstowie stills were altered to produce Miltonduff – the key component of Ballantines.

Summary: Founded in 1898 by David McAndies, The Glenlochy Distillery commenced production in 1901, and it had been part of Diageo from 1953 until its transfer to Scotish Malt Distilleries Co.
Production ceased in 1983, when the distillery was definitely mothballed, just like so many others in that decade. The premises have been acquired by a local hotel group, West Coast Inns Ltd, that developed the site commercially, only retaining the kiln and the pagoda roof, which are declared historic buildings.
The house style is fruity, verging towards sweet, exotic fruitiness and coconut, vanilla and honey characters. The peat is delicate, and soft.
Barring a few independent bottlings (such as Gordon & MacPhail's) and an edition in Diageo's Rare Malts series, distillery bottlings are extremely rare and hard to find.
Nose: Coffee; leafy.
Palate: Green, floral, fresh. Another good cask with plenty of the grassy freshness the distillery was famed for.

Summary: Glenglassaugh Distillery was founded in 1875 by James Moir, a local general store owner. Elgin architects Reid and Melvin designed the distillery and William Sellar of Keith was recruited to plan out the plant. The initial annual production of the distillery was 100,000 gallons.Robertson and Baxter were major customers who supplied spirit to Teacher's for blending and in 1892 purchased the distillery for £10000, who then sold it to Highland Distillers for a £5000 profit. Highland Distillers rebuilt the distillery in 1960, it was later mothballed in 1986. In 2008 the distillery was purchased by The Scaent Group and re-opened. Cask Size and Type: Moscatel Hogshead. Finish: Moscatel Finish. Appearance: Summer harvest gold. Nose: An initial suggestion of boiled sweets with a spearmint warmth gently flows to soft mango, caramelised green pears and cracked black pepper. Palate: Delicate fruit salad balanced with a warm black pepper spice softens to waves of gentle orchard fruits, rich oak and a beautiful fresh barley finish.

Summary: At Glenglassaugh, in addition to the traditional production, they also produce a very limited quantity of whisky using richly peated malted barley as the cereal varietal. The malted barley has been dried in the traditional way, over peat infused kilns, giving the whisky its unique smoky flavour. Every sniff and sip wind-sweeps the mystique of the meandering waterways and tales of yore, wafting from the oceanfront coast of Goa.
This Classic Select Cask is distantly handcrafted and non-chilled filtered, in chaste tradition, aged undisturbed in American White-Oak ex Bourbon barrels.
Nose: Like Brilliance, but turned up a notch. More vanilla, more cake batter, more fruity sweets and more spice. Stacks of cereal, with rolled oats, freshly milled barley and lots of fruit – apples, pears and hints of the more tropical: pineapples and Refresher chews (without the fizzy sherbert middle). With that there is sweet lemon drizzle cake, window putty and a light gluey note, as well as sweet pastry cream.
Palate: Sharp cinnamon up front: fireball gobstoppers and Hot Tamales. It calms down to show off apple sauce and sweet vanilla, as well as spiced, heavily buttered pastry with a grind of black pepper. Behind that, squirty cream from a can on top of a bag of Haribo. Water kills the heat and ups the sweetness, revealing caraway and spirity notes, along with even more vanilla.
Finish: Haribo fruitiness fades to spicy oak.
