Summary: Douglas Laing & Co. proudly offer this fine example of the Distillers’ Art as a special selection from their oldest stocks of whisky. No water is added to reduce its strength, as the Angel’s share has already taken care of that. No caramel, colouring is added, so that you can see it’s pure and natural colour. They have chosen to bottle this malt without chill-filtration in the old fashioned and traditional style. By so doing, they leave in the entire Distillers’ preferred qualities apparent on the nose, palate and finish – self evident when you remove the cork. As you can see on the label, this is one bottle of a very restricted offering, which once consumed, cannot ever be repeated.
Nose: full of dark fruits and lively spices on the nose initially – it mellows as it warms to tobacco smells and a damp whisky warehouse character.
Palate: on the palate the sherry cask influences it early with more (now macerated) fruit – then sweet barley, more tobacco, vanilla and mocha flavours alternatively appear.
Finish: the finish is more vanill’d now plus late cough drop style warming (now menthol!) spices.

Malt Tasting: Tormore 28 Year Old - Single Cask (Master of Malt)

Malt Tasting: Tormore 28 Year Old – Single Cask (Master of Malt)

Tormore is a comparatively modern distillery, having been built in 1958 and completed in 1960.
Being the first 20th century distillery to be built in the Highlands, it generated a lot of interest.

The architect of the new distillery was Sir Albert Richardson, the president of the Royal Academy and the distillery buildings are so pretty that the distillery’s appearance has been likened to a spa.

If you don’t believe me, have a look on Google streetview!

It currently has eight stills, heated by wood chips, a by-product of area’s forestry.

This is a great malt and if you feel your taste buds have got a bit tired, then try this.

They’ll feel like they’ve been on holiday!

Tasting Notes

Nose: Sweet, woody, spicy aromas, hint of nutmeg and sweet coffee.

Palate: Rich, syrupy fruit like long, long simmered jam mixture.

Finish: Creamy, golden sweetness with a heavenly spice hit.

Overall: This Tormore 28 Year Old has a broad range of powerful flavours which are combined beautifully. A malt like this just doesn’t come along that often. Breathtaking!

Barry Crockett, Master Distiller of Jameson Irish Whiskey, will retire this March, bidding adios to the Midleton Distillery in Cork after 47 years; 31 of which he spent as Master Distiller. The announcement comes, fittingly, in the week in which Crockett was honoured by Whisky Advocate with its Lifetime Achievement award. Brian Nation, who has been mentored by Barry Crockett for the last ten years, will take over the role of Master Distiller.

Born in the Distiller’s cottage that sits on the grounds of the Old Midleton Distillery, Barry Crockett has been immersed in the craft of whiskey distilling for almost 50 years. At the age of seventeen, Barry began learning his craft as a young apprentice to his father and Midleton Master Distiller, Max Crockett, eventually succeeding him as Master Distiller in 1981.

In 1984, Barry developed the award-winning flagship blend from the Distillery, Midleton Very Rare, and in 2011 oversaw the launch of the Single Pot Still Whiskeys of Midleton. Launched to rejuvenate the popular style of whiskey to its former glory, the pinnacle of the range, Midleton Barry Crockett Legacy, marks the first time since John Jameson that an Irish Distillers product has been named after a Master Distiller.

To mark Barry’s retirement, he will be honoured with an intimate dinner party on 3rd September 2013 at ‘The Housewarming’ – a special event that will be held in Midleton to officially launch the new expansion amongst other things. Many of the close friends Barry has made during his time at Irish Distillers are expected to attend, where he will be presented with a special gift from his peers.

Brian joined the Midleton Distillery, Cork in December 1997 and is currently a Distiller and global brand ambassador for Jameson. He received the Worshipful Company of Distillers Award for achieving the highest IBD distilling exam results in the world in 2006, whilst also becoming the first Irish Distiller to receive this award.

Commenting on how it feels to be the new Master Distiller, Brian Nation, said: “It’s an incredible privilege to be Barry Crockett’s successor. Barry has dedicated his life to Midleton and is a well-known figure in the global whiskey industry, so it has been a great honour to be mentored by him over the last ten years. Barry has been an inspiration to me and I am looking forward to continuing the traditions that have gone before me and to ensuring the whiskeys of Midleton continue to be enjoyed and recognised as the best Irish Whiskeys in the world.”

Part of Master of Malt’s Single Cask series this Bally Delicious 23 Year Old breaks no advertising codes as it is what it says on the bottle – truly delicious!

Most of whisky from this Bally Delicious 23 Year Old comes from one (very famous) Speyside distillery.

Nobody knows which one as the people involved in the bottling all had to wear blindfolds when they were taken to the (very famous) Speyside distillery.

Even the driver which was decidedly dodgy …

Palate: Gentle on the tongue, stewed fruit, peppery.

Finish: Lovely sweet smoke, woody with a slight tanin aftertaste.

Overall: Well, the clues in the name, Bally Delicious, and it was! Kudos to the guys in the blindfolds!

Summary: Ardbeg Ten Years Old is revered around the world as the peatiest, smokiest, most complex single malt of them all. Yet it does not flaunt the peat; rather it gives way to the natural sweetness of the malt to produce a whisky of perfect balance. Typically most whiskies are chill-filtered and reduced to a strength of 40% ABV. Ardbeg Ten Years Old, however, is non chill-filtered and has a strength of 46% ABV, thus retaining maximum flavour, at the same time giving more body and added depth. It’s whisky with none of the goodness taken out! Colour: Light gold. Aroma: A burst of intense smoky fruit escapes into the atmosphere – peat infused with zesty lemon and lime, wrapped in waxy dark chocolate. Bold menthol and black pepper slice through the sweet smoke followed by tarry ropes and graphite. As you dip your nose in further, savour the aroma of smoked fish and crispy bacon alongside green bell peppers, baked pineapple and pear juice. Add water and breathe in the vortex of aromas rising from the glass. An oceanic minerality brings a breath of cool, briny seaspray on chalky cliffs. Waxed lemon and lime follows with coal tar soap, beeswax and herby pine woodlands. Toasted vanilla and sizzling cinnamon simmer in the background with warm hazelnut and almond toffee. Taste: An explosion of crackling peat sets off millions of flavour explosions on the tongue: peat effervesces with tangy lemon and lime juice, black pepper pops with sizzling cinnamon-spiced toffee. This is followed by a wave of brine infused with smooth buttermilk, ripe bananas and currants. Smoke gradually wells up on the palate bringing a mouthful of warm creamy cappuccino and toasted marshmallows. As the taste lengthens and deepens, dry espresso, liquorice root and tarry smoke develop coating the palate with chewy peat oils. Finish: The finish goes on and on – long and smoky with tarry espresso, aniseed, toasted almonds and traces of soft barley and fresh pear.

Summary: Nose: there is such aplomb to the almost wafer-brittle thinness of the strand of grape which defines the nose of this whisky, one is almost tempted to put down the glass and applaud. The barley and vanilla attaches itself to the grape with a deftness which defies belief; elsewhere no less delicate stratum of aged dates, faint smoke and manuka honey add to the perfection;
Taste: stunningly salivating and fresh on delivery, there is a busy jauntiness to this which offers great contrast to the nose. The barley really shines and it takes a little while for the grape to finally emerge. When it does, we are back to a slower, more thoughtful building and dispersal of flavours;
Finish: all vibrancy now spent, you need about ten minutes to pick your way through the fruity finish. The peat, which you could swear was on the nose, makes a very late reprise…and stays when it gets there;
Balance: as it happens, just a couple of days back I found a stunning 43-year-old tawny Port being served onboard a Qatar Airlines flight. How an Arab airline got hold of something quite so magnificent I’d like to know. But I doubted if I would find any Tawny-related drink which would better it on the nose for the remainder of the year at least. How wrong I was….

Summary: Nose: the fruit, though very ripe and rich, remains uncluttered and clean and is helped along the way by a superb injection of sweetened cloves and Parma Violets; the oak is present and correct offering an egg custard sub-plot;
Taste: how ridiculously deft is that? There is total equilibrium in the barley and fruit as it massages the palate in one of the softest deliveries of a 30-y-o around; the middle ground is creamy and leans towards the vanilla; even so, there are some amazingly juicy moments to savour;
Finish: very lightly oiled and mixing light grist and rich vanilla;
Balance: it’s spent 30 years in the cask: give one glass of this at least half an hour of your time: seal the room, no sounds, no distractions. It’s worth it…for as hard as I try, I can barely find a single fault with this.

Balance: clean, sweet and quietly understated.

Summary: Nose: 23 creaky old leather and dusty libraries…I feel quite at home; some spiced up juicy dates, too;
Taste: an engrossing experience: the grape is almost as fresh as it must have been way back in the days when Abba were topping the charts. The inevitable spices hold firm, setting into a rich fudge and mocha middle;
Finish: some vanillas and tannins peel off from the grape and it is the popping vanilla pods which have the very last say;
Balance: it is impossible to ask any more of an old sherry cask from Benriach than this: quite magnificent.

In our heart of hearts, none of us knew whether we’d still be around to celebrate PC10, this fantastic spirit’s coming of age. It’s been a long and rocky road but PC10 is here and so are we. This new Islay single malt has reached it’s first milestone. This PC edition celebrates the next generation here at Bruichladdich. Allan Logan is the youngest distillery manager in Scotland, and has been learning his trade at Jim’s right hand for 10 years. He and the other young craftsmen coming through are the future of this distillery – we recognise them now. “Tro Na Linntean”: through the generations. A limited release of 6,000 numbered bottles only. Character: The ultimate spirit six-pack. The heat shimmering over the taste buds awakens the sensory system with sensations it has seldom experienced. Medium weight, satin smooth. Colour: Luminous, harvest gold, honeycomb. Nose: The opening is one of peat smoke and lemon juice, what an amazing contrast! On the second pass the malted barley and sweet, nutty, oak aromatics rise as one. The over-lapping fragrances are inter-mingling with the marine freshness that we know & love, hallmark of our island home, deep in the spirit lies the ripe guava, pineapple, gooseberry & honey-dew melon. They’re all cocooned within the cradle of smoke. Subtle notes of peppermint, pine and anise pop up like champagne bubbles. Aromatically, it’s absolute heaven for peat fans. The briny aspect is with you throughout, blowing in on the westerly slipstream – peated malt, sea air, succulent fruit, mellow oak, sun kissed barley, and soft demerara sugar. Palate: The power surges onto the taste buds, detonating across the palate in wave after wave of flavour. The olfactory senses first detect the peat settling on the back palate, smouldering with intent. Then the combination of oak & barley take the middle ground & vanilla-dipped fruits hold fast on the front palate. With a second sip, the flavours integrate into a harmonious, vibrant taste experience, with the sweet, biscuity taste of the malt shining through to bring balance to the mid- palate. The natural oils hold all the components together giving a smooth- ness that chill-filtered spirits lack. The citrus, marine, moorland fresh- ness is a perfect foil for the peat flavours, giving a taste that can only be… Islay. Finish: The peat-fire embers last long into the night, captivating one’s imagination of ancient life & times on this wild, Atlantic coast. The pleasure of sharing time with a spirit that is eager to please brings contentment, a soul-warming satisfaction. Manna of the wilderness. Mood: Excited. Earthy. Primeval. Camp fire – the darkness and light, warm and cold, dry and damp, danger and safety. Boy scout, more SAS Bear Grylls than podgy Ray Mears.
